‘6-pack chef' Wallace Wong on breaking records, fitness and stepping away from restaurants

One hundred and sixty-six. That is how many slices of cucumber that Chinese-Canadian chef Wallace Wong can chop in 30 seconds while blindfolded. He set the Guinness World Record in 2023 while filming for the Italian reality show Lo Show Dei Record, or The Records Show, in which participants attempt to break records. He has since set or broken 10 others, all for chopping vegetables or fruit at breakneck speed. He is also a season-two winner of the cooking competition Chopped Canada, has taken part in shows like Top Chef Canada, Fridge Wars and Canada's Got Talent, and is a bodybuilder who has competed in the Arnold Amateur Bodybuilding Championships and the IFBB North American Championships. Known as the 'six-pack chef', Wong's dedication to food and fitness stems from when he was growing up in Ontario, Canada, with his parents, who are from Hong Kong. 'My love for food came from being Chinese, being Cantonese,' he says. In 2023, Wong set his first Guinness World Record on Lo Show Dei Record by chopping 166 slices of cucumber within 30 seconds while blindfolded. Ridge cucumbers are much drier than regular ones. If you can use those, great. If you can't, remove the seeds from a regular one. Overview Prep time 30 mins Serves 4 to 6 Ingredients 2 ridge cucumbers or 1 regular cucumber 2 ripe Galia melons (each weighing about 850g) 4 tbsp extra-virgin olive oil, plus extra to drizzle 4 tbsp white balsamic vinegar 25 large basil leaves, plus extra to serve 1 garlic clove, chopped ½ shallot, chopped (about 10g) finely grated zest of 1 lime and juice of 2 (or to taste) Parma ham, shredded, to serve (optional) toasts drizzled with extra-virgin olive oil, to serve (optional) Method Step Peel 2 ridge cucumbers or 1 regular cucumber and chop the flesh. Step Halve 2 ripe Galia melons and remove the seeds with a spoon. Put them into a small bowl. Step Scoop out the melon flesh into a separate bowl, using a large spoon. Catch any juices in the bowl too. Step Put all the seeds and the bits of flesh attached to them into a sieve. Place the sieve over a bowl and press the flesh to extract more juice – there might not be much – then add this to the scooped flesh. Step Put 4 tbsp extra-virgin olive oil, 4 tbsp white balsamic vinegar, 25 large basil leaves, 1 chopped garlic clove, 10g chopped shallot and zest and juice of 1 lime into a blender or food processor. Step Add the cucumber and melon flesh and juice, along with a pinch of salt, and whizz until smooth. Taste and add the second lime if you think it needs it. It will taste quite sweet but will balance out as it sits in the fridge.

The sandwich soul mate of cucumber slices is peanut butter, a spread usually relegated to other, less dynamic if beloved sandwiches (ahem, PB&J). When Simply Recipes reader Bill Hunsinger wrote to us in response to a previous cucumber sandwich article we published, I sat up and took notice. 'If you want the absolute best-tasting cucumber sandwich you'll ever taste, make a peanut butter and cucumber sandwich,' he said. ' I learned this from my father, who I believe either learned it from his parents during the depression of the 1930s or when he was in the Air Force during World War II, which at that time was called the Army Air Corp.' Well! I've been rapturously eating peanut butter and cucumber sandwiches every summer since 2013 or so, and I've rarely encountered others with the same habit. It was great to talk shop. Bill went on to explain how he makes his take on his father's sandwich. Besides me, Bill, and his dad, who else covets peanut butter and cucumber sandwiches? There are precedents: Think of fresh spring rolls with peanut dipping sauce or Indonesian gado-gago. The richness of the peanut butter sets alight the juicy crunch of cucumber in a way that spreads like Boursin or cream cheese just can't. Also, peanut butter is inexpensive, non-perishable, and needs no softening. It's always ready to be turned into a delightful sandwich. Its substantial body and nutritional density make a cucumber sandwich a meal that sticks with you. A 2013 story on NPR initially tipped me off on the cucumber-peanut butter combo. The sandwich mentioned in that story was far more elaborate, a pile of fresh garden vegetables (tomato, onion, cucumber) with cheese and a finishing slick of peanut butter. Like Bill's sandwich, it employs whole-grain bread. NPR listeners voted the recipe the winner of the 'Taste of Summer' competition that year; its down-home ingenuity must have struck a chord. Over the years, I pared down my take on it to just peanut butter, tomato, and cucumber. I only eat it this way if the tomatoes are big, fat, homegrown ones, and it's the messiest thing ever (I like thick, even layers of crunchy natural peanut butter on both slices of bread). You have to assemble the sandwich and eat it immediately, preferably over the sink with paper towels nearby. Usually, I toast the bread lightly so it holds up to the juicy vegetables better. Whole-grain bread is a common thread with this otherwise malleable sandwich. I asked Bill what he likes. 'I love Arnold's Whole Grains Healthy Multi-Grain,' he wrote back. 'It has an earthy, natural flavor without tasting like I just shoved my face into a pile of dirt and yet it's subtle enough so that it doesn't take away from the flavor created when cucumber and peanut butter combine on my taste buds.' Kylie Jenner poked fun at older sister Kendall's viral cucumber moment and joked that her bad cutting technique runs in the family. Back in 2022, during an episode of The Kardashians, the 29-year-old supermodel was seen grabbing a snack from the kitchen. Kendall decided to slice cucumber to nibble on - but the way she did so was soon mocked by fans on social media. Kendall's cutting technique showed the star placing her left hand on the far end of the snack while her right dominant hand was placed underneath to thinly cut some pieces. On Wednesday, Kylie, 27, decided to reminisce on the humorous moment while showing off her son Aire's culinary skills. The Kylie Cosmetics founder took a picture of her son, three, chopping a cucumber and posted the snap to her Instagram stories. The little one could be seen utilizing the same technique as his aunt, prompting Kylie to pen, 'runs in the family? @kendalljenner.' Kendall responded to the image by reposting it to her own Instagram stories and wrote, 'i knew he was mine!!!' The mom-of-two shares son Aire, as well as daughter Stormi, seven, with ex and rapper Travis Scott. However, it is not the first time that Kylie has poked fun at her older sibling's viral attempt to cut a cucumber. Late last year in November while promoting a new collection for her Khy clothing brand, the beauty mogul uploaded a clip as she recreated the moment. While donning a black sequin top as well as matching mini shorts, the star was filmed slicing cucumber the way her sister had done from the past Kardashians episode. Kylie also lip-synced to an audio snippet from the episode which played in the background of the reel. During the 2022 episode of Hulu's The Kardashians, Kendall was seen entering the kitchen where she joined her mom Kris as she grabbed a quick snack. Her momager offered to have the chef whip something up for her daughter, but the model insisted that she could make something herself. Kris warned her daughter to 'be careful' which prompted the 818 Tequila founder to admit that she was 'scared.' She then lifted her head to glance towards the camera amidst chopping and jokingly said, 'I am not a good cutter, so don't zoom in on me. I'm not professional whatsoever.' As Kris worriedly watched from across the island, she decided that her daughter most likely needed a bit of assistance. 'Hey chef!' she called out. 'Do you want to cut this up for her?' But Kendall insisted that she could do it and expressed that she was 'fine.' But the moment soon blew up on social media, with a number of fans offering their thoughts on the reality star's unique cutting skills. Over on X at the time, one penned: 'Kendall Jenner not knowing how to cut a cumber and Kris proceeding to call for the chef is hilarious to me.' Another wrote, 'Anytime you feel like you're bad at doing something, watch kendall jenner chop a cucumber,' while a fan added, 'Watching Kendall Jenner try to cut a cucumber was shocking and yet… not surprising they have no life skills.' 'About an hour ago, I witnessed Kendall Jenner attempt to cut a cucumber on my tv screen. It made me feel a little superior but mostly poor,' one shared. The model previously addressed the viral moment during an interview with the Wall Street Journal in 2023. 'Let me just say I successfully cut 'The Cucumber.' So if anyone says I cannot cut cucumber, I physically cut the cucumber and I did it tastefully. I didn't hurt anybody. So I can cut cucumbers.' Earlier this month, both Kylie and Kendall whisked themselves away for a lavish summer getaway along the French Riviera. The pair jumped to social media to give their fans a glimpse at the trip - including a moment as they grabbed a bite to eat at an outdoor restaurant. Kendall also uploaded a reel as she filmed herself taking a shot while balancing a Hermes purse on top of head. The limited edition Hermes Kelly Doll bag itself is notably estimated to be worth $50,000-$60,000, per Sotheby's. Kylie later also traveled to Greece and was accompanied by her two children as they soaked up the sun on a spacious yacht.
