Cabbage is a vegetable that often draws comparisons to Marmite - it's either adored or despised. This polarising opinion stems from its strong smell, plain taste, and if overcooked, a horrible mushy texture.
However, every food, particularly the less favoured vegetables, can be made tasty with the right cooking method and there are alternative ways to prepare cabbage that enhance its flavour rather than just boiling it.
We've discovered a recipe that will make you fall in love with cabbage and have you reaching for seconds. A culinary expert at Downshiftology shared that with just two simple ingredients, you can transform this modest vegetable into a delectable dish that's rich, savoury, and packed with flavour in just 20 minutes, reports the Express.
Ingredients
One large green cabbage (one that feels heavy for its size and has tightly packed leaves)
One yellow onion
Garlic cloves (to taste)
Ghee (you can also use butter or oil)
Sharing their reasoning for using ghee, the food expert said: "Cooking with ghee is my go-to method. Unlike butter, which can burn easily when sautéed too long, or olive oil, which lacks that sweet, rich flavour, ghee offers the best of both worlds.
"Some like to mix butter and oil to raise the smoke point, but honestly, ghee does the job perfectly on its own-it's stable at high heat and brings a delicious buttery taste."
Ghee is a type of clarified butter that is rich in milk fat and has a longer shelf life than regular butter.
It's made by simmering butter and removing the milk solids and water, resulting in a concentrated, golden-yellow liquid with a nutty flavour.
It is typically used in a host of dishes, particular in Indian food, where it originated from.
Method
Start by heating ghee in a large skillet or Dutch oven over medium-high heat. Once hot, add the onions and sauté them for about a minute, just until they soften.
Add the garlic and continue cooking until it releases its aroma. Then, introduce the cabbage to the skillet.
Cook it for 12 to 15 minutes, stirring occasionally, until it softens and develops a beautiful caramelised colour.
Lastly, season with salt and pepper to your liking. Give everything a good mix to combine, and serve.
Savour sautéed cabbage as an accompaniment to chicken, lamb chops or alongside a traditional shepherd's pie. Alternatively, enjoy it as a one-pan meal with shredded meat or as part of a hearty breakfast.
If you have any cabbage left over, it can then be used once more in a variety of dishes, particularly soups.
