
BottleRock's most luxurious bites: 7 fancy foods to indulge in at the 2025 festival
A weekend at BottleRock can easily cost as much as a dinner at the French Laundry — or more — but there's plenty of caviar and truffles to go around. Here are the fanciest dishes to seek out at this year's three-day festival in Wine Country.
The Godzilla, Sumo Dog ($20)
This Japanese-inspired footlong hot dog from the newest vendor at Napa's Oxbow Public Market could easily feed up to four people. Featuring a mix of toppings that will make your head spin — miso beef chili, togarashi cheese sauce, wasabi relish, pickled peppers, spicy mayo, teriyaki sauce, furikake, miso mustard coleslaw, jalapeño and nori — the flavors somehow all work to create a delicious, fulfilling and extremely-Instagrammable meal.
New England lobster roll, Mustards Grill ($29, VIP only)
This sweet, buttery roll from a Napa Valley institution (and a San Francisco Chronicle Top 100 restaurant) is jam packed with refreshing and delicious Maine lobster, and pickled onions bring a burst of acidity and flavor to every few bites. Be sure to eat some of the meat on its own (there's plenty to go around) to truly bask in all of its glory.
Omakase Roll, Omakase ($22)
This San Francisco sushi spo t is serving two rolls: A California roll ($18) and Omakase's house special. The latter is a spicy tuna and cucumber roll topped with generous cuts of spicy salmon, tobiko and green onion. It's refreshing yet still filling, and a great gluten-free option.
Lobster corn dog with caviar, Under-Study ($32)
Arguably BottleRock's most famous dish for three years running, the lobster corn dog topped with caviar from the Michelin-starred team of Napa Valley's Press Restaurant is available to all BottleRock festivalgoers for the first time this year. Look for the giant 'Lobster Caviar Corn Dog' sign at the Under-study booth in general admission and VIP areas.
Rolled tacos, Chispa ($23, VIP only)
These adorable rolled tacos from Napa tequila bar Chispa are essentially taquitos, but they taste a thousand times better than the frozen ones of your childhood. Served in a cup and dipped in a tasty concoction of jalapeño crema, salsa, pickled cabbage and cotija cheese, these crunchy snacks have a slight kick. And they're perfect for sharing as each order comes with five.
Wagyu hot dog, Charlie's ($23)
Making its triumphant return, Charlie's Wagyu hotdog served in a pretzel bun and topped with ketchup, mustard and a green tomato relish, is one of the tastiest dishes at the festival. But to enjoy it in true Napa style, you'll want to add caviar for the extra $15. The Napa Valley hot spot's famous caramelized onion dip with caviar and salt and vinegar chips ($20) is also back and you won't want to miss the Chucko Taco ($12), a mini and upgraded play on the discontinued Choco Taco ice cream treat.
Honorable mention: Anchovy sundae, Lao Table ($15)
This dessert from San Francisco Laotian spot Lao Table should win the award for 'Weirdest dish at BottleRock,' but the fried anchovies topping also qualifies it for the fancy category. Beyond the anchovies, there's a lot going on in this dish, including a brioche roll, rice, coconut ice cream and a brown sugar caramel sauce, which gives the sundae a rich, butter-and-caramel popcorn flavor.

Royal Ascot backs next generation of hat-makers from King's charity
The King's charity has announced a millinery partnership with Royal Ascot to nurture the next generation of hat-makers. Ahead of this month's world-famous meet, known as much for its colourful and creative displays of headwear as the horseracing, Ascot has introduced a £10,000 annual bursary to support a King's Foundation and Chanel graduating millinery student. Daniel McAuliffe, education director at The King's Foundation said: 'The royal family are incredible ambassadors for the craft of millinery and as the King's charity we are proud to be supporting the future of this skill at the most iconic hat-wearing event of the year.' The Foundation's students will also be showcasing their hats at this year's Royal Ascot, which runs from June 17-21, with a special display for racegoers in the Queen Anne Enclosure on the Berkshire course. The Chanel and The King's Foundation Metiers d'Art Millinery Fellowship in Partnership with le19M, Chanel's creative hub for artisans in Paris, was launched in 2024 with a cohort of six students. The intensive programme aims to develop a network of young specialist milliners in the UK, with the support of Parisian hat-maker Maison Michel at le19M. It forms part of The King's Foundation's wider work, inspired by Charles's passion for protecting traditional heritage skills at risk of being lost. Future students joining the millinery course will also be tasked with designing a Royal Ascot-inspired hat, with one selected to feature in the Royal Ascot Millinery Collective from 2026 onwards as its 11th design. The collective, which is celebrating its 10th anniversary, is an annual presentation of 10 bespoke designs created exclusively for Royal Ascot under the creative direction of British fashion designer Daniel Fletcher. Mr McAuliffe added: 'This is such a fantastic opportunity for our talented millinery students as they begin to build their businesses. 'We are delighted to be working with Ascot and our long-term partners Chanel and le19M to recognise the importance of the British tradition of millinery.' Felicity Barnard, Ascot Racecourse's chief executive, said: 'Exquisite hats and millinery masterpieces are woven into the very fabric of Royal Ascot's heritage and we are committed to preserving and celebrating this tradition for generations to come.'

A stretchy, hard-to-find ice cream arrives in the Bay Area
In the Bay Area, we are blessed with ice cream. Soft serve; ice cream made with Japanese dairy; maximalist scoops studded with chocolate-dipped potato chips; floats with fermented fruit sodas; anchovy sundaes; pints created by a pastry chef who studied at a gelato university in Italy. We have incredible Indian, Turkish, Mexican and Persian ice cream. Yet the region has long lacked booza, an Arab ice cream known for its distinctly stretchy texture. No longer: Roast & Toast, a new cafe in Berkeley, has become one of the rare local sources for the treat. Roast & Toast opened at 1746 Shattuck Ave. in January, with emerald-green walls and Arabic music playing over the speakers, but only recently started selling fresh-made booza. Owner Fadi Alhour, a native of Palestine, noticed booza trending on TikTok in the Middle East, thanks in part to a viral song in which an employee from a Dubai booza shop rhythmically chants the treat's main ingredients while workers use giant mallets to pound the frozen treat into creamy, stretchy existence. 'It's trending,' he said. 'So many people are asking for it.' Unless you're looking for it, you might miss the booza in Roast & Toast's glass scoop case, tucked among tubs of salted caramel and matcha gelato. It's dense and chewy — spoonfuls of booza stretch elastically like a seductive cheese pull. Roast & Toast tops it with chopped pistachio and kataifi, shreds of sweet phyllo dough. Booza, sometimes referred to as the world's first ice cream, dates back to the 15th century. It was popularized by Bakdash, a famed shop in Syria that opened in 1885. Booza is typically made with milk, cream, sugar, salep (orchid root tubers) and mastic, a natural tree resin also used to make gum. While most ice cream is churned, booza is traditionally pounded by hand with a large pestle. Alhour, though, believes the pounding is 'just for show' (and indeed, it's part of the social media attraction). He argues the mastic and salep are what sets booza's texture apart. He's been tinkering with the recipe for months, first on a home ice cream machine, and then a fancy gelato cart displayed prominently inside the cafe. He grinds the mastic by hand in a mortar and pestle — he learned an electric grinder causes it to clump and stick together — and mixes it with pure, powdered salep sourced from Turkey. A little goes a long way: He mixes about a teaspoon of each with milk, cream, sugar and rose water for the base mixture. After 10 minutes in the gelato machine, the booza transforms from loose liquid to bulbous, marshmallow-like density. It is so thick that it's broken the machine multiple times. Roast & Toast serves an original booza flavor and another with cardamom and rose water. Alhour writes down flavor ideas when they come to him; future experiments may include dark chocolate, matcha or brownies. He had never made ice cream before this, nor run a food business. He previously operated a mechanic shop and a shipping business, where he would often make espresso for friends. The coffee interest begat a cafe, then one that served sandwiches, then ice cream. Before Roast & Toast, booza has been underrepresented but not totally absent in the Bay Area. Some Middle Eastern grocery stores in the region sell pints of booza from a Texas company. Similarly chewy Marash-style ice cream is on the menu at San Francisco Mediterranean restaurant Dalida; fresh booza can also be found at Levant Dessert, a Middle Eastern bakery in Menlo Park, Levant owner Maya Fezzani, grew up in Lebanon and Syria and has memories of eating booza at Bakdash. She's been making it for several years in Menlo Park. Her shop doesn't have the capacity for hand-pounding, so here it's churned, flavored with orange blossom and rolled into a pistachio-covered log. Fezzani has mostly kept things classic flavor-wise, though she is working on an apricot version. She also seized on the viral Dubai chocolate trend to make a sundae layered with booza, chocolate, kataifi, pistachio and tahini. Whether booza will catch on in the U.S. remains to be seen. 'It's up to the market,' Alhour said. But, like in the Middle East, a video on Roast & Toast's Instagram has already been drawing in customers.
