In precarious times, an old restaurant idea makes new sense

Back in the 1980s, the norm-busting adman Jay Chiat liked to pose the question, 'How big can we get before we get bad?' as his Los Angeles-based boutique agency attracted clients like Apple and Nike.
It is all too easy, he figured, to do more and accomplish less.
He might as well have been talking about restaurants. For a long time, the industry has embraced replication as the holy grail: If we build it, and then we build a lot more of it, they will come, and we will make lots of money.
But big is no guarantee. Sometimes it fails for reasons that have less to do with the food than with exponential reality — impatient investors, ego battles between the money people and the chef, and the challenge of managing employees owners have never met in cities they rarely visit. Or if all that works just fine, maybe the chef gets cautious about the menu to protect success, and jaded restaurant-chasers move on.
Restaurants are not financial institutions. There's no such thing as too big to fail.
Lately, a new generation of restaurateurs has embraced a more modest model, one that harks back to the era before social media and competitive food TV: the old-school one and done; maybe two, but not 10, and not a nationwide restaurant empire.
These independent owner-operators want a career defined by a ZIP Code rather than by cloned outlets and corporate memos, one where they're on a first-name basis with their customers, their employees and their suppliers. Their notion of success sounds suspiciously, and delightfully, like what it was before a marquee sensibility inflated everyone's dreams. Owners get real-time gratification. We get just what we need right now — good food with side orders of comfort and connection.
L.A.'s Café Telegrama and Ètra were early arrivals in what's about to become a colony of little independent restaurants near the intersection of Melrose and Western avenues. Jyan Isaac Bread and its sibling, Ghisallo, have helped turn a block in Santa Monica's Ocean Park neighborhood into what one regular happily calls 'carb alley.' And De La Nonna combines a pizza joint, take-out slice window and a disco bar called the Let's Go! at the intersection of Little Tokyo, Skid Row and the Arts District. Look around your neighborhood and I expect you'll find examples of your own.
To improve their odds, these restaurateurs avoid spaces with destination-dining rents, run multiple operations out of a shared space to decrease downtime and work the room in person. 'We gravitated toward small,' said Andrew Lawson, an owner of Café Telegramma and Ètra. 'The chef and the partners are on the floor five nights a week, we touch the tables, we know what the regulars like.'
These doubled-up operations improve the odds of what Lawson calls the 'crossover customers' who show up for morning coffee, check out the more expensive dinner menu and are inclined to give it a try because they already like the cafe. Jyan Isaac Bread spreads the word with a wholesale operation, generating profits from outlets someone else operates, and De La Nonna has opened an outpost in Big Bear. That's as big as small gets.
Let's not kid ourselves; there's no magic survival formula. The National Restaurant Assn. reports 'pent-up demand' across all dining sectors but notes that millennials and Gen Xers prefer to get their food to-go, which puts a crimp in profitable alcohol sales and tips. Here in L.A., restaurants barely caught their breath post-pandemic before fires and the entertainment industry exodus wiped them out, along with their customer base; now the threat of tariffs and higher food costs looms. Business is off from 30% to 'empty' in many parts of the city, depending on whom you ask.
And that sorry appraisal predates the arrival this week of ICE and federal troops, which means employees and customers may not be showing up at restaurants at all.
If it seems frivolous to worry about the restaurant business amid everything else that's going on, think again, because their reach extends far beyond their front doors: Fewer customers means fewer employee shifts, fewer orders for farmers and suppliers, fewer places for you to unwind at the end of a tough day.
That kind of reality check rarely stops someone who's passionate about feeding people, though. Instead, owners downsize, partner up, work the room, sell their wares wholesale. Small may be the only dream that makes any kind of sense right now.
As for the flip side, I recently conducted an utterly limited and personal investigation on a trip to New York, where the excellent cappuccino at my first stop had morphed into watery coffee topped by something like Styrofoam, and the lunchtime salmon bowl at the second location involved a tired slab of fish retrieved from a warming drawer. And yet both places are so popular they're opening outlets nationwide — which might be where the focus has shifted to, rather than the food.
Give me little and local anytime.
My first morning back in Santa Monica, I went straight to Jyan Isaac Bread, although I could've made coffee at home. Yes, I missed the food; there's a reason the owner is referred to as the Dough Whisperer. But I also missed the experience: employees who are not cogs in a wheel but individuals with personalities, interests, questions about where I'd been — and answers about what they'd been up to during our communications gap.
When the equivalent experience comes to a vacant storefront near you, count yourself lucky. The big thing now is small: upstart indies that are strategizing to reclaim what a restaurant is supposed to be.

Saks Global has mostly smoothed things over with vendors and has no plans to close stores, CEO Marc Metrick told BMO Capital Markets analysts at a recent meeting, according to a Friday client note. The analysts led by Managing Director Simeon Siegel said this suggests 'they are already in the best locations and like their existing fleet.' That includes 33 Saks Fifth Avenue stores, 86 off-price Saks Off 5th stores, 36 Neiman Marcus stores, five off-price Neiman Marcus Last Call stores and Bergdorf Goodman's Manhattan flagship. The luxury department store conglomerate didn't immediately respond to an email asking whether this means the downtown Neiman Marcus store in Dallas will remain open beyond 2025 after all. Earlier this year, after announcing that iconic store would close March 31, the company waged a weeks-long battle with city leaders who worked to save it. Ultimately Saks Global agreed to keep the store running through the holidays. The breakdown in relationships with suppliers stemmed from chronic issues with late payments. An unconventional payment plan devised earlier this year signaled to some analysts that the company was struggling to meet its obligations. Metrick told BMO that most vendors agreed to the terms and that Saks Global 'is making progress on outstanding balances.' The company in recent days picked up $350 million in financing commitments that analysts have said likely rescued its ability to stock up for the holiday. Speaking with BMO, Saks executives 'expressed confidence in their liquidity,' on the way to realizing its five-year goal of $600 million in synergies, with $285 million in run-rate synergies by the end of this fiscal year. That five-year target is about $100 million higher than the original target, and the 2025 run-rate is nearly doubled, per BMO. 'While acknowledging macro volatility, Metrick expressed clear excitement and confidence in his long-term business opportunities, the luxury business at large, and expressed confidence in their liquidity and vendor relationships,' Siegel said in the Friday note. Luxury brands may be less optimistic about Saks, however, according to a report from HSBC Global Research analysts led by Erwan Rambourg. New York City-based luxury brand managers have just two major concerns, they found: 'how the well-publicised financial travails of Saks Global will end and the end game for tariffs.' 'The outlook otherwise seems solid,' Rambourg said in emailed comments Thursday. Saks Global appears to be banking on a healthy recovery for luxury consumers — who by Saks' own measure seemed quite agitated earlier in the year — as well as on the strength of the luxury market longer term. BMO cited more up-to-date research from Saks, which found that a third of its customers making $200,000 or more are less confident about the economy in general but more confident about their own situation. These consumers are concerned about the social/political climate above all, then a recession and stock market volatility, per that report. At least for the moment, the stock market is leaning their way, and therefore in Saks Global's favor. In May and June, U.S. equity markets have broadly recouped earlier losses, according to HSBC. 'Of course there are other topics dominating headlines in the US at present, but it seems that luxury consumers are driven more by short-term measures of wealth, such as the value of their 401k pension plans,' Rambourg said. Tariffs and higher prices are not top worries for Saks' customers, per its research. BMO analysts estimate that about 80% of its goods come from Europe, and Saks Global told them that high-single digit percentage price hikes, which they characterized as 'normal,' would mostly offset increased import levies. President Donald Trump's showdown with California is expanding from immigration enforcement to environmental protection after he signed three measures passed recently by Congress repealing state auto rules aimed at curbing vehicle emissions. Trump took aim during a June 12 White House event at California's environmental regulations during the same week that he tangled with the state's Democratic governor, Gavin Newsom, over sending troops to help police protests in Los Angeles that turned violent. The president deployed California National Guard and U.S. Marines to L.A. over Newsom's objections, prompting the governor to warn he's acting like a 'dictator.' The state filed a federal lawsuit seeking to block the move that's heading for court arguments later June 12. Newsom also has pledged to sue over Trump's moves to rollback California environmental rules. Trump signed resolutions of disapproval under the Congressional Review Act to bar California's landmark plan to end the sale of gasoline-only vehicles by 2035, which has been adopted by 11 other states and representing a third of the U.S. auto market. 'We officially rescue the US auto industry from destruction by terminating California's electric vehicle mandate, once and for all,' Trump said June 12. Trump also signed a resolution approved by Congress to rescind the EPA's 2023 approval of California's plans to require a rising number of zero-emission heavy-duty trucks, and another resolution on California's regulation to curb smog-forming air pollution from heavy-duty highway and off-road vehicles and engines. Since 1970, California has received more than 100 waivers under the Clean Air Act to address pollution caused by its unique geographic terrain and abundance of automobiles in the nation's most populous state. The Golden State in recent years has also been at the forefront in trying to transition to vehicles that don't produce greenhouse gas emissions that contribute to warming global temperatures. WWDC 2025: Apple Is Years Behind Google and Microsoft in AI. How Much Does It Matter?

At Apple's 2024 , I sat in the baking sun outside the company's glass spaceship-like headquarters in Cupertino while Craig Federighi described the marvelous capabilities of Apple Intelligence. He promised that your iPhone would be able to synthesize your interactions with public data to deliver practical answers to questions like 'What time should I leave to pick up Julian?' Your phone would know that Julian is your nephew who is visiting you in Albuquerque on the 6:10 Delta flight, and how the current traffic affects when you should depart for the airport. These examples excited the crowd. But this and other functionality still isn't available, and there's no sign of Apple doing anything about it. Meanwhile, Google and Microsoft continue to add advanced AI features to their respective platforms. We're fast approaching a breaking point here. If Cupertino doesn't recenter its attention on Apple Intelligence very soon (WWDC seems like an obvious time to start) and make tangible progress, I don't think it will ever be a true competitor in the AI space. Consequentially, I don't think consumers will continue to pay for technology with simply average AI. Siri is a major entry point for AI features on Apple devices, so last year, I asked with high expectations: Now, we know that the answer is 'not this year.' Instead, we got a few updates, such as the ability to type to Siri, better voice recognition, continued context, a full-screen glowing effect, and integrated Apple product knowledge. For me, the best among these is the continued conversational context, which means Siri remembers all the previous things you say or type during an interaction. Other capabilities also arrived across Apple's OSes, but they too are underwhelming. They allow you to generate emoji and get writing assistance, for example. These updates are a far cry from the vision Apple outlined at WWDC. I applaud the development of the Private Cloud Compute feature since a secure environment for AI is vital, but Apple Intelligence still needs to have compelling features for people to care. On that note, the company has since hinted that the truly smarter AI-powered Siri won't be arriving . That's two years after and a year after Gemini showed up on Google's Android. Two years is a long time to be behind on AI, and potentially an insurmountable hurdle. Copilot and Gemini are far more advanced at this point. The AI assistants can see what's on your screen and provide information, analysis, and actions based on it. They can also organize, summarize, and draft responses for your emails, generate photorealistic images (Apple's Image Playground can create only cartoon-like images), and translate any playing audio or video on your device in real-time. Though Apple promises this kind of intelligence, it's not nearly on the same level. According to reports, Apple will apparently focus on its Solarium interface update at WWDC instead of announcing development efforts for Apple Intelligence. Its OSes already benefit from decades of refinements and deep familiarity among users, so I'm not really sure what the point is in light of its AI shortcomings. For all its AI woes, Apple is still a leader among phone vendors. Yes, iPhone sales over the last quarter, and market share edged down from 19% to 18% among all phone vendors. But Samsung's market share also slipped, from 20% to 19%. Both of these declines could just be due to market saturation. People might just be unwilling to spend on a new phone because of . Restrictions on iPhone sales in China, where overall phone sales actually grew, are also likely affecting Apple's numbers. On the desktop OS side, the of macOS computers continues to rise at the expense of Windows PC manufacturers, though it's still far behind Dell, Lenovo, and HP. Whether we just aren't far enough into the era of AI for sales figures to reflect Apple's AI failings remains unclear, but the industry is shifting fast. And Apple is actually in a good position hardware-wise; all its latest devices have chips capable of local AI processing. Not all PCs have , and not all Android phones have the power to run on-device AI features. That could be Apple's saving grace if only the software features catch up. AI has existed a lot longer than you might realize. Machine learning and neural networks have been around for decades, dating all the way back to the '50s and gathering steam in the '90s, aughts, and teens. Progress in AI takes time, too—a lot of time. It took until just a couple of years ago to make the jump to arrive at the kind of Generative Pre-trained Transformer technology that made ChatGPT seem so revolutionary. Apple is a big company with massive resources and top tech minds. It could absolutely become competitive, but it needs to commit to this goal with a sense of urgency to have a chance to catch Google and Microsoft and save its sales numbers in the long run. Otherwise, it might not ever be able to meet consumers' expectations and excitement, and thus risks missing out on the defining technology of this decade.
