Craftsman and Wolves Serves Kalamansi Choux and Philly Cheesesteak Kouign Amann in Mountain View
Innovative bakery Craftsman and Wolves is opening its first permanent space outside San Francisco. On Saturday, June 7, the bakery swings its doors open to the Peninsula at 400 San Antonio Road, Suite 4, inside Mountain View development the Dean. Before his death, co-founder Lawrence Lai shared his excitement in a press release. 'We've loved serving the South Bay community for years through the Palo Alto Farmers' Market,' he said, 'and we're excited to finally put down roots with a dedicated space in Mountain View.' Fans of the Rebel Within and the standard Craftsman and Wolves items will find all the usual fare — but with a few exclusive pastries, too. There'll be a summer choux on the debut menu, full of vanilla crème fraîche whipped ganache and guava kalamansi. There's a pink craquelin crust over the exterior and a chocolate wolf on top, too. On the savory side, there's the jalapeño helix, a twisted croissant dough with jalapeño cheddar béchamel, drizzled with hot honey. Then there's the bakery's riff on a kouign amann: a Philly cheesesteak homage, jammed with a cheesesteak filling, caramelized onions, and peppers. There's a full savory side of the menu set to roll out in the coming months, too. Lai gave a lot of input on the menu, experimenting with head baker Sam Ceccotti leading up to this opening. The helix was meant to be just a snack for the two of them, but he insisted it become a standard in Mountain View. Kalamansi and guava flavors may rotate off the menu, yet will serve as a summer banner-carrier in the meantime. Also in Lai's realm, the color palette at the Mountain View location is meant to be darker, more handsome. Masculine, sharper, cleaner elements, but with copper and origami-looking chairs and lighting fixtures. Burnt wood serves as the base for the bar, a nod to the Japanese technique shou sugi ban. The idea here was to make a blueprint for following outposts still to be announced. 'I'm sad Lawrence didn't get to see this space. The last time he saw it, it didn't even have walls,' Ceccotti says. 'It's bittersweet. I just want to keep his vision for Craftsman and Wolves going.' Cumberland Foodhall won't just be for students: These new meals are coming to the Strip
Knoxville residents, not just students, soon will have a new dining option on Cumberland Avenue through a partnership between the University of Tennessee at Knoxville and Core Spaces, the student apartment developer opening two of four Hub Knoxville buildings for the fall semester. But the new Cumberland Foodhall concept, which will feature counter service and food lockers from multiple vendors, won't be ready until the spring 2026 semester. Through university food vendor Aramark Educational Services, UT is leasing the space inside Hub Knoxville at 1925 Cumberland Ave. for Vol Dining. The food hall will serve lunch and dinner, with space for 350 people to sit. While vendors will accept credit and debit cards, students can also pay using Dining Dollars, their VolCard or the Flex Plan. Core Spaces will build out the space as a food hall for $586,480. UT will pay more than $2.85 million during a five-year lease period, followed by the option to extend the lease another five years. The food hall will have one counter-service restaurant called Zen Sushi & Wok, which will offer sushi, ramen, dumplings and boba tea. The concept is unrelated to a restaurant with a similar name that operated on the 1900 block of Cumberland Avenue before Hub Knoxville construction began. The Cumberland Foodhall also will have lockers where people can pick up food from two other vendors: Athenian Grill and Big Orange Grill. Athenian Grill will serve Mediterranean food, including bowls, wraps and gyros. Big Orange Grill − the second location for this UT concept and the third restaurant partnership with UT's Northeast Tennessee AgResearch and Education Center − will serve UT farm-raised beef burgers, chicken tenders and Philly cheesesteaks. The lockers join a growing list of ways for students to pick up food, as UT has added delivery robots on campus and upgraded dining options with more vendors to complement traditional dining halls. The new food hall is another step in UT's mission to widen the campus footprint while investing in off-campus spaces. The university has identified a 1.5-mile radius in which UT can have the biggest "influence" south of the river at Cherokee Farm Research Park and north to Mechanicsville, where the UT Institute of Public Service operates. The radius expands east and west to the South Waterfront and Sequoyah Hills neighborhood, respectively. UT uses this radius to identify key areas where it would like to invest. This includes the Strip − where UT already owns and operates buildings housing a Chick-fil-A and the Howard H. José Alvarado was an elite reliever just two years ago, and his rocket arm was working well early this season (2.70 ERA, 1.21 WHIP, 25 Ks in 20 innings) before the league dropped an 80-game suspension on him for a banned substance. Whether Alvarado's mistake was an honest one or not, it put the Phils in a bad spot. And when he does come back from his suspension, it might not be with open arms - soon after, he'll still have to sit out the playoffs. Which is why they should consider cashing in if he provides them good value. José Alvarado was a perfect seven-for-seven converting saves this season. Eventually, someone *should* fall behind the pack and focus on a retool for next year. But even with that, MLB will no doubt have a seller's market this year. The demand for quality additions far outweighs what's expected to be available. Trades won't be made easily. If Alvarado's high-risk, high-reward appeal helps lower the Phillies' prospect cost, they ought to at least consider it.
