From now until autumn we are spoilt for choice with British produce, and I always picture it in my head as a progression of colours. May and June are all about the greens with lots of verdant leaves, the first peep of podded peas and broad beans, asparagus, fennel and willowy fresh herbs. When July arrives it brings with it a flash of bright red berries and plump, juicy tomatoes. Then, by August and September, the spectrum opens up to vibrant sweetcorn, inky blackberries and aubergines as well as sun-blushed peaches and nectarines. There's much to look forward to, but for now we should focus on the greens.
Every year, on the third Sunday in May, there's a festival in the Hampshire town of Alresford to celebrate the start of watercress season (see watercressfestival.org and our feature about it at dailymail.co.uk/you). I think it is a wonderful leaf that we should be proud of. It grows mainly in Hampshire and Dorset in waterlogged soil and is often praised for being rich in vitamins and minerals. With a distinctive peppery flavour, a tangle of its leaves will liven up any salad, while pairing it with lentils and hot smoked salmon is a fine option. It also makes great pesto, although the British classics of watercress soup and chicken and watercress sandwiches are a highlight of my spring menu.
2 x 80g bags watercress, £3; 300g potato, 25p
METHOD
Heat a knob of butter and a splash of cooking oil in a large saucepan over a medium-high heat. Roughly chop the onion and sweat with a good pinch of salt for 5 minutes until starting to soften.
Rinse the potato, then chop into small chunks (don't bother to peel unless the skin is gnarly) and add to the pan. Sprinkle in another pinch of salt and fry for 6-7 minutes.
Add the watercress and fry for a couple of minutes until wilted, then pour in 750ml chicken or vegetable stock. Bring to a simmer and cook for 7-8 minutes or until the potatoes are completely soft.
Leave the soup to cool a little before whizzing in a blender (or use a stick blender) with the cream until completely smooth. Check the seasoning (adding salt, pepper and a squeeze of lemon juice if you have it) and serve in bowls, hot or cold, with an extra swirl of cream.

He's best known for his rich sauces, hearty French classics and firm but fair critiques on My Kitchen Rules - and now Manu Feildel has revealed his top 2025 culinary secrets. Speaking to FEMAIL, the celebrity chef spilled his 'musts' - from kitchen tips and pantry essentials to the one humble vegetable he believes every Aussie should be cooking with. When it comes to flavour, Manu believes there is an often-overlooked vegetable that deserves a second chance: leeks. 'They're sweet when cooked down and add so much depth to soups, pies, and sauces,' he said. 'They're a real French kitchen staple and totally underrated here.' The French-born chef, who recently launched a new cast iron cookware collection with Spotlight, said a well-stocked pantry doesn't need to be fancy - but it should be functional. 'Olive oil, Dijon mustard, garlic, tinned tomatoes and good-quality salt,' he said when asked what ingredients he always keeps on hand. 'With those, you're halfway to something tasty already.' And with many of those items setting you back just a couple of dollars, it's proof that flavour doesn't have to come with a big price tag. Though known for restaurant-level meals, Manu insists weeknight cooking can - and should - be simple. His go-to? A one-pan roast chicken with veggies. 'Quick to prep, full of flavour, and the oven does most of the work. Plus the leftovers are great the next day,' he said. 'The biggest mistake I see over and over again is something almost everyone makes,' Manu added. 'It's not seasoning properly. A lot of home cooks are afraid of salt, but seasoning is key to bringing a dish to life. Don't be scared - just taste as you go.' For those looking to elevate their backyard BBQ game, Manu has one golden rule: marinate. 'A great marinade can turn simple meat or veggies into something incredible,' he said. 'And don't forget to rest your meat after cooking - it keeps it juicy and flavourful.' While he's cooked for thousands and judged hundreds of hopefuls on television, he says it's not technique that makes a great home cook - it's passion. 'The best ones love what they do,' he said. 'It's not about perfection. It's about putting heart into every dish.' And if you've been too intimidated to try crème brûlée, Manu wants to change your mind. 'It's literally cream, egg yolks, sugar and vanilla,' he said. 'The trickiest part is not eating all the custard before it sets!' The chef's new Culinary & Co. cast iron collection, available exclusively at Spotlight, was designed to bring that same balance of beauty and practicality to Aussie kitchens. She says: 'This is the most effective way to manage shedding, prevent painful matting and distribute those essential natural oils that keep their coat gleaming.' Make sure you choose the right brush for your dog's coat type. You can choose from a slicker brush, pin brush or rake. Just a few minutes of brushing can make a world of difference. CLEAN UP: When your four-legged friend ends up mucky, you can get them squeaky-clean without pricey products. Megan says: 'Skip the expensive wipes and sprays and opt for a warm, damp washcloth for quick clean-ups. 'Coconut oil isn't just for cooking, it's a fantastic paw balm and a safe, effective moisturiser for their coat and skin. 'Repurpose an old comb for gentle de- tangling, and use a soft toothbrush to keep those teeth in tip-top shape.' NAILED IT: You should make sure your dog's claws are kept trim or they can cause discomfort and other issues. I was stunned when I got my dog back from the groomer - I think he might have been switched in the shop Invest in a good pair of nail-clippers and you can do it yourself at home, advises Megan. You can ask a vet or dog groomer for a demonstration or even look on YouTube for an online tutorial. Trimming hair at home is very tricky. If you choose to try it yourself, Megan says: 'Take your time, use blunt-nosed scissors or clippers with appropriate guards, and prioritise safety above all else.'
