Montana will open on Hollywood Road with live rhythms, rotisserie pineapple and razor-sharp classics from the minds behind Bar Leone and Sips Montana's concept wasn't sparked by a business plan, but by a bottle of tequila. 'It wasn't Lorenzo, Simone and a bottle of tequila,' recalls Simone Caporale. 'It was a bottle of tequila… then Lorenzo and Simone.' The Italian duo—Caporale, best known for Barcelona's Sips, and Lorenzo Antinori of Hong Kong's Bar Leone—first met more than a decade ago in London. 'We met in London,' says Antinori. 'Simone was at the Artesian and I was working at the Savoy.' They stayed in touch over the years, crossing paths through the industry and rekindling their connection in Madrid during the 2024 50 Best Bars ceremony. That's when the idea for Montana emerged, rooted in mutual admiration and a shared obsession with hospitality. 'Whatever we do, Lorenzo and I, we always do it based on what we feel in the chest,' says Caporale. 'Feelings don't lie.' Their new project, Montana, channels the energy of 1970s Cuban migration to Florida—a cultural blend of rhythm, rum and resilience. 'The Cuban cocktail culture created hundreds of cocktails that are not that famous, but they're delicious,' Caporale explains. 'But there isn't a bar in the world that tells the real story of the Cuban migration to Florida in the 1970s and '80s. So we said, 'Why don't we do that?'' Botanist Bar, located in the Fairmont Pacific Rim hotel, took the number 26 spot on the list, while The Keefer Bar, at 135 Keefer St. in Chinatown, took the number 28 spot. The highest ranking on the list for a Canadian drinking establishment went to Toronto's Bar Pompette, which came in at number seven. Toronto's Civil Liberties (#21), Montreal's Cloakroom (#31) and Atwater Cocktail Club (#36), and Toronto-based bar Mother (#44) rounded out the Canadian representation in the top 50. 'This year's list is a powerful testament to the relentless drive, creativity, and world-class talent that define the cocktail industry today,' said Emma Sleight, Head of Content for North America's 50 Best Bars, in a news release. That list included four more bars in B.C. Prophecy in Vancouver, a speakeasy bar in the basement of the Rosewood Hotel Georgia, came in at number 53. Laowai cocktail bar, hidden behind Blnd Tger Dumplings in Vancouver's Chinatown, came in at number 67. Humboldt Bar in downtown Victoria came in at number 69 and the cool cocktail bar Meo in Chinatown, ranked number 92. Further Canadian bars on the 51-100 list included: Missy's in Calgary (#52); Civil Works in Toronto (#55); Proof in Calgary (#58); Bar Bisou Bisou in Montreal (#75); Simpl Things in Toronto (#83); Bar Bello in Montreal (#84); The Coldroom in Montreal (#91); Slice of Life in Toronto (#96); and Shelter in Calgary (#99). The question gets asked a lot: What's the best bar in Miami? North America's 50 Best Bars has an answer — and it's a familiar refrain. At a ceremony in Vancouver, B.C. on Tuesday, the organization that ranks the world's most innovative places to drink named Miami's Café La Trova to its top 50 list for 2025. The collaboration of master cantinero Julio Cabrera and chef Michelle Bernstein, the Cuban spot on Calle Ocho in Little Havana always finds its way on the prestigious list (it was no. 13 this year). The spot, which opened in 2019, is known for its classic Cuban cocktails, bites and lively music as well as its ability to draw both locals and tourists. 50 Best Bars calls Café La Trova 'a joyous celebration of Cuban hospitality.' 'Stepping into the space, you're instantly transported to the Caribbean through sight and taste,' the guide writes. 'The bar team adheres to the traditional (and theatrical) cantinero style created by Constantine Ribalaigua at Havana's legendary El Floridita. Typically, the bartenders are busy throwing Hotel Nacionals (rum, apricot liqueur, pineapple juice, lime juice) through the air or dramatically shaking Daiquiri Clásico (rum, lime juice, sugar). Yet, the dinner jacket-uniformed staff also find time to pick up maracas and play along with the house Son Cubano band.' A few other Miami-area bars made the top 100 list as well, including downtown's aperitivo spot ViceVersa (56), which was recently added to the 2025 Michelin Guide. Others were the Champagne Bar at The Surf Club in Surfside (61); Bar Kaiju at The Citadel in Miami (77); and Swizzle Rum Bar and Drinkery in Miami Beach (78). The best bar in North America, according to the guide, is Handshake Speakeasy in Mexico City.

Raise your glass, Chicago: four local bars just landed on the 2025 North America 50 Best Bars list—and a fifth is already being hailed as the next big thing. The newly announced ranking celebrates cocktail excellence across the U.S., Canada, Mexico and the Caribbean, with Chicago's Kumiko leading the city's showing at number 10 and earning the title of Best Bar in the Midwest USA, sponsored by Tia Maria. But Kumiko isn't just a bar—it's a meditative escape in the West Loop. Created by Julia Momosé and the team behind Oriole, it's a place where welcome tea replaces party shots. The bar's serene, wood-accented omakase counter boasts just eight seats, where diners taste a progression of Japanese-influenced bites like seaweed-slicked uni, wagyu glazed in black garlic molasses and milk toast crowned with fermented honey ice cream, paired with imaginative sake and shochu cocktails. If mindfulness could be distilled and served in a glass, it might taste like Kumiko. And then there's Lemon, which hasn't even cracked the top 50—yet. The cocktail spot was named the Campari One To Watch, an award given to a standout bar poised to make the list in the near future. At the top of this year's ranking?
