We tried Singapore's best-rated Hakka lei cha
As someone whose comfort food growing up was Hakka leicha (thunder/ground tea rice), I was appalled to find that no one had covered it in the Singapore best-rated series yet.
This time, we'll be trying Thunderbolt Tea by Boon Lay Traditional Hakka Lui Cha in Paya Lebar (4.6 stars, 213 Google reviews). It's a peaceful eatery located under an HDB block.

The excuse I hear the most from people who hate leicha is that it's all vegetables, and hence not good. I beg to differ— this dish comes in variations with shrimp or ikan bilis, and most places also offer Hakka yong tau foo (meat-stuffed tofu) as a side dish.
Regardless, it's insane how so many assume it's bland just because it's full of greens!
Thunderbolt Tea - counter, vege
Thunderbolt Tea claims it serves the best thunder tea rice in Singapore. The sign at its counter proudly states that it has a '2000-year-old culture, 100-year-old recipe, no MSG, high fibre, less salt', and 'less oil'. The vendor also informed me that the original stall, Boon Lay Traditional Hakka Lui Cha in Boon Lay Place, sells the same fare with the same recipe.
What I tried at Thunderbolt Tea
Now, it was time to find out if Thunderbolt Tea was worth travelling an hour to the East for.
Thunderbolt Tea - White Rice Thunder Tea
For S$4.50, the portion of the White Rice Thunder Tea was humongous. There's also a Brown Rice version of the dish for S$5 if you want a healthier option. One 'green flag' that I noticed was that my dish was, well, green and packed with so many vegetables that the rice wasn't visible.

Thunderbolt Tea claims its leicha provides beneficial vitamins and antioxidants with every bite. There was a decent ingredient variety consisting of white cabbage, long beans, firm tofu, leek, sayur manis (sweet leaf) and chye poh. You can help yourself to peanuts from the counter.

When mixed, the vegetables created an addictive medley of textures and flavours. The softness of the tofu and dark green leaves, the sweet crunch of the peanuts and cabbage, the umami from the dried shrimp and the saltiness of the chye poh left me in awe. The beautifully steamed white rice was also fluffy and fragrant even on its own, though it tasted even better combined with the other ingredients.

Halfway through my munching, I realised I had mixed in and eaten the chye poh before I managed to take a photo of it. Sheepishly, I returned to Thunderbolt Tea's counter for a top-up (because why not?). Imagine my shock when the uncle wordlessly dumped a generous heap of preserved radish onto my remaining rice without charging me extra!
It was pleasantly not too salty, with a slight sweetness and a light crunch. Eating this with the rice made it incredibly delectable, and I gobbled up the lot.

While mostly velvety smooth, there were rough bits of ground sesame seeds and peanuts in the vibrant green tea soup. On its own, the broth had a herbal flavour with hints of basil and coriander accompanying the nuttiness. It wasn't as gao as I would've liked, but it was overall a delicious soup, and I made a mental note to ask for less water for my tea paste if I ever were to drop by again.

The tea soup can be eaten in 2 ways: either on its own or poured straight into the rice. My favourite method is having it on the side, but also infusing every other bite with the broth for that perfect balance. This way, the rice remains nicely al dente without getting soggy from soaking up the liquid, yet carry the tea's aromatic flavour.

I'd spotted the Hakka Crispy Pork (S$2) and Yong Tau Foo (S$1.50) on the ingredient trays and couldn't resist ordering some. Their golden-brown hues were irresistible, and they looked mouth-wateringly crispy.

There's nothing like a good stuffed tofu to go with leicha. The savoury flavour of the juicy minced meat and tofu paired well with the refreshing and herbal dish. Meanwhile, the fried crispy pork was incredibly addictive despite being fatty and somewhat greasy; its rich, meaty flavour kept me hooked as I shovelled down one piece after another.
Final Thoughts
Thunderbolt Tea - overview
Who said veggies can't be delicious? Thunderbolt Tea disproved the (already very untrue) claim with a high-quality dish and wonderful flavours. My only bone to pick? The soup, which was slightly too diluted for my liking. In hindsight, though, I could have avoided that by asking for less water with my paste.
The S$4.50 dish was more than enough for a person and definitely worth its price. It also had a satisfactory ratio of vegetables to rice, even before I got the extra chye poh. While the fried pork may have been fatty, the sinfulness was balanced out by the fresh vegetables in the main dish and the herbal soup.
Would I come back for this leicha despite the somewhat inconvenient location? For sure, but I'd give Boon Lay Traditional Hakka Lui Cha in the West a shot, too! Thunderbolt Tea has a delivery service available on its website to make fulfilling those cravings easier, though nothing beats having it served right at the stall.

Old Chong Pang 老忠邦五香虾饼: 42-year-old prawn fritters stall uses grandpa's recipe with homemade liver rolls
As a food reviewer, when you come across something that resonates with your taste buds, it leaves a lasting impression and remains etched in your memory. Old Chong Pang 老忠邦五香虾饼 was one such encounter — a stall I stumbled upon by chance while working on my Chong Pang Market & Food Centre guide. With the impeccable quality of its wu xiang xia bing, I found myself thinking about it constantly over the past 3 weeks. Alas, I journeyed back to Yishun to give the stall a well-deserved solo feature. Let's hope the quality remains consistent, though. The signboard may have the words 'Established since 1986', but the business actually has an even longer history, running for over 42 years! Owner, 40-year-old Zee took over the business from his dad who operated it at the now-defunct Old Chong Pang Market that got demolished in the 1980s. The recipes originated from Zee's grandfather. The stall has a selection of over 16 items, featuring a mix of house-made components and store-bought ingredients. Zee shared that due to rising raw materials cost and labour-intensive processes, they've had to source a few of their offerings from external suppliers. 'We have been making our ingredients by hand all along, but due to the current situation, we have to make adjustments,' he added. Upon ordering, the ingredients are fried on the spot. I chose a total of 9 ingredients, with 2 plates of bee hoon, which cost me S$21.80. In this day and age, is this considered expensive? Do let me know in the comments. Let's first talk about an ingredient that not every prawn fritter stall offers — the Liver Roll (S$1.30). The only other time I've ever tried this was at my all-time favourite stall, China Street Fritters. Bold statement coming up: the version here, hands down, beats theirs flat. The outer layer of the beancurd skin is extremely thin, perfectly fried, and crisp. It encased a flavourful, iron-rich liver filling that isn't dry, and possesses a multi-dimensional taste that's well balanced and tasty. The Egg Chestnut Pancake (S$1.30) was fried to a rich golden brown. While some may perceive it as hard and dry, it was neither. I slowed my bite with purpose, and was rewarded with a silky-smooth, eggy masterpiece layered with delicate nuances of water chestnut. The pale-yellow, spherical Prawn Cracker (S$1.70) intrigued the 3 of us. How could something be so crispy yet not oily? Though there wasn't any visible prawn on the cracker, each mouthful delivered a satisfying hit of umami. Hock Lian Huat Prawn Cracker: 24-hour stall serving economical bee hoon & wu xiang xia bing at CCK Now, let's talk about the pink Pork Sausage (S$6 for 2 pieces), AKA guan chang, an essential component that gives this dish its identity (in my humble opinion). While I've had better versions elsewhere, we felt this one was still slightly above average and decently tender. Dunking it into the sour chilli gave it a zesty kick, with a slow-building spice that creeps in shortly after. I also helped myself to a mysterious pink sauce that has captivated me since childhood. It's actually made from boiling water with pandan leaves, sugar, a touch of pink colouring and thickened with cornstarch (I finally Googled it!). The sauce was faintly sweet, but it wasn't as thick as I'd liked it to be. The Bean Curd (S$1.20) here is light and fluffy, disintegrating with the slightest pressure from your teeth. I also took a skewer of Balls (S$2.50) which came in a trio. They were sliced in half, deep-fried, and still managed to taste very good. The Potato (S$1.30) was, admittedly, a random impulse pick. Typically found in Indian rojak, it felt both interesting and oddly out of place on this plate. That being said, the 'outcast' tasted exactly as it should — comforting and familiar. The homemade Yam Roll (S$1.30) with slivers of shallots on its surface tasted a tad sweet, which also led us to initially believe that sweet potato was in the mix. Though the taste was alright, I couldn't help but feel that it didn't gel well with the other elements. The Spring Roll (S$1.30) tasted like any other generic popiah you find at an economic bee hoon stall — nothing to shout about. The Meatball (S$1.30) was also one of the better choices that I'd selected, with an unctuous meat filling and a crispy outer skin that hit the sweet spot. The (S$1.20) was just a simple, humble plate of stir-fried rice vermicelli with some beansprouts. Though the fine strands of bee hoon lacked any smoky wok hei — understandable, since they were pre-cooked and left sitting in a tub — they didn't clump together and still tasted pleasantly decent. The chilli really lifted it, giving it more punch and personality. Solid wu xiang xia bing stalls in Singapore are few and far between — you could count them on two hands. From my knowledge, there are probably just 2 or 3 other establishments in Singapore that hit the mark. I'm glad that I now have Old Chong Pang 老忠邦五香虾饼 to add to my recommendation list. If you do patronise, the highlights here are definitely the Liver Roll, Egg Chestnut Pancake, Prawn Cracker and Sotong Balls. In fact, while I was doing my feature here, 2 or 3 people came up to our table to ask where we got this lovely dish. That says a lot! Deliciously old-school bak chor mee & loaded portions at new Ang Mo Kio stall
Heads up, bak chor mee aficionados and Ang Mo Kio residents — or better yet, if you're both. We've got just the spot for you to check out, and it's Heng Ji Traditional Teochew Noodles. So, what's the fuss? Well, despite only opening recently, this humble spot has already drawn a fair bit of buzz across local foodie Facebook groups — earning praise for its nostalgic flavours and even prompting return visits from several reviewers. Intrigued, I headed down to the Kopi Wu coffeeshop at Block 722 Ang Mo Kio Avenue 8 to check out this formidable new kid on the block. Seeing was believing; I espied a good majority of diners happily tucking into bowls of bak chor mee. I'd been craving a good bowl of those porky noodles for weeks, so if anything could get me more excited than I already was, that was it. Mission accomplished. Heng Ji Traditional Teochew Noodles's menu is pretty straightforward, with 4 main noodle options: Pork Ball Minced Pork Noodle (S$4.50/S$5.50), Fishball Minced Pork Noodle (S$4.50/S$5.50), Fishball Noodle (S$4.50/S$5.50) and Laksa (S$4). There's also Fishball Soup (S$4.50) and Pork Ball Soup (S$4.50) for those after something lighter. Of course, I went for the S$5.50 portion of the signature Pork Ball Minced Pork Noodle, with the ever-reliable mee pok as my carb of choice. The mouthwatering bowl came loaded with a colourful medley of minced pork, pork slices, liver, meatballs, braised mushrooms and a sprinkling of crispy fried pork lard. This feels like a good juncture to mention that each bowl is cooked to order — so be prepared to wait, and for perfectly good reason. Spoiler alert: my cravings were more than satisfied. The noodles were faultless — cooked to a perfect al dente and thoroughly coated in a piquant, punchy sauce. The ingredients were impressive, too, each one complementing the springy noodles beautifully. The minced meat and tender pork slices were my favourites of the lot: well-seasoned, flavourful and far from gamey. And while I'm not usually a fan of liver, these weren't powdery in the least and I found myself savouring every piece. I'm not sure my definition of 'old-school' fully matches that of the Facebook folk, but Heng Ji Traditional Teochew Noodles's rendition of bak chor mee certainly felt like the epitome of fuss-free goodness.
