CHILLOCOTHE, Ill (WMBD) — Paul Boub volunteered at the Illinois Valley Central high school concession stand when he was in school. That served as the launch point for his barbeque career. 'When you volunteer, you're donating your time, you're giving back. And well ironically, I got something back and it's now taken me down a road that I never thought I would take,' Boub who's the owner and the chief flavor officer of his business 'Smokin Ghost BBQ'. That road led him to create his business, 'Smokin Ghost BBQ'. Since 2016, the team has been competing nationally. In January, their haunted heat BBQ sauce scored first at the National Barbeque and Grilling Association. Then, just in May, their brisket took home the top honor at the Kansas City Barbeque Society World Invitational. 'When you do competition, barbeque is like anything it's a sport inside of itself. And when you're 5 foot 9 and 60 some years old, it's probably the only one I can compete on at an elite level,' Boub said. Boub smokes 4 different types of meats: brisket, pork, ribs and chicken. The process for him starts late the night before and then the following morning, he staggers the time he cooks the meat. 'I just love cooking and when the pits lit at three, four in the morning it's calm and quiet and a cup of coffee, there's nothing quite like it. It's very peaceful. Later in the day it gets crazy. But in that morning, it's pretty relaxing,' Boub said. Boub said they're grateful for all of the sponsors who support 'Smokin Ghost BBQ'. It's made the dozens of competitions they compete in every year worth it. 'It's been said in the barbeque community, it's all about the people.
