Taverna-Style Greek Gigantes
As many of my close friends in Athens know, I have a borderline obsession with gigantes.
My favorite taverna in Athens makes gigantes that I can only describe as 'pillows of perfection,' which I usually eat within my first 48 hours of arriving. The beans are amazingly tender, and the sauce is warming and heavy enough to feel like comfort food but vegetable-centric enough that it feels like a healthy indulgence.
A year or two ago I finally made headway in becoming a regular at the taverna when I befriended one of the servers who, among the male-dominated staff, is young, female and English-speaking. In my broken Greek she helped me coax a verbally dictated, very nontechnical recipe-ish sort of description from the owner. When I returned to California, obviously having packed a giant bag of white beans in my luggage, I immediately got to work testing the tips that I was given through what felt like a sacred passing of bean oral history.
With practice, this recipe is what became of that interaction. Enjoy these with a dollop of whole-milk Greek yogurt and a side of crusty bread.
The cooking time depends on how well your oven regulates heat and freshness of the dried beans. If the beans are older, they will take longer. You're looking for tender, soft, buttery beans that hold their shape and are not falling apart, plus a thick sauce, and some of the beans on the top layer ending up a bit 'burnt' or extra baked from direct heat exposure. After the initial uncovered baking period, check periodically in 10-minute increments to test the beans' texture as needed.
This is an excellent recipe for meal prep: This can be made ahead and keeps for at least three to four days. It also freezes and reheats very well.

Man admits to forging letter to frame immigrant witness in Milwaukee
Protesters gather outside of the Federal Building in Milwaukee to denounce the arrest of Circuit Court Judge Hannah Dugan. (Photo by Isiah Holmes/Wisconsin Examiner) A Milwaukee man was charged Monday after writing a letter to the Milwaukee Police Department (MPD) and U.S. Immigration and Customs Enforcement (ICE) that threatened to assassinate President Donald Trump. Demetric Scott told investigators that he wrote the letter claiming to be 54-year Ramón Morales Reyes, a Mexican-born Milwaukee resident who does not have permanent legal status. Scott was already incarcerated in the Milwaukee County Jail for armed robbery and aggravated battery and allegedly victimized Morales Reyes when he committed that crime. WISN 12 reported that Scott told investigators that he wrote the letter framing Morales Reyes because he didn't want Morales Reyes to testify against him during his trial in July. Scott reportedly told a person during a recorded jailhouse call that if Morales Reyes 'gets picked up by ICE, there won't be a jury trial so they will probably dismiss it that day. That's my plan.' The letter Scott authored was written in perfect English, with only a few misspellings. 'We are tired of this president messing with us Mexicans,' it stated, adding, 'I will self deport myself back to Mexico but not before I use my 30 yard 6 (sic) to shoot your precious president in the head – I'll see you at one of his big ralleys (sic).' The letter was likely referring to a 30-6 (pronounced 30 odd six) high caliber rifle round, and appeared to be an assassination threat against the president. On Friday, lawyers representing Morales Reyes and local immigration advocates from Voces de la Frontera held a press conference, asserting that Morales Reyes could not have authored the letter. The 54-year-old father, who works as a dishwasher, comes from a rural part of Mexico where he received little formal education. He does not speak English and cannot read or write proficiently even in Spanish. After Morales Reyes was arrested by ICE, his daughter contacted Voces de la Frontera and shared information about his background. Days after the arrest, Department of Homeland (DHS) Secretary Kristi Noem issued a press statement, condemning Morales Reyes as having threatened President Trump's life. Noem said the letter was part of a series of dangerous threats to the president. Morales Reyes' attorneys and Voces de la Frontera called on DHS to retract Noem's statement and clear his name. It's unclear why Noem issued the statement, as CNN reported that MPD was investigating the likelihood that the letter was a fake on the day Morales Reyes was arrested. Scott told investigators that he did not receive any help in writing the letters. Democratic U.S. Reps. Gween Moore and Mark Pocan visited the Dodge County jail, Wisconsin's only ICE detention facility Monday, on a congressional oversight visit. They were not permitted to talk to anyone incarcerated there and did not receive any response to their questions from ICE. 'In this facility, ICE is still detaining Ramón Morales Reyes despite being wrongfully accused of a crime,' Moore and Pocan said in a joint statement. 'ICE is also working without transparency to Congress, which was only magnified by today's visit when we tried to call the local Milwaukee field office number on its website, but the number was disconnected. It is unacceptable for ICE to be inaccessible to Members of Congress. As members of Congress, we will continue using all tools available to conduct oversight.' Attention América de Cali: Racing eyeing up Duván Vergara
América de Cali is in the midst of defining the League, while having on the horizon the challenge of the round of 16 of the Copa Sudamericana, against Bahía. But the squad led by Jorge Da Silva could suffer significant losses for the next semester. Duván Vergara in the sights of Racing According to Pipe Sierra, the interest of Racing in the América de Cali winger is real, after rumors grew. Advertisement The journalist also clarified that América de Cali is not willing to negotiate until the end of the season. Racing Club qualified for the round of 16 of the Copa Libertadores, to be played in August, and intends to strengthen itself to compete in the continental tournament. It is also said that Racing and América maintain direct contact, without agents or intermediaries, due to the agreement made last year for Juan Fernando Quintero. For América, it would be a very significant loss, considering one of the most unbalancing players in the squad, as well as an experienced reference. In addition to Racing, it has also been reported that Duván Vergara would be on the radar of his rival in Avellaneda, Independiente de Vaccari, and he could also be sought after from Brazil. 5.8-magnitude earthquake shakes Turkish Mediterranean coast, injuring 7 people
ANKARA, Turkey (AP) — A 5.8-magnitude earthquake shook the Mediterranean coastal town of Marmaris on Tuesday, Turkey's disaster management agency said. At least seven people were injured while trying escape homes in panic. The Disaster and Emergency Management Presidency said the earthquake was centered in the Mediterranean Sea and struck at 02:17 a.m. It was felt in neighboring regions, including in the Greek island of Rhodes, waking many from their sleep, Turkey's NTV television reported. Marmaris' governor, Idris Akbiyik, told the station that seven people were being treated for injuries after jumping from windows or balconies in panic but there was no immediate report of any serious damage. Turkey sits on top of major fault lines and earthquakes are frequent. In 2023, a magnitude 7.8 earthquake killed more than 53,000 people in Turkey and destroyed or damaged hundreds of thousands of buildings in 11 southern and southeastern provinces. Another 6,000 people were killed in the northern parts of neighboring Syria.
