US-style meat smoking spices things up for Aussie weekend barbecues

Most weekends, Callan Buchholz wakes up early, not for a morning run or yoga class, but in pursuit of the perfect smoked brisket.
The 35-year-old lives in Rockhampton, central Queensland, a region regarded as the beef capital of Australia and renowned for its bull statues and meat-related experiences.
He has joined the growing trend of weekend barbecue enthusiasts converting from the traditional Aussie barbie to American-style smoking.
It's a mouth-watering method increasing in popularity both for the challenge and the cost.
"You can definitely feed a lot of people in one sitting and have food for days left over," Mr Buchholz said.
Mr Buchholz said it was his wife, Ashleigh, who got him into the culinary art of meat smoking.
"I turned 30 and I'm not into golf nor history so my wife bought me a meat smoker," he said.
"Since then, I think I've had about 15–20 mates travel with me on the journey the last few years, which is cool.
Meat smoking involves a slow, low-temperature cooking approach over direct heat from wood or charcoal that tenderises the meat and develops a unique smoky taste.
It requires skill and technique, but also, time and patience.
"There's a few more elements at play than a traditional Australian barbecue," Mr Buchholz said.
"The prep that goes into the meat and the planning is all part and package of it."
Adelaide's Luke Leyson is a butcher but not just any butcher.
He's captain of the Australian Butcher Team.
Mr Leyson said the rising trend of meat smoking had resulted in increased demand for certain types of meat.
"It's definitely translated into retail butchery," he said.
"The cuts that are used in these low and slow methods aren't your ones that you would normally come across, so as butchers we've got to move with the times as well.
"That's the best thing about these food trends. As long as we can educate ourselves and keep on top of them, it's great for us to then help out our consumers to be able to cook the perfect meat on the weekend."
As the nation grapples with a cost-of-living crisis, Mr Leyson said a big weekend cook-up could also be more cost-effective.
He said a 12-hour smoked beef brisket was a new twist on the Sunday roast.
"It's almost like that little take on your Sunday roast where you'd cook a big roast and then it would carry over into the start of the week for cold cuts."
Butchers across the country are also getting in on the backyard-cooking trend.
Mr Leyson said beef, pork and lamb were the most popular choices of meat when it came to smoking.
"It's kind of hard not to get into the trend especially when we've got to have a knowledge of how to cook it as well so we can translate that to our customers.
"When you're thinking low and slow you think of ribs and pork ribs is a good place to start."
Is the traditional Aussie backyard barbecue under threat from a meat-smoking culture?
According to Australian celebrity chef Matt Golinski, there's still a place for both.
He said the low and slow style of cooking had taken off in Australia in recent years.
"It's become a huge thing now for amateurs and professionals and the teams that you see getting around the countryside with their big smokers and entering in competitions is an amazing thing," he said.
"It is an art form and the guys that get really serious about it, they understand the science of it.
"The temperatures are hugely important and there's the purists who will only smoke with certain woods, so there's a massive variation in the way you can achieve an end result."
The highly regarded Sunshine Coast-based chef said the reward of cooking and eating smoked meat offered a unique and intensely flavoured experience.
"You can really create magic," he said.
"It's also that anticipation as well and you have to be patient enough to wait for it to be ready and once it is, it's worth that wait."

A Sovereign Islands stunner boasts some serious entertainer's credentials courtesy of painstaking redesign that's all about the indoor-outdoor lifestyle. Boasting 27m of waterfrontage and views to the Coomera River, 86 Royal Albert Cres has undergone an extensive renovation by owners Glenn and Riki Campbell, who purchased the property in 2022. Back then, the home had 'great bones' but was in need of a modern makeover, so the Campbells set to work redesigning the residence with a family friendly layout and the entertainer's lifestyle front of mind. 'It was in need of reconfiguring and modernising,' Mr Campbell said. 'We wanted it to be an entertainer's house, so we reconfigured the whole backyard and pool area to make it more family friendly, including removing concrete sections and adding bi-fold doors across the entire back of the house to allow it to open up. 'We also shifted the home cinema downstairs and turned the kitchen around to make it an open plan working area.' Meanwhile, there's also the bonus of a huge basement beneath the home, which accommodates up to seven cars, and the property boasts a large boat pontoon where you can moor a 65ft boat. 'It's a very convenient location for boating,' Mr Campbell said. 'It's bridge free and in two minutes you can be on the Broadwater where you can access all the great locations on the Gold Coast.' Situated in a private Sovereign Islands estate, the property offers easy access to Paradise Point's cafes, restaurants, shops, and parklands, and is just 15 minutes from the village atmosphere and world-class golf courses of Sanctuary Cove. 'What do you mean we're not wearing pants anymore?' It was a sentence uttered to me by a friend over a $35 breakfast. He was wearing a puffer jacket, because it was a Saturday, and he is a white man, and he was also beginning his journey into the five stages of Millennial fashion grief — starting with denial. While trying not to dip my boxy blazer sleeve into my smashed avocado, I had to gently tell him that this was the new world order. He then swiftly moved into anger, 'Well, that's ridiculous,' and then onto bargaining, 'Are you sure it isn't just shorter shorts?' Then he sadly spiralled straight into depression, 'I'm getting too old for these trends, and who can pull it off?' Then, eventually, he got to acceptance, 'Maybe with a trench, it'd look cool, or will I just look like a creep?' I'd just dropped quite the bombshell on him by solemnly delivering the news that pants, much like flavoured lip-gloss and berets, unless you're in Paris, not just because you've watched Emily in Paris — are out. It was better he heard it from me than discover it at the local shopping centre, in a few months. There's nothing more confronting than discovering what is cool by what the Cotton On mannequins are dressed in. It's how so many discovered the return of the mico-mini skirt. It is downright embarrassing to learn what is trendy again in the unflattering lighting of a shopping centre. It can make anyone feel like a sad middle-aged woman, no matter how young and hot they are! Not that I would know, of course. I've been grappling with the no-pants news for the last fortnight, but it has been brewing for a while. I've been treating it like an electricity bill and ignoring it, but at this point, I'm going to accept it because celebs are going everywhere without pants! They're at dinners, on Instagram, swanning around fashion events, and heading to red-carpet events. I can't stress enough that they're doing all this without pants! Hailey Bieber was seen rocking a trench without pants, and Kristen Stewart has been doing the no-pants dance. Dakota Johnson was seen ditching pants just after her reported break-up with the man Gwyneth Paltrow consciously uncoupled from, Chris Martin. Oh yeah, and he is in Coldplay too. Even Charli XCX has been known to leave her pants at home, and we all know whatever she's doing is cool; this is the woman who managed to reference her birth control in a song, and it wasn't cringe. We should have seen it coming when Sabrina Carpenter, under the instruction of Pharrell Williams, wore no pants to the Met Gala. Pants much like a footballer's career after a knee injury are over. I don't have any problem with celebrities not wearing pants, like they're celebrities, if they're being weird, I'm more entertained, so go for it, but I know what happens when a trend goes mainstream. It goes from something you see looking edgy on red carpets to something you see looking wrong on someone at Kmart. While my friend may have reached acceptance. I think I'm still in the bargaining phase. 'Okay fine no pants are in, but can we just please not see anyone wearing them at the supermarket?' Everyone's got a line, mine is drawn at no pants in the frozen section.
