Ama Raw Bar — Bar Review
Ama Raw Bar doesn't really feel like Vancouver, and that's part of what makes it so special. Tucked away in the up-and-coming Fraserhood, the modern Japanese snack bar is accessed via a subtly-marked staircase that leads to the second floor. Inside, the vibe is dark and moody, with a deep orange color palette and plenty of backlighting giving the space an intimate feel. Despite this outwardly sensual persona, though, the staff here are laid-back, patient, and knowledgeable, quick to crack jokes and offer suggestions. The drink list is concise, but it works; the Nutty By Nature (bourbon, Amaro Montenegro, browned butter, vanilla, walnut) is rich and luxurious, while the Scenic Route (house gin blend, Chartreuse Yellow, sochu, sesame) is herbaceous and complex. On the food side, Ama serves a selection of Japanese bites, including sushi using fish flown in fresh from Japan, and a decadent burger made with a blend of wagyu and Angus beef. To kick things up a notch, visit Ama for Sultry Sunday: a weekly vinyl party featuring a live DJ.
