As winter approaches, few pleasures rival the comfort of dipping a biscuit into a steaming cup of tea.
For tea enthusiasts, this simple ritual is the ultimate afternoon pick-me-up. However, according to the experts, many of us might not be doing it correctly.
Suzy Garraghan, Senior Tea Buyer and Leading Tea Expert at Yorkshire Tea, has shared her insider tips for the perfect tea dunk – from the ideal angle and temperature to the best biscuit textures for the job.
Yes, there is an art to it!
As Judi Dench's character memorably explains in The Best Exotic Marigold Hotel: 'It means lowering the biscuit into the tea, letting it soak in there, and trying to calculate the exact moment before the biscuit dissolves, when you whip it up into your mouth and enjoy the blissful union of biscuits and tea combined'.
So, let's get into it.
1. It's all about the angle
According to Ms Garraghan, the trick to the perfect dunk starts even before the tea is poured.
'Whether you opt for a teacup or a mug, make sure it's wide-brimmed,' she advises.
'This will allow you to dunk your biscuit at the right angle.'
If you're a 'down-dunker', you might be surprised to hear you've been dunking your biscuit wrong all this time.
Apparently, you want to dunk at an almost horizontal angle, so only one side of the biscuit gets soaked.
This way, the biscuit will remain stronger, allowing for repetitive dunks without any soggy disasters.
2. Choose your tea wisely
Understandably, when you dunk a biscuit, it absorbs the quality and strength of the tea's flavour, so it's crucial to choose wisely!
'It ultimately comes down to personal preference, but for me, proper dunking teas are top class, peak season Assam teas like Yorkshire Gold, which are full-bodied and rich in 'gutty' strength and malty notes,' Ms Garraghan says.
3. Check the temperature
Monitoring the temperature of your tea is a game-changer for perfecting your dunking technique.
'The warmth of the tea dissolves the biscuit's sugar, fat and starch, so the biscuit will eventually collapse under its own weight,' she explains.
'Temperature, therefore, is often responsible for our drowned dunking pursuits.'
The hotter the tea, the quicker the biscuit will dissolve, so Ms Garraghan suggests 85 degrees as the optimum temperature for your brew, but the perfect temperature will depend on your biscuit of choice (more on that soon).
4. Watch the clock
The optimum dunking time shares a similar predicament to the ideal dunking temperature – it depends heavily on the biscuit variety.
'No matter which partners you choose, never dunk for less than two seconds or more than five seconds – and don't forget to monitor for signs of biscuit collapse!' Ms Garraghan urges.
'For a Gingernut, I recommend around three to five seconds. For a Tim Tam or a Digestive, no more than two to three seconds as these varieties are less solid and will dissolve and make a mess faster.'
5. Pick your biscuit
Now the question you've all been waiting for … which biscuits are the best for dunking?
While it ultimately comes down to personal preference, the tea expert does have some favourites.
'Gingernuts are dry and hard on their own, but with tea, they become beautifully chewy,' Ms Garraghan explains. 'The flavour means they're not universally liked, but they are excellent value for the keen dunker due to being solid enough to be dipped, bitten and dipped again'.
Her runners-up include Digestives, for their semi-sweet flavour and crumbly texture, and Tim Tams, which create the delicious mix of tea, chocolate and biscuit all at once.

"I want to live every note of the music." The world is full of exciting young female violinists whose stories are plastered all over social media, their album covers similarly driven by the trend to sex-up attractive young women for marketing purposes. Alina Ibragimova has quietly followed her own path. Born in the former USSR in 1985 to two top professional musicians, the gifted Alina studied at the Gnessin School in Moscow but then at the age of 10, had to meet the challenges of moving to the UK when her late father, Rinat Ibragimov was appointed principal bass of the London Symphony Orchestra. Whilst studying at the Yehudi Menuhin School in Surrey, which at the time had little awareness of historical performance practice, she experimented with the music of Bach, developing her own ideas about performing music from the baroque to new commissions, on both modern and period instruments. "Every composer is subject to historical style," she says. Alina went on to study with a number of pedagogues at the Guildhall School of Music and Drama and the Royal College of Music, including baroque specialist Adrian Butterfield, and she also had private studies with Christian Tetzlaff. After winning the LSO scholarship aged 17, she was selected as a BBC New Generation Artist from 2005 for two years, where she met her long-time duo partner, French pianist Cédric Tiberghien. That same year, 2005, she founded her trail-blazing period-instrument ensemble, the Chiaroscuro Quartet, which specialises in music from the classical and early romantic periods played on gut strings with historical bows. Their performances of Mendelssohn, Schubert, Schumann and Beethoven drawing comments like: "A shock to the ears of the best kind," from one UK critic. Speaking of the first movement of Beethoven's Op. 95 Alina responds: "This is music that was designed to shock. But often it's made to sound too perfect." Signed to the Hyperion label in 2007, Alina nailed her adventurous colours to the mast with two early albums devoted to Karl Amadeus Hartmann and Nikolay Roslavets, whose music was suppressed and name expunged by the Soviets. Richard Morrison, writing in The Times said "Alina is destined to be a force in the classical music firmament for decades to come… you feel that you are getting the music straight from the composer's quill." To date her discography ranges from Bach to the new concerto written for her by Huw Watkins, which she premiered at the BBC Proms in 2010. Her 2020 album of Shostakovich violin concertos with Vladimir Jurowski and the Evgeny Svetlanov State Academic Symphony Orchestra of Russia, which followed a tour there, won a Gramophone Award and Diapason d'Or, and was one of The Times Discs of the Year. "I'd like it if promoters would not close their eyes to different repertoire. I hate the notion that many musicians have to play programmes that 'sell better'. There's so much great music out there and it just needs to be given the chance. Once it is, it'll be loved." Alina's many accolades include two Royal Philharmonic Society awards and an MBE in the 2016 New Year Honours List. "There was always music in my family, so I found it strange with friends who didn't play an instrument. I didn't understand what they did with their time every day." Alina was born in Povlevskov, in the then USSR, in 1985 near the city of Ekaterinburg, about 1,000 miles east of Moscow on the edge of the Ural Mountains. "It's a completely different culture with its own language and food, and everything. In fact, the TV in Kazan is in Tatar and the language is not similar to Russian at all — if anything it more resembles Turkish." Music surrounded her from birth. Her late father, Rinat Ibragimov, was the award winning principal bass of the Bolshoi Theatre orchestra of the Bolshoi Ballet and Opera and a member of many other ensembles, and her mother Lyutsia Ibragimova, a leading Soviet violinist. Alina took up the violin when she was four. "I asked my parents for a green violin and then I burst into tears when they gave me one that was brown," recalls Alina. "The sound was revolting but I came back to it six months later." Within a year she was playing as a soloist with the Bolshoi Theatre Orchestra. Alina has warm memories of her early childhood, especially the woods and her grandmother's cooking. "Although we lived in a tiny flat with a lot of people and cats, I never felt I lacked anything." Soon, in addition to learning from her mother, Alina was taking lessons at the renowned Gnesin Specialist Music School in Moscow with Valentina Korolkova. The Russian school with its emphasis on discipline, "definitely taught me how to practise," she says. Her mother was a major role model. "She made me listen to a lot of violinists. I remember listening to Menuhin's recording of the Beethoven concerto on a cassette, and Jascha Heifetz, and Vadim Repin. And I guess being a girl, I wanted to be Anne-Sophie Mutter.' When Alina was 10, her father was offered the position of Principal Double Bass with the LSO and after a year's trial he was given a contract and the family moved to London in 1996. Alina wasn't keen to leave her homeland but says she later changed her mind. "Arriving in Britain, everything was very green, it was the middle of summer and I had my own room in the house." "My education was always about not being 'successful' but about doing your best, being honest and achieving something in yourself that's good." In the UK her mother became a professor at both the Yehudi Menuhin School and the Royal College of Music in London. Alina, too, began her studies at the Menuhin with Natasha Boyarshaya. The hothouse atmosphere there seems to suit her. "It's very intense. You become like a family; you get to know everyone so well." As a teenager, Alina worked incredibly hard to find her own pathway forward as a violinist. "It's a tough world for someone starting out so young. Many people want to pull you in certain directions and it's hard to be strong enough to know what you want straight away. "My education was always about not being 'successful' but about doing your best, being honest and achieving something in yourself that's good." A contemporary of Nicola Benedetti, they played Bach's Concerto for Two Violins and Orchestra in D minor under Menuhin as conductor, and played a part of the same work at his funeral three weeks later. At the Royal College of Music Alina began entering competitions, commenting "it was very good for me at the time, but I just didn't always like the atmosphere." Her most potent success was winning the London Symphony Orchestra Music Scholarship when she was 17. "It's not really like a normal competition because they also got you to play chamber music with the other candidates. You also get coaching sessions, there are master classes and you also get to lead the orchestra. So it's a very balanced and well-rounded thing." Then, following a searing performance of a Mozart concerto leading the Kremerata Baltica she was selected as a BBC Radio 3 New Generation Artist from 2005-7. A little like New York's Young Concert Artists scheme, it gave her management advice, and crucially many performance opportunities, including concerts with the five BBC Orchestras. "I don't remember learning so much new stuff in such a short period of time before. We did some recitals and chamber music [too] with the other members of the scheme." Violinist Alina Ibragimova. ( Eva Vermandel. ) "It's the feeling that we can totally trust each other no matter what." In 2005, when they were both part of the BBC New Generations Artists Scheme, Alina met her long-standing recital partner — French pianist Cédric Tiberghien. "We have a mysterious alchemy," he says. "It's something natural, something that imposed itself — there are many aspects of the music that we don't talk about — because we feel them immediately. It's the feeling that we can totally trust each other no matter what." "As far as style is concerned, we each have our own history and background. Alina comes from the baroque repertoire, which has influenced me in my personal playing and contributed to my artistic development. There are balances that are found naturally and implicitly. Our main discussions are whether we should play certain works on period instruments." The duo has been applauded all over the world and is a regular guest of the Wigmore Hall in London, where it presented an acclaimed complete cycle of the Beethoven violin sonatas in the 2009-10 season. This was followed in 2015-16 by a series of five concerts as part of the Hall's "The Mozart Odyssey" series which saw them perform his complete sonatas for violin and piano, which they've gone on to record. "When I play, I don't feel it's my performance or my music. It's a communal thing." Her award-winning Chiaroscuro Quartet owes its origins to Mozart too. At the Royal College of Music in 2005, she brought together a group of like-minded fellow students to celebrate the then up-coming 250th anniversary of the composer's birth in 2006. Under the guiding hand of Sir Roger Norrington, Alina prepared one of Mozart's quartets and after the project, Alina decided as it had gone so well, they should continue. It's an ensemble that continues to defy expectations. They utilise some historical practices like a sparing use of vibrato, but not to the detriment of a modern playing approach. The Chiaroscuro are in huge demand in concert halls and at festivals all over the world. They've just played in the Concertgebouw in Amsterdam, so hopefully they will tour in Australia soon, and audiences I know can't wait for Alina to return. She last visited in 2018 as the compelling guest director of the Australian Chamber Orchestra. I'll never forget their performance of Schubert's Death and the Maiden . "When I play, I don't feel it's my performance or my music. It's a communal thing. It's as if I am the audience, and they are me. We're all in it together. It's not about me or the audience, it's about the music."

But according to veteran NRL pundit Andrew Voss, the halfback's next move will almost certainly be for love, following Matildas superstar Mary Fowler to the UK where she plays for powerhouse football club Manchester City. Cleary is contracted to the Panthers until the end of 2027 but Voss believes the time is now for the star halfback to capitalise on the pull of his surname and make the move to the northern hemisphere. 'I'll get a little romantic,' Voss said to his co-host on SEN 1170 Breakfast on Tuesday. 'There is no doubt the young man is in love and his love is on the other side of the world and his love is never coming back to Australia for her sporting career because she can't. 'Nathan has won four premierships, Origin, he's a Test player, World Cup; he has achieved all the things you want to do in a career and I'm saying love might win out here. 'I'm not saying playing union but I can see Cleary playing in the northern hemisphere. 'It's obvious they're in love and how long can that relationship be on the other side of the world when there is a solution?' However, there are two major barriers stopping that move. Firstly Cleary still has two years to run on his Panthers deal after the current season. But much like Penrith's decision to let James Fisher-Harris break his contract for family reasons at the end of last year, it would be a possibility the club would grant his wish to leave especially if it was to follow his heart abroad instead of playing for a rival NRL team or code hopping. The second problem is trickier, and that is the issue that Super League players don't earn anywhere near the money of NRL stars. But as rumours circulate that NRL Europe could soon be a reality, Voss believes Cleary could be playing in England come next year. 'If NRL Europe comes into being and I think it will be announced later in the year with grandiose plans,' he said. 'Teams in London and France, they will pick how they want the comp to look. 'I don't know where the money comes from but I think a London marquee signing of Cleary at some stage makes sense. 'Nathan Cleary ticks a massive box, that gives them the headline they want, they become an A-list couple, I'm talking massive picture here.' Voss' comments come after earlier this year former NRL hardman Mark Carroll urged the halfback to follow his heart. 'The great thing about Cleary is he can have his cake and eat it, too. COMMENT All those centuries ago, Will 'I Am' Shakespeare put scratchy quill to parchment and gave us that habitually handy line, 'a rose by another other name' blah, blah, blah. According to him, a bloom, no matter what you it, smells just as nice, an adage that Prince Harry, The Duke of Sussex appears to believe in too after it was claimed on Sunday that he considered changing his surname to Spencer. The Daily Mail has reported that the duke 'actively explored ways to assume' Princess Diana's surname and went so far as to seek advice from her brother Earl Spencer however 'was told that the legal hurdles were insurmountable.' 'They had a very amicable conversation and [Earl] Spencer advised him against taking such a step,' a friend of Harry's told the Mail. Per the astonishing report, the duo had the tete-a-tete when the duke was back in the UK. Harry was previously reported to have stayed with his uncle at the Spencers ancestral seat of Althorp in August last year when he returned to Britain for his uncle Lord Robert Fellowes' funeral. Let's get the obvious out of the road - if Harry had gone ahead with this it would have been a truly stunning slap in the face for his father King Charles. (It's remarkable really - somehow, even after Oprah and Netflix and Spare, the duke is still coming up with new ways to even further publicly spurn the royal family.) Still, even the very fact that Harry entertained the idea of dumping the surname available to members of the royal family - Mountbatten-Windsor - is genuinely shocking stuff. At this rate he'll be dying his signature ginger locks blonde to distance himself further from his former life. Of course, things have hardly been all warm and fuzzy between Harry and the King for years, with things so bad that His Majesty is unable to find even a spare ten minute window in his diary to make polite chit chat about the weather with his son. In fact the entente is so far from cordiale that Harry's calls to Charles, 'go unanswered,' a friend of his somehow managed to let slip to People last year 'He gets unavailable right now'. Added to which there is also still the reportedly unhealed sore that was Harry's decision to tell all in his 2023 memoir, in which he not only had go's at his father and Prince William but included digs about Queen Camilla and Kate, The Princess of Wales too. Forgiveness, from the Prince of Wales, per reports, could not be further from the cards. However despite this complicated backstory, this name Spencer claim is astonishing. Frosty relations and Whatsapp messages left unread are one thing but going to the legal extreme of changing your name is another. If Harry had gone through with this it would have translated to him amputating himself, irrevocably, from the royal family. (The necessary background bit: Mountbatten-Windsor is the name on the birth certificates of Prince Archie and Princess Lilibet, however there is also a convention to use one's father's title too. That's why William and Harry were known at school as 'Wales'. In February 2024 it was reported that Harry, his wife Meghan, The Duchess of Sussex and their kids used 'Sussex'. In an episode of the duchess' With Love Meghan she awkwardly corrected 'friend' Mindy Kaling after the comedian called her 'Meghan Markle'. Note, there will be a quiz on this at the end.) What's missing from the Mail's bombshell Spencer story is the question of what this surname switcheroo would or could have meant for their royal titles. (At least they would not have to have any of their napkins or bespoke pickleball racquets re-monogrammed.) If the duke went so far as to stump up the £50.32 required to change his name via UK deed poll, how could they have straight-faced kept calling themselves the Duke and Duchess of Sussex? In this scenario the question is, would they have simply become plain old Harry and Meghan Spencer instead? What is also unexplored in the Mail story are Meghan's feelings about dumping her royal married name. Given that recently the duchess has, twice, reminded the world she is still, technically, an HRH, it's a tough sell to imagine her merrily binning her duchess title to be a bog standard Mrs. You also have to wonder if the Duke of Sussex, a man who has proven to be a bust as a podcaster and TV producer, had considered the commercial implications of his Spencer plan? 'Harry Spencer' might smell as sweet to him - but what about when it comes to his money-making career? Would coaching company BetterUp be just as happy to have 'Harry Spencer' as their Chief Impact Officer, a title and role that four years on remains as nebulous and detail-deficient as ever? In late May, the Daily Mail reported that the duke is set to launch an 'as-yet-undisclosed commercial venture in the next few months'. Would 'Harry Spencer' have the same access to funding and connections and help as Prince Harry, The Duke of Sussex, Earl of Dumbarton and Baron Kilkeel? And would 'Meghan Spencer' but have just as much of a booster in Netflix CEO Ted Sarandos who, another Mail report detailed, calls 'the rock star'? (Sarandos, a well-placed source, told the paper the streaming boss 'is a massive, massive fan of Meghan personally…He is all in.') Ponder, if you will, the existential question - who or what are Harry and Meghan as a brand and an enterprise without their royal identities? As it is, even with 'duke' and 'duchess' still firmly slapped all over the shop, they are about to embark on an uncertain US next chapter. They have moved on from their days of monetising their royal angst, handy since it's positively old, tired hat now. Unfortunately, their attempts to establish themselves in the entertainment industry have amounted to hits, misses and repeated claims they are, at times, about as easy to work for as Genghis Khan in a right mood. Harry's Heart of Invictus and Polo were both lavish productions that did about as well with audiences as a live stream of porridge cooling. He never once managed to get a podcast idea across the line in the two and a half years the couple had a contract with Spotify. Meghan has proven much more successful, turning her hand to investing, making a TV show that valiantly fought to make the case to put flower sprinkles on a frittata, and selling jars of fruit spreads for $21.70 a pop. She also has entered influencer territory having launched a ShopMy account meaning she can monetise her impeccable style. (The woman truly knows her way around a fabulous neutral separate or 17 and a spot of Cartier.) At least Ted Sarandos and whoever might be involved in Harry's mystery commercial venture can rest easy knowing that the Sussexes' name and titles are still firmly in place. However, as they breathe deep sighs of relief, how must this Spencer news make Charles feel? In the last four years he has lost his father, Prince Philip, his mother, the late Queen, and to a large degree one of his sons. And for Harry, he has left behind his homeland, his father, his brother, his military roles, a decent chunk of his raison être and his lifetime membership card to Annabel's. If anyone you know still has a quill, this level of family drama is such that it would be perfect for the stage of The Globe.
