Umai is a traditional raw seafood dish from Sarawak.
Commonly prepared by the Melanau people living along the coast, it is often made with fish but prawns are just as popular.
It is Sarawak's answer to ceviche, a dish where the seafood is 'cooked' in acid – typically lime juice – and combined with aromatics to create a refreshing, and tangy dish.
This quick-curing preparation requires no heat and relies on the freshness of its ingredients.
However, unsanitary preparation may lead to illness.
The American Dietetic Association has urged pregnant women to avoid ceviche due to the possible health risks from improper preparation.
If raw seafood is an issue for your guests, you can blanch the prawns very briefly before marinating.

Celebrated on June 1 and 2, Gawai marks the end of the harvest season and the beginning of a new farming cycle.
As families prepare a wide spread of dishes to share with guests, umai is often part of the celebration because it is easy to prepare in large quantities.
It can also be made ahead of time and is best enjoyed communally.
Umai also showcases the region's prized ingredients, including Sarawak black pepper.
Known for its strong aroma, complex flavour and bright heat, Sarawak black pepper gives umai an extra layer of depth.
It cuts through the lime juice and raw onions with a warm, lingering spice.
For an extra layer of fragrance, add a small amount of julienned calamansi rind into the cured prawns.
The zest brings out the floral, slightly bitter notes of the fruit and enhances the overall citrus profile.
Use sparingly, as the rind is potent and can easily overpower if overdone.
Ingredients for a refreshing, tangy 'umai'.
Prawn umai
Ingredients
500g medium-sized prawns, shelled
400g calamansi limes
1 tsp salt to taste
1 tsp black pepper to taste
1 tsp sugar to taste
100g shallots, finely sliced
150g red onion, finely sliced
60g young ginger, finely julienned
50g red chillies, finely sliced
Garnish
50g coriander, roughly chopped
40g peanuts, roasted, dehusked and lightly crushed
Calamansi lime halves
Directions
Cut calamansi limes in half and squeeze out the juice. It should yield about ¾ cup of juice.
Finely julienne the rind of about five pieces of half calamansi rinds and set aside.
Slice each prawn in half lengthwise and remove the guts. Rinse under cold water and pat dry with a paper towel.
Place prawns in a non-metallic bowl.
Add the calamansi lime juice and mix well.
Let it sit in the refrigerator for 30 to 45 minutes until the prawns turn opaque.
Add salt, pepper and sugar to the prawns. Mix gently.
Stir in the shallots, red onion, ginger, calamansi rind, and red chillies.
Toss the mixture gently until evenly combined.
Adjust the seasoning to your preference, adding more salt, pepper or lime juice as needed.
Transfer to a serving plate or shallow bowl.
Garnish with chopped coriander, crushed peanuts, and extra lime halves.
Serve prawn umai chilled. It can be eaten on its own, with rice or with keropok.
It works well as a starter or side dish, especially in warm weather or during festive gatherings.

The intense cook-off, aimed at uncovering the finest char kuey teow and ultimate wok hei (breath of the wok), saw contestants battling it out with their own secret recipes. Held at the Toi Shan Ningyang Wui Kwon clan temple in King Street, a smoky aroma filled the air as an eager crowd gathered to see each contestant dish out their version of the popular street food. Contestants brought their own seasoned woks, cockles, lap cheong (Chinese sausage), sauces and cooking oil. Other ingredients including flat rice noodles or kuey teow, eggs, bean sprouts and white prawns, along with stoves and gas supply were provided by the organisers. It took less than two minutes for each contestant to dish out their plate of char kuey teow, which was then judged by a panel of six for presentation, aroma and taste. Penang Koo Soo Kwong Choon Tong Restaurant and Tea Shop Association chairman Vinah Yee, who was on the panel of judges, said char kuey teow with the most ingredients was not necessarily the best. 'Each component should be balanced and complement the dish without overpowering the overall flavour. 'One of the key criteria we looked for was the presence of wok hei, that distinct aroma and flavour created when food is stir-fried over intense heat in a seasoned wok. 'If the strands of kuey teow stick together, they may not cook evenly, become gummy and lose that wok hei flavour. 'High flames may look impressive, but if the heat is too strong, the noodles can become over-charred and have a burnt taste,' said Yee. After two hours of sizzling action and clanging woks, Ong Siew Kean, 53, of Hean Char Koay Teow in Jalan Burma, Pulau Tikus, was crowned champion. 'This is my first competition and I am grateful to be recognised. I never thought my char kuey teow was anything special but I'm glad my effort paid off. 'Maybe it was my sauce blend that made the difference as soy sauce plays a crucial role in creating a flavourful dish,' she said. Ong, who is fondly known as Winny, said she began frying char kuey teow in her 20s but took a break before returning to the trade about three years ago. 'My brother-in-law taught me the basics and over time, I tweaked the recipe to suit my taste,' she said. Ong, who fries up about 200 plates of char kuey teow on weekends, said she was looking forward to an influx of customers following her win. Second place went to Chin Foh Shin, 51, of Hobe Kedai Makanan & Minuman, Butterworth, while third place was awarded to Khoo Kay Keat, 47, of Kong Long Char Koay Teow in Beng Chin Garden, Air Itam. The three winners received RM388, RM288 and RM188 respectively, presented by Chief Minister Chow Kon Yeow. The competition was jointly organised by the Village Community Management Council of Padang Kota and Jalan Transfer/Jalan Argyll, along with Toi Shan Ningyang Association, and promoted by Kwangtung and Tengchow Association of Penang.

At the 48-door longhouse in Temudok Krian on the eve of the celebration yesterday, residents were already up and about early in the morning, abuzz with energy as they put the final touches on preparations for 'Ngasi Makan Tiang Pengingat', a time-honoured ritual set to take place later in the day. According to the head of the longhouse, Tuai Rumah Punggah Gama, 70, the ceremony is more than just an annual ritual, it's a heartfelt tribute to their ancestors and a powerful symbol of unity for the community. 'It's not just a wooden post standing there. The 'Tiang Pengingat' holds the spirit of our memories, our values, and our strength as a people. When we perform 'ngasi makan', it shows that we remember and honour where we come from,' he told Bernama. The four-sided belian wood pillar, standing around 3.5 metres tall in front of the longhouse, was first erected on June 1, 1966, the date of the community's very first Gawai Dayak celebration. Since then, it has stood as a proud marker of heritage through the generations. As dusk nears, the ceremony began with 'miring', a traditional Iban invocation of blessings, followed by the symbolic sacrifice of a rooster, its blood gently smeared onto the Tiang Pengingat, which bears inscriptions marking that historic first Gawai and is adorned with intricate traditional decorations Offerings of glutinous rice and dishes wrapped in banana leaves, lovingly prepared by the longhouse folk since morning, were placed at the foot of the pillar, accompanied by tuak, the traditional Iban rice wine.
