
9 tips for a delicious BBQ — and the mistake where 'so many go wrong'
You know the British summer has finally arrived when you can smell BBQ in the air.
We may end up with raw sausages and burnt-to-a-crisp steaks, but that doesn't stop us getting the Barbie on the minute the sun comes out.
With temperatures peaking this week, Brits have just a few more days of sun before cooler weather returns — so, there's no time like the present to get grilling.
However, we all know that cooking the perfect BBQ meal is a fine art, and no one wants to disappoint the army of hungry guests desperately waiting for that first chicken drumstick to be ready.

A poor workman always blame his tools, so make sure you have a great pair of tongs and a spatula to cook with.
Mike also recommends finding good brushes and spray bottles to apply marinades while cooking.
'You don't need a BBQ fork though – they can do more harm than good when grilling as they create holes in your food and allow the juices to pour out,' he says.
Getting the timing right before you start cooking is more important than you think.
'Make sure you always take your meat out of the fridge at least half an hour in advance of cooking it,' Mike explains.
'This will ensure it cooks all the way through at the desired temperature without having to overcook it.
'This is important when cooking meat or fish which needs to be slightly under in the middle.'
This is a big one that can make or break your BBQ, as Mike says 'moisture is where so many people go wrong on the BBQ', and that marinades are important here.
'Marinades don't just add flavour, they help to keep food moist on the BBQ too.
'You need to keep basting your meat and veggies in butter, oil or marinades to keep them moist.'
Don't let the veg be an after thought – give them some pizzazz too.
'A dry rub or marinade will turbo charge the flavour of the food you're cooking,' notes Mike. 'They're not just for meats, but veggies too.
'Cooking over flames is a great way to extract flavour from vegetables. I am a firm believer in going against the trend of cutting your vegetables small for the grill, I think it's much better to leave them bigger or even whole and cook them for longer on a gentler heat to really extract their flavour.'
Struggling to get the BBQ going? Mike share 'a great little hack'.
He says: 'When out on the road or camping is to simply scrunch up a piece of paper towel, cover in vegetable oil and then light in the middle of your coals.
'It burns hotter and longer this way and will kick start your coals.'
Then, wait for the perfect flame to actually start cooking your meat.
'If cooking with coal or wood, once lit, don't rush to cook on them – give it time to die down,' Mike says.
'You need to wait for them to fully ignite and turn white. That is the best time to start cook, and when you should add your food.'
When cooking steak, remember that each cut needs to be cooked differently.
Mike says: 'Generally the rule to work with is the higher the fat content the higher the initial heat you cook it on.
'You want that beautiful caramelisation on the first side. Whereas if you have a leaner cut like fillet or rump, you want a gentler heat to cook over as you don't have much fat to be rendering.'
Mike advises using wood chips with certain types of meat for the best flavour.
He suggests: 'Try using wood chips, especially when cooking fish – smoke and fish go hand in hand. Adding woodchips to your coals is a great way of getting extra smoke on to your food, enhancing the flavour considerably.
'If you soak them first in water, it will slow down how quickly they burn and generate more smoke.
'Choose what type of woodchips you will use depending on what you cook; apple wood is mild and fruity and goes well with pork, cedar is strong and is best for smoking fatty foods for example.'
No one likes a soggy pasta salad, but Mike suggests an unusual ingredient.
'Try adding some BBQ fruits to your salads for an interesting twist,' says Mike.
'Always go for what's in season for the best flavour and price but some of my favourites include peaches, watermelon, mango, apple and pear.
'To cook, don't add any fat, just let the fruit release its natural sugars which will caramelise it. Then just add to a nice peppery salad, using watercress or rocket, perhaps a little goat's cheese or burrata and your guests will be blown away.'
For the bit people enjoy least, Mike has some hacks to make it easier. More Trending
'To clean your grill, spray with vinegar, leave for about 5 minutes and then scrub clean with some scrunched-up foil.
'Brewed coffee is also a great way to tackle grease on your BBQ, given its level of acidity. Just pour into a large basin and soak your grates for around an hour.

'Rinse with warm water, and they will be good as new. This also works for utensils.'

'In 40 seconds, everything was gone': The Swiss village destroyed by climate change
Sometimes climate change is hard to visualise, but not the disaster that struck the Swiss alpine village of Blatten on May 28. In the middle of the afternoon a glacier that had stood above the village for centuries broke free from the mountainside and crashed down onto Blatten. The Swiss authorities had seen in coming and evacuated the inhabitants 10 days earlier – only one person is missing, which is both miraculous and a tribute to Swiss engineering. But the 300 people who lived there lost everything. Daniel Ritler had lived all his life in Blatten. The restaurant and delicatessen he ran with his wife Karin now lie under millions of tons of rock and mud, themselves invisible under millions of gallons of water. 'The whole thing happened within 40 seconds. In 40 seconds, everything was gone. Houses that were built in 15 and 16 centuries were buried, all buried', he told me. The sheep Daniel kept in the pristine alpine pastures above the village also survived, but whether they or the Ritlers will even be able to return is uncertain, perhaps even unlikely. First the geology of the Lotschental valley must stabilise, and that itself could take many years. This disaster was not caused solely by climate change – erosion and minor earthquakes in these mountains also played their part – but there's little doubt that without the significant warming the Alps have seen in the last few decades it wouldn't have happened. On current trends, glaciologists confidently predict that by the end of his century, 2100, there will be no more glaciers in Switzerland. This doesn't just mean a lot of melt-water: the ice in a glacier binds together huge quantities of mud and scree and rock, so when the ice melts much more than water comes down a mountainside. Professor Stuart Lane, a British glaciologist who lives in these mountains, and teaches at the University of Lausanne, says that as good as Swiss engineering may be, you cannot engineer away a problem as big as the one that hit Blatten. Indeed, difficult decisions may have to be taken about moving whole towns or villages out of the way of collapsing valley walls. 'The only way you can get a glacier back is by increasing snow in winter and reducing ice melt in summer', he said. 'So only with a reversion to the climate of 50-60 years ago will you see glaciers come back again'. And you don't have to be a top scientist to know how unlikely that is.

Desperate restoration efforts are underway on the island with authorities scrambling to fix the issue. Authorities have instructed residents to stay calm as they work to restore power to the island. It comes after a series of blackouts have hit the island in recent months. Santa Cruze de Palma, Los Llanos de Aridane and El Paso have all experienced recent power outages. The latest of these, on May 8, left the power out for hours and affected several of the eight municipalities in La Palma. Today's outage has been the worst of the recent blackouts with power out across the whole island and tens of thousands of users affected. The Minister of Territorial Policy and Democratic Memory, Ángel Víctor Torres said: "I send all my support to the people of La Palma." He went on to promise that power would be restored as soon as possible.

Exactly where thunderstorms will strike UK as Met Office issues rainfall warning
Parts of the UK could see half a month's rainfall in just this week when thunderstorms sweep in bringing torrential showers while temperatures could become "uncomfortably" hot Brits are set for stormy weather amid high temperatures and weather maps have revealed the areas set to be worst affected by torrential rain. After a couple of weeks of milder weather due to low pressure systems moving in from the Atlantic, the UK is seeing the mercury rise again and it could reach 25C in central and northwest England on Wednesday. But forecasters are also warning of thunderstorms bringing with them around half a typical month's rainfall this week. Much of the UK can expect sunshine and blue skies on Wednesday afternoon and it will be into the evening when the storms hit with up to 40mm of rain battering south Wales and southwest England. And the showers are set to linger into Thursday. BBC weather forecaster Elizabeth Rizzini said: 'There will be a lot of blue skies and sunshine, more patchy cloud developing through the afternoon. Watch out towards the southwest by the end of the day, there could be thunderstorms breaking out but we are drawing in a southeasterly wind, that pushes the warmer air our way, temperatures in the mid-20Cs for many of us. 'Wednesday night into Thursday watch out for some thunderstorms in the west, and those thunderstorms will gradually track their way further northwards and eastwards throughout the day on Thursday.' While Met Office deputy chief meteorologist, Mike Silverstone, has also warned of thundery showers. "After largely benign weather early in the week, some intense, thundery showers will move in on Wednesday evening. These thunderstorms are being triggered by some warm, humid air that is moving into the UK from the south," he said. "The intense rainfall could see 20-40mm accumulating over just a few hours, which could cause some disruption. While there are no severe weather warnings issued at the moment, it is possible thunderstorm warnings may be issued this week." Weather maps issued by forecasters at Metdesk show these cities, especially Cardiff, are likely to see the worst of the weather this week. Cardiff has an average of 74mm of rain in a typical June, Bristol sees around 65mm and Plymouth has 64mm. But with between 35mm and 40mm of rain expected across south Wales, Cardiff could see around half of its standard June precipitation already by the end of the week. It is similar case for Bristol, Plymouth, Exeter and even further north for Hereford, which typically sees 48mm of rain across June. Mr Silverstone also highlighted that temperatures with humidity making it possibly uncomfortable. "As temperatures rise this week, it is possible heatwave thresholds could be reached in some parts of the UK, particularly the northwest Midlands, north-west England and northeast Wales, however it is very dependent on cloud cover later this week, so it is not a certainty, " he said. "This warm spell will feel different to the fine weather we experienced in May as the humidity will be much higher, making it feel more uncomfortable. Additionally, while in May the nights were still fairly cool, overnight temperatures this week are forecast to remain fairly warm, which can disrupt people's sleep."
