Bartender Spotlight: Sasha Wijidessa on Fura's sustainable cocktails and the case for corn
Innovation and sustainability go hand in hand at Fura. The bar's menu is fresh and fearless, if a little rebellious. And the brains behind it are none other than co-founders Sasha Wijidessa and Christina Rasmussen, who once led the plant-forward bar Mallow at Intercontinental Singapore Robertson Quay. At their cosy Amoy Street hideout, the pair guides diners through a range of planet-friendly ingredients, from insect proteins and cell-cultured milk to invasive species like jellyfish that are found in abundance. Their practices are well-rooted in science and research, but nothing bores. The best part? The weird stays wonderfully subtle – and not to mention delicious – with cocktails and bar bites crafted so carefully, you'll barely notice the mealworms or crickets in them. Ahead of the launch of our Time Out Singapore 2025 Bar Guide, we get the chance to visit Fura and speak to its head bartender, Sasha, to find out more about the bar's must-tries and underrated cocktails. If Fura had a theme song, what would it be? There are too many to pick from. We have several playlists for Fura created by me and compiled from both Christina's and I's music tastes. A lot of the names of the drinks come from lyrics, tracks or record titles, so you can often catch those playing throughout service. What is a must-try cocktail at Fura? New New Yuck. The original on the Volume One menu was named New Yuck City, an album by Dirty Sanchez. I wanted to refine the drink further for Volume Two, so with the new alterations, a slightly updated name was given. It's a gin-based drink with infusions of guava, roasted kelp and shio kombu, giving it a clean yet savoury-sour profile. To finish, we have a warm white chocolate lime leaf foam on top, so you've got a great contrast between sweet and sour, hot and cold. What is an underrated cocktail on your menu? 3 Crop Corn. I think people put corn in two categories – sweet and creamy, or popcorn – and it either excites or deters them. We steer clear of both and use masa to give the drink a toasty, nutty, dry and crisp profile. The cocktail highlights the benefits of crop diversification for low carbon emissions and supporting regenerative landscapes. Its name refers to a three-crop system, with a small grain (represented by Sorghum grain in the Empirical Soka); summer legume (showcased in the corn silk vermouth) and cover crop (a garnish of mustard frills from GreenLoopFarms). Which cocktail trends do you want to see more and less of? More fermentation. Fewer throw-away garnishes. What's another bar in the neighbourhood you'd recommend? Hup San Social Club. At The Singapore Edition's Lobby Bar, a place so chic it practically sips its own tea, relish the floral-themed menu stuffed with exquisite French pastries, alongside foie gras tarts, mushroom croquettes, Oscietra caviar-topped smoked lobster rolls, and a charming cart that prepares your affogato tableside. That's not all. Executive pastry chef Alex Chong sweetens the deal with a specially curated cake for mums to take home. Available from May 8 to 11. The Lobby Lounge, Intercontinental Singapore Above The Lobby Lounge teams up with Comvita, weaving premium New Zealand mānuka nectar into every treat (Intercontinental Singapore) This year's Mother's Day afternoon tea at Intercontinental Singapore's The Lobby Lounge is less about fussy finger sandwiches and more about thoughtful indulgence. The culinary team's delicate creations, crafted with premium New Zealand manuka nectar through a collaboration with Comvita, prove that indulgence can be both delicious and healthy. Blessing each treat with all-important antioxidant and anti-inflammatory benefits, the high tea features elegant savouries like foie gras and duck rillettes on brioche and clover honey-miso glazed salmon; sweets include a heavenly chrysanthemum honey pavlova and a delicate honey redcurrant mousse. On May 10 and 11, all dine-in guests are entitled to a complimentary Polaroid print as a timeless keepsake with mum. Available from May 1 to 12. So ditch the clotted cream for scallop siew mai, xiao long bao and quirky steamed beetroot dumplings. There are even nourishing soups to choose from, from the rich braised black cod fish soup, double-boiled chicken soup, to the vegetarian hot and sour soup. Then come the signatures of golden, addictive deep-fried duck roll, braised pork belly and flavourful wok-fried dishes. Wash it all down with a refined dessert and premium Chinese teas. Revel in caviar-topped savouries like crème fraiche vol-au-vents , elegant egg and caviar sandwiches, lobster and crab croissant and torched Wagyu nigiri. Sweeten the deal with yuzu kumquat roll and Tahitian vanilla scones. And because they're clearly not messing about, you can even opt for floral cocktails (or mocktails) made with caviar distillate. Mums who dine in on May 11 will also receive a chic mother-of-pearl spoon to continue their caviar appreciation back home. Available from May 9 to the end of June.
