How to Make the Best-Ever Roast Leg of Lamb, According to Jamie Oliver
I've never made lamb before, so I wasn't sure what to expect when I started searching for recipes to use for Easter dinner. I wanted something flavorful but not overly complicated, and I came across a lamb recipe from Chef Jamie Oliver that took me by surprise. To make this leg of lamb, you'll need celery, carrots and onions, bay leaves, leg of lamb, olive oil, fresh rosemary, garlic and a splash of red wine vinegar. While these are optional, Jamie Oliver says that the secret ingredient to a great leg of lamb are anchovy fillets, which add an unexpected depth of umami to the dish.
Start by preheating the oven to 425° and then begin prepping your veggies. Roughly chop the celery, carrots and onions an scatter them in the bottom of a roasting pan along with the bay leaves. These will infuse the lamb with flavor and serve as the perfect foundation for an incredible homemade gravy.
Drizzle the leg of lamb generously with olive oil. Season well with salt and pepper, making sure to coat all sides of the meat. Take a few sprigs of rosemary and peel some garlic cloves, then finely chop them together. If you choose to use them, this is when you'll mash in the anchovies. They'll dissolve into the meat and provide a savory richness without tasting overly fishy.
Using a small knife, make incisions all over the lamb and stuff each cut with the rosemary, garlic and anchovy mixture. This step ensures that every bite is infused with flavor.
And here's where Oliver does things a bit differently. He has you place the leg of lamb directly on the oven rack and place the pan of veggies directly below it. He says that doing this creates "360-degree roasting" while the fat from the lamb drips onto the veggies in the pan.
Close the oven door and immediately turn the temperature down to 350°. The hot start will help crisp up the skin and the more moderate temperature will help create tender, juicy meat. The best of both worlds!
The cooking time depends on how you like your lamb cooked, ranging from 1 hour and 10 minutes for medium to 2 hours and 15 minutes for well-done meat. No matter how the lamb is cooked, you need to let it rest for 30 minutes once you take it out of the oven.

"Also no where ever does prawn cocktail crisps! I love Australia and there is nowhere I'd rather be but it's always nice to have a taste from home." She adds that she's excited to introduce prawn cocktail crisps to her Aussie friends, and also keen to get some Galaxy chocolate bars, but she was least excited by the tea cakes, which she says "were the worst thing" there. As an Irish person, she also tells us, "I wish there was more Irish products as most were British. I would have loved Meanies crisps, Spice Bag seasoning, Chilli Heatwave Doritos!" Thankfully, for anyone wondering, the food all tastes the same as Rachel remembered from back home in Ireland. A scan of By Malene Birger's resort lookbook suggests that all is business as usual at the label, but that's not quite so; as brand director Barbara Gullstein said on a call, we should think of resort 2026 as a 'transitional season.' This is because Emilie Martinsen-Kønigsfeldt, the newly appointed creative director who also owns the brand, is settling in. In the lead up to this transition, Martinsen-Kønigsfeldt spent about a year working side-by-side with Maja Dixdotter, the previous creative director, who had created a strong but minimal bohemian aesthetic for BMB. Martinsen-Kønigsfeldt's use of double-face fabrics, fringe, and hide, along with her palette, continue in this vein. What's changed, explained Gullstein, is the framing of the work. The idea is that the nomad has returned from travels away. 'There has been a need of adapting the collection and making it a bit more wearable for that global woman who works and lives a real life,' Gullstein said, and it's 'these practical elements that play into how Emilie has approached this collection.' The way the lookbook is photographed and styled—still images in a white room with a lone piece of furniture—is suggestive of a sense of interiority and perhaps of stocktaking. If a burgundy leather suit is pure business, a dreamy pale pink cable-knit sweater and skirt set is most definitely hyggelig, i.e. cozy.

As a longtime disciple in the House of Harry, I know the 31-year-old somehow manages to be everywhere and nowhere all at the same time. One day Harry Styles is running a marathon in Tokyo, the next he's dining al fresco in Rome. But despite his globe-trotting ways, one thing will never change: his love affair with London. Of course, he's not a native Londoner (he was born in Worcestershire, and grew up in Cheshire), but having lived in the capital on and off since his One Direction breakout 15 years ago, it's safe to say he's pretty well acquainted. Burberry, House of Holland, Fashion East—in 2014, there was nary a front row on which he did not feature. After a brief (10 year!) hiatus, Styles recently returned to the FROW for a very special occasion: S.S. Daley's spring 2025 show, the brand's first foray into womenswear.
