
What my kitchen taught me about Pakistani cuisine: Lahori namak, Kasuri methi, and more
For years, I've had a long-standing argument with a friend over whether there is such a thing as Pakistani cuisine. His stance is that Pakistan has no distinctive culinary identity – it's all Indian food, or a mix of North-West Frontier and Afghani cuisine with minor tweaks, rebranded as Pakistani. I disagree. Having cooked many dishes from Pakistani recipes, I believe that while it may not boast entirely unique dishes, Pakistani cuisine has a distinct flavour profile. It can be more robust, with a deeper use of whole spices like brown and green cardamom, and, of course, the country is the birthplace of my favourite aromatic herb, Kasuri methi.
There's been a surge of anti-Pakistan sentiment in recent weeks, but I take a slightly John Lennon-ish view – that there must be peace after a point. All the talk about Pakistan made me think of the ingredients in my kitchen that hail from there and have become staples.
First up: Lahori namak – what the fancypants call the Himalayan rock salt. It's a better alternative to regular table salt, especially good in salads since it has a delicate flavour of its own. Himalayan black salt or kala namak or Lahori namak is mined from the salt ranges in the Himalayan foothills, primarily in Pakistan. It's not just about the taste either – Lahori namak has a unique mineral composition. Unlike refined salt, which is stripped of its natural elements, this salt retains sodium, potassium, magnesium, calcium, and iron. I don't usually cook with it, but I do use it in salads, where its delicate umami flavour shines.
Now to my favourite ingredient: Kasuri methi or dried fenugreek leaves. I had never really given its antecedents much thought, until the recent Indo-Pak tensions turned Facebook groups into battlegrounds. Someone posted a passionate appeal titled 'Stop calling dried methi leaves Kasuri methi.' I, innocently, assumed it was a nomenclature debate, but no, the point was that we should stop using the word 'Kasuri' because Kasuri methi comes from the Kasur region in Pakistan, where unique soil conditions give the fenugreek leaves a particularly fragrant quality. It's an ingredient I can't recommend enough. A teaspoon is enough to elevate any curry or sabzi – just rub the dried leaves between your palms to release their oils, and add them at the end of cooking, almost like you would with fresh coriander. If you're using Kasuri methi, skip the coriander or curry leaves.
Another Pakistani pantry staple I swear by: Shan masalas. Whether it's biryani, kebabs, raan or chholey, if you want flavours that rival the best restaurant or even a top Amritsari dhaba, this is your shortcut. I've used Shan masalas since I started cooking. Each packet includes whole spices and pre-measured salt. If you're not a confident cook or don't want to experiment, just follow the instructions on the box, and you'll feel like you're a chef at a five-star North West Frontier Province restaurant.

Earthquake mock drills conducted across Himachal Pradesh to check disaster management preparedness
Kullu: Sirens wailed and emergency teams mobilised across Himachal Pradesh on Friday as the state conducted a large-scale earthquake preparedness drill designed to test its disaster response systems and inter-agency coordination. Simulating a massive magnitude 8.0 earthquake with its epicentre in Kangra, the mock operation unfolded simultaneously in all 12 districts, affecting sites from remote mountain towns to busy city centres. In Kullu, the scenario imagined aftershocks causing destruction across seven locations. These included damage to a community health centre in Tegubehar, a Glacial Lake Outburst Flood (GLOF) near Manali's Aleu area, structural collapse at the Bhutnath Bridge and Tibetan Market, and dam damage in Sainj Valley. The district's deputy commissioner, Torul S Ravish, said the simulation helped assess the coordination and response time of government departments, and highlighted areas for improvement. "Mock drills allow us to identify gaps in disaster preparedness and fine-tune our coordination mechanisms. We are committed to addressing the shortcomings identified today," Ravish said. In Mandi, key sites including the Indira Market complex and Regional Hospital staged scenarios ranging from flash floods to landslides and fire incidents. The control room was activated under deputy commissioner Apoorva Devgan, with real-time supervision from police and civil officials. Emergency teams responded to simulated floods near Balichowki and canal damage in Sundernagar, while a mock fire broke out at Karsog Degree College. In Lahaul-Spiti, one of India's most remote districts, responders enacted a full rescue operation after a simulated building collapse and fire near Keylong police ground. Deputy commissioner Kiran Bhardwaj oversaw the exercise, which included ambulance evacuations, search and rescue, and triage of the injured. Parallel drills occurred in Udaipur, Kaza and Kukumseri, where scenarios included landslides and collapsed school and residential buildings. Bhardwaj said: "Our teams responded swiftly. The exercise demonstrated commendable coordination between police, paramilitary forces, medical staff and community volunteers." At Kaza's Govt Senior Secondary School, an earthquake-induced landslide simulation left 20 mock casualties, including eight seriously injured. Rescue teams, including the Indo-Tibetan Border Police (ITBP), evacuated victims to a relief camp set up for treatment. Similar drills were carried out across other districts, including Shimla, Kangra, Chamba, Solan, Bilaspur, Una, Hamirpur, Sirmaur and Kinnaur, each simulating region-specific disaster scenarios. The statewide exercise, coordinated by the Himachal Pradesh State Disaster Management Authority, was aimed at stress-testing the government's readiness for seismic disasters in the quake-prone Himalayan region. Between pedestrian and pedantic
When my very first bylined article was printed over 35 years ago, a senior colleague whose command over English remains an inspiration to us remarked, "Not bad, lass, not bad at all." A fellow newbie, however, took umbrage on my behalf. "Not bad? It's very good!" she remonstrated. "Not bad means very good in English," he replied, with a twinkle in his eye. She was not very sure whether he was joking or serious, and many Indians today may not be either. Lack of comprehension of a sentence comprising mostly words of no more than four letters but nationwide admiration for the polysyllabic eloquence of Shashi Tharoor encapsulates the dichotomy and dilemma of English in India today. Add to that countless social media reels advising people to substitute simple, short words with complicated ones to appear "more intelligent", and it seems Indians are labouring under the delusion that size matters in English. It does not. Or should not. A thesaurus is not a prerequisite for eloquence. Our Anglo-Indian teachers dinned into us that short sentences and lucidity are always preferred over convoluted compositions with too many punctuation marks. They became very cross indeed if anyone showed off by inserting sesquipedalian prose into an essay. "A word to the wise is sufficient, my girl," my favourite teacher would admonish. Another was even more succinct: "Less is more." My own acquired wisdom since then has been that when thoughts are clear, the words to express them are sparklingly simple. That goes for any language, of course, but particularly so for English with its penchant for understatement over hyperbole. That is why 'not bad' means 'very good'. Jargon and pedantic prose are just tools for those who seek to divert attention from the merit of their ideas to their knowledge of technical terms or the length of their words. In that context, Tharoor is a victim of his own success. He tends to stick to the time-tested 'keep it simple' rules of English that I learnt in school, as he certainly does not lack erudition or clarity. But because a nation whose understanding of classic English has been steadily declining for decades was captivated by some long, arcane words he had probably uttered in a moment of school-boyish impishness, he is now India's undisputed Tsar of is little doubt that many Indians' use of English today is very literal; irony, sarcasm and understatement are lost on many desi interlocutors. Definitions and usage have also changed, because English words are now often seen through the prism of Indian languages, which have different allusions and associations. So now, there are enthusiastic but poor imitators of what they think is Tharoorian articulation, and there are practitioners of purely perfunctory welcome trend of translating more books in Indian languages into English adds another dimension to this curious divergence. Good translations retain the cultural nuances of the original works, which obviously precludes using familiar idioms of another language. So, Heart Lamp, the 2025 winner of the International Booker Prize translated from Kannada. uses English that bears no resemblance to, say, even the prose of the most revered Indian writers in English. In fact, the English translation in that book echoes the way many Indians use it today. It is truly plain Indian English, as the language is just a medium of communication without any literary or even syntactic connection to the oeuvre of Chaucer or Shakespeare, Twain or Dickens, RK Narayan or Vikram Seth, Salman Rushdie or Amitav Ghosh-or even that of the 'real' Tharoor. Never make the mistake of saying "not bad" in India now if you mean "very good".

RU launches comparative literature in MA English
Jaipur: In line with the New Education Policy (NEP), Rajasthan University has introduced a new course in comparative literature under its Master of Arts programme in English. The course, launched this academic year by the department of English, integrates Indian texts and regional literature into the traditionally Western-centric syllabus. The revised curriculum includes works by Indian literary figures such as Kalidas and Premchand, along with selected excerpts from the Upanishads, Mahabharata, Ramcharitmanas, Bhagavad Geeta, and Panchatantra. Officials said the aim is to offer students a deeper understanding of Indian culture and literary heritage by examining it alongside Western texts. "This course will give students a chance to read and analyse Indian texts in English and understand how they relate to or differ from Western literature," said Prof Deepa Mathur, head, department of English. She added that this approach aligns with NEP's emphasis on incorporating the Indian knowledge system across disciplines. Prof Mathur said the course opens up diverse career opportunities. "Many of our students, through tie-ups with departments like French and Spanish, are now working abroad as English professors," she said. The course has seen strong demand, with the department receiving nearly 700 applications annually for just 75 available seats. Eligibility requires a Bachelor of Arts degree with a minimum of 48% overall or 55% in the subject chosen for postgraduation.
