A Latin-Inspired Steakhouse With Huitlacoche Bordelaise Will Arrive on Randolph Restaurant Row

An unlikely steakhouse will rise from the team behind Diego, the casual mariscos-centric bar in West Town. It wasn't the restaurant that chef Stephen Sandoval and Oscar Sotelo planned on opening next, but the opportunity proved too good to pass up. Trino is targeted for a late July opening in the West Loop, replacing Japanese restaurant Komo along Randolph Restaurant Row. A new basement bar, a cozy speakeasy-style spot called Laberinto, will complement the restaurant. Trino will debut before Sueños, Sandoval's much-anticipated West Town restaurant that grew from a pop-up and recently finished up a residency at Soho House. 'Trino was always in the books but, like Diego, it came about unexpectedly,' Sandoval says. 'The universe works in crazy ways.' To introduce the public to Trino, Soho House will host six pop-ups from June 20 to June 28. Trino draws inspiration from Sandoval's family connections to Northern Mexico and Spain's Galicia, as well as his time in 2014 spent cooking in Argentina with chef Francis Mallman, a live-fire cooking aficionado. 'These are all regions with deep steakhouse traditions,' Sandoval says. Sandoval will also pay homage to the classic Chicago steakhouses, favorites for himself and his grandfather whom the restaurant is named for — Sandoval also shares the same middle name. Appetizers will include a crab salad served on Sandoval's signature tostada made famous at Diego. A savory quemada crème fraiche, which uses a toasting technique to add smoky flavor, will pair with chicharron and potato chips. Pulpo Gallego, a classic octopus dish from Galicia, will be on the menu too. Dinner rolls are served with a sweet-and-fatty browned butter on the side. Pasta, another steakhouse given, looks to Mexico City for Trino's bucatini Polanco, referencing CDMX's upscale neighborhood. It's made with a poblano wine sauce. Mac and cheese comes with a lobster claw, and the refried beans are made with duck fat and topped with a dollop of salsa cruda. Sauces will play prominently at Trino, as they do at Diego and Sueños. For their seafood tower, you'll find a classic cocktail sauce and other 'fun dipping sauces.' Sandoval loves potatoes so much that they earn a separate section on the menu, and Trino will serve a special potato of the day. Sauces also come into play with the beef, including a huitlacoche bordelaise and a cherry-churri, a seasonal play on Argentina's signature chimichurri. For the steaks themselves, Sandoval is still deciding on a specific vendor, but classics like ribeye and a bone-in filet will be on the menu. A bavette steak, traditionally a cheaper cut that can be made tender through technique, will be Trino's substitute for skirt. 'We also want to have more affordable but underrated options to some of the classics,' he says. 'You shouldn't have to break the bank to have a nice steakhouse dinner.' To cook the steaks, which will have spent time in an on-site dry-ager, Sandoval is opting to use a high-powered plancha grill, called a 'chapa' in Argentina, that reaches up to 850 degrees. 'It's one of Mallmann's favorite ways to cook steak,' he says. 'I used one years ago and haven't seen it in Chicago, especially not in a steakhouse, but I think it's exactly what we need to get that deep Maillard crust.' For the design, which is mostly under Sotelo's purview, the group is working with AGN Design's Aida Napoles. The space will seat about 85 at its white tablecloth-topped tables. There will be touches of bright colors and moody lighting, and like at Diego, they'll feature plenty of pieces by artist friends. Beverage director Carolina Gonzalez, who curates drinks at Diego and the Sueños pop-up, is working on Trino's cocktail program. Originally from Mexico City but raised in Chicago, Gonzalez is looking toward Mexico, Galicia, and Argentina for ingredients and inspiration. There's a savory Negroni made with olive oil-washed Campari with mole notes. A yerba mate martini utilizes cold fusion techniques to extract the herb's flavors minus its bitterness. Gonzalez is also experimenting with Fernet Branco for an aperitif or dessert cocktail. For the spirit selection, Gonzalez will focus on small producers, woman-owned when available, and purveyors who give back to their communities. Gonzalez is also in charge of the beverage program for the speakeasy. Laberinto, which means 'maze' or 'labyrinth' in Spanish, will have 10 to 20 seats. Rather than a set menu, the bartenders will work with guests to create drinks for a dealer's choice option. 'There's somewhat of a disconnect with people right now, and we want to have that human interaction at Trino,' she says. DJs and local musicians will also perform. With Trino, Diego, and Suenos, Sandoval and Sotelo are working toward a new hospitality group, 5 Sueños, that offers Chicago something different. 'At Trino, we can start to bring in key players and grow with them,' Sandoval says. 'Our goal is to build a brand that sets a new benchmark for what a thoughtful, culinary-driven, Latin-owned hospitality group can look like within the city.' Trino, 738 W. A Jewelry Brand With Mexico at Its Heart

For decades the jewelry house Tane México 1942 has translated its Mexican heritage and identity into silver, drawing inspiration from items as diverse as kernels of corn, Oaxacan needlework and even Frida Kahlo's signature braids. 'We have a wonderful country with millions of stories to tell,' Michelle Pell, the company's chief executive, said during an interview at its flagship store, in the city's fashionable shopping district of Polanco. And although Tane (pronounced TAH-neh) has ambitions to expand internationally, the brand 'will always be connected to, inspired by and rooted in Mexico,' said Ms. Pell, 43, who was born and grew up in Mexico City. Sometimes the links are explicit. Think of almost any symbol or object typically associated with Mexico — the Virgin of Guadalupe, say, or a candy skull for Day of the Dead or even an avocado — and chances are a miniature version will be found in México Mi Amor, its ever-expanding line of charms (188 so far). And sometimes they are more subtle. Its Xocolate collection, for example, includes rings in different designs and finishes that can be stacked, creating a look that suggests a molinillo, the wooden whisk used to froth Mexican hot chocolate. While Mexico has been Tane's touchstone since the company's beginnings, it has focused on that connection more consistently in the past decade, according to Martacarmela Sotelo, 52, who became Tane's creative director three years ago after about a dozen years as one of its freelance designers. For example, the Bordados collection (embroidery in English) recreates some of the intricate floral designs created by women in San Antonino Castillo Velasco, a small town in the southern state of Oaxaca. With help from the Museo Textil de Oaxaca, Tane worked with members of a local women's cooperative to select designs and pays royalties to use them. The work was too detailed for a regular mold process, so Tane used a 3-D printer to create wax models for casting, replicating each needleworker's style and even the size of her stitches. 'It's really beautiful, because each stitch is the calligraphy of a different person,' Ms. Sotelo said. The Bordados Small Wave Bracelet ($1,080) won Best in Silver at the 2021 Couture Design Awards in Las Vegas. In contrast, the Alma (Soul) collection is starkly simple, playing with the smooth, organic shape of a kernel of corn — a rich cultural symbol from pre-Columbian times to the present. The Alma Trilogy Earrings ($310) are clusters of kernels in sterling silver, 18-karat rose gold vermeil and 23-karat yellow gold vermeil. Although the company uses advanced technology, it has continued to rely on the skills of its craftspeople, Ms. Sotelo said. 'All of our pieces still go through many hands.' That was evident at a Tane workshop in the Mexican capital that develops jewelry prototypes and produces items such as silverware, sports trophies and sculptures. Artisans demonstrated tasks such as soldering a clasp onto a chain, setting rows of tiny lab-grown diamonds on a ring and assembling silver flowers into a necklace. (Most of the jewelry production is done at a second workshop, in the western state of Michoacán.) The company has approximately 300 employees, including 110 in the workshops. And many of them have been with the company for years, such as Ernesto Montoya, 56, who joined Tane in Michoacán when he was 18 and has spent the past 20-plus years in Mexico City, where he leads the team that turns new designs into prototypes. 'This is part of my life, being here,' he said, adding with a smile, 'I've lived more at Tane than at my home.' Homage to Frida For the company's most recent jewelry collection, introduced in April 2024, Ms. Sotelo's creative team immersed itself in Frida Kahlo biographies and her diary and letters, to come up with designs that the artist, who died in 1954, might wear today. (Tane holds a license from the Frida Kahlo Corporation in Florida to use the artist's name and likeness.) People may well disagree about 'whether we like or we don't like Frida,' Ms. Sotelo said; however, 'she was an extraordinary woman at a time when this type of women didn't exist.' And perhaps it was a fitting moment to recognize a high-profile Mexican woman, Ms. Sotelo said, pointing out that the collection's debut happened to precede the 2024 election of Mexico's first female president, Claudia Sheinbaum. The collection, which Ms. Sotelo said has been the company's most successful, initially presented 44 pieces (with a few more added since and others planned) with a double knot as the unifying design element. Carlos Melguizo, who carries Tane pieces at Carats, his jewelry and gift store in McAllen, Texas, said he liked the collection's understated elements, such as braided silver and a hand holding a paintbrush — 'little details that are more subtle, but you know it's Frida.' Born in Texas and raised in Mexico, Mr. Melguizo, 63, said in a phone interview that he had known and loved the brand most of his life; his mother gave him a Tane gold cross pendant when he was 13. Past and Future Tane got its start during World War II. Its founders, Sergio and Natalia Leites, had fled Paris and settled in Mexico City, where in 1942 they opened a business selling leather goods. (The brand name was derived from the French word for tannery.) When the couple started working with local metal smiths on the hardware for their handbags, belts and other items, Ms. Sotelo said, they discovered the high level of silver work in Mexico and began to shift the focus of the business. Tane remained in the Leites family until 2010, when it was purchased by Grupo Bal, a Mexican conglomerate with holdings that include El Palacio de Hierro, a national chain of luxury department stores. Tane jewelry is sold worldwide through Farfetch, and online in Mexico and the United States through its own platforms. Tane also can be found in its own boutiques in Mexico City; in El Palacio de Hierro stores in Mexico; and in some American jewelry stores. Ms. Pell, who joined Tane in 2020 as commercial director and was appointed chief executive in April 2024, declined to give sales figures, but said that 2024 had been another record year for the company. In addition to continuing to grow in Mexico, Ms. Pell said, the company also hopes to open stores abroad. Spain would be a logical possibility, she said, given Mexico's historical and ongoing ties to that country; so would parts of the United States. Speaking in early March, she said that the uncertainty over U.S. tariffs meant that any company had to be prepared: 'I think the main thing, especially in industries such as ours, is to remain calm, be prudent and, as circumstances arise, continue to adapt. 'We must remember that in the long term, things eventually tend to settle down again.'

Mariners on spring roll - ‘If fans can ignore the success, they'll keep winning'

Granted, I know the Mariners have lost their last two games, but through Saturday they had won six in a row and 17 of their last 20 to improve to 20-12, the best record in the American League at the time. That 20-game stretch might be the best 3 1/2 weeks in franchise history. Numbers-wise, I'm guessing the 2001 team that went 116-46 had a better 20-game stretch, but that team had some horses, and this one does too, but there aren't nearly as many in the stable. The 2025 Mariners have also experienced injuries galore, most notably to their best starting pitchers, George Kirby and Logan Gilbert. To varying degrees, they've also missed right fielder Victor Robles and second baseman Ryan Bliss. Utility man extraordinaire Dylan Moore is due back soon, but first baseman Luke Raley is expected to be out with an oblique strain for another five to six weeks. You'd think a team that appears to lack depth to overcome these unhealthy developments would plummet to the bottom of the AL West. Instead, the Mariners have been remarkable, stringing one win after another, catching the attention of gambling sites such as Draft Kings, where Dan Wilson's squad is listed at 15-1 to win the World Series. Naturally, winning the whole thing is what they're shooting for, but most Mariner fans would accept just making it to the World Series, even if they were to lose to the Dodgers or Padres or someone else, because they're the only team to have never played in the Fall Classic. Draft Kings has the Mariners at 6-1 to win the American League and end that 47-year drought. None of what's happening makes sense given their roster, and it prompted Stacy Rost, a sports talk show host at Seattle Sports, to ask her Twitter followers for the biggest reasons why the Mariners have been on absolute fire. She heard from those who had tangible reasons - Cal Raleigh's torpedo bat, closer Andres Munoz' lockdown stuff and a shockingly rejuvenated Jorge Polanco. Other followers credited Wilson and hitting coaches Edgar Martinez and Kevin Seitzer for a simplified approach at the plate that features more balls in play and walks. The last two seasons the Mariners have broken franchise records for strikeouts, but in two games in Texas over the weekend, they struck out only three times on consecutive nights. Everyone justifiably raved about how the Mariners manufactured their game-winning run in a 2-1 victory over the Rangers Saturday night. Polanco started the eighth-inning rally with a hustle double, an example of Wilson wanting his team to be more aggressive on the base paths. Newcomer Ben Williamson failed to move Polanco over to third with botched bunt attempts but came through anyway with a groundout to the right side. The way he was greeted when he returned to the dugout, you'd think that Williamson smacked a 500-foot home run. Pinch-hitter Rowdy Tellez followed with an RBI single to break the 1-1 tie, enabling the Mariners to win their eighth straight series. I liked the intangible reasons Rost received because this recent success borders on the unbelievable, suggesting that other stuff must be in play, From Yoda Prom: 'This looks like a team that is playing for each other instead of individual accolades.' And from Dave Sae: 'It's the power of friendship.' Maybe there's something to that, a collective approach that compensates for a lack of overall talent, the kind of thing we can all appreciate. But of course Rost heard from non-believers too. They'll point out that the Mariners had a 10-game lead in the AL West last year in June and still failed to win the division and make the playoffs. James Gill thinks the Mariners are doing it with 'smoke and mirrors,' an old term that basically says it won't last for long. I tend to agree with a Rost responder named Jesus, who said: 'Nobody believes in them. Once the folks start believing, the pressure will be too much. If fans can ignore the success, they'll keep winning.' I'll give the last word to Brandon Patching, who said: 'I'm convinced that the baseball gods are finally showing this wholesome group of good guys the love they deserve.' Some of the signs point to all of this being a short-term aberration, but what if it isn't, what if they keep playing out-of-their-minds baseball into October? With what they've been doing lately, the Mariners have proven they could be potential playoff party crashers who just might turn the 2025 season into the best one ever.
