Try this easy-to-follow cake recipe to make tea time a soothing delight with rooibos and chai. ROOIBOS CHAI TEA CAKE WITH CREAM CHEESE FROSTING
Ingredients
Cake
1 cup Rooibos Chai infused milk
¼ cup sour cream
2 ¼ cup flour
¼ cup cornstarch
1 tsp cinnamon
½ tsp nutmeg
½ tsp cloves
1 cup white sugar
½ cup brown sugar
1 tbsp baking powder
½ tsp salt
1 cup unsalted butter, softened, cubed
4 large eggs
1 ½ tsp vanilla
Chai syrup
¼ cup water
¼ cup brown sugar
2 tsp Rooibos Chai
Cream cheese frosting
1 cup cream cheese, softened
¼ cup unsalted butter, softened
4 cups icing sugar, sifted
1 tsp vanilla
Method To make the Rooibos Chai infused milk, heat the milk and 2 tsp of Rooibos Chai tea on the stove. Once almost at a simmer, remove from the heat and steep for 10 minutes. Strain through a fine mesh strainer and set aside to cool. To make the Rooibos Chai simple syrup, bring the sugar, water and tisane to a simmer. Simmer for 10 minutes, strain through a fine mesh strainer and set aside to cool. Preheat oven to 180°C and line 15cm cake tins with parchment paper. In the bowl of a stand mixer (or a bowl and hand mixer) sift together the flour, cornstarch, sugar, baking powder, salt, cinnamon, cloves and nutmeg. With the mixer running, add in the cubed butter one piece at a time until combined. It will look a little like wet sand. Add in eggs one at a time, making sure each egg is combined before adding another. Stir in the vanilla and sour cream. Slowly pour in the Rooibos Chai infused milk until it's all combined and smooth. Divide batter between the 3 parchment-lined pans. Bake for 30-35 minutes or until a toothpick inserted in the middle comes out clean. Cool cakes for 10 minutes in the tins/pans, then remove from pans and cool completely. Once cooled, cut off the top of the cake layers to make sure they are smooth for when you assemble the cake. To make the cream cheese frosting, beat the cream cheese and softened butter together until light and fluffy. Add in icing sugar one cup at a time, beating after each addition. Stir in the vanilla. Whip the frosting until light and fluffy. Set aside until ready to put cake together. To assemble the cake, start with the first layer on your cake stand/plate. Liberally brush the cake with the Rooibos chai syrup. Spread about ½ cup of the frosting on the cake layer. You want the icing to go all the way to the end. If you use more than ½ a cup, that's OK. Make sure you have enough icing left to cover the outside of the cake. If you put too much icing in the layers, it can also make it harder to stack the other layers on the top. Once icing is spread, add the next layer of cake and repeat. When the final layer of cake is on top, you can start spreading icing on the sides of the cake. You can choose to spread icing very lightly on the outside of the cake, to give it a 'naked' cake look. You can also decorate the top with a sprinkle of cinnamon, some star anise and cinnamon sticks. The cake will last for up to three days.
Make sure to cover the exposed cake with plastic wrap to prevent it drying out.

Having lost the opening day of the warm-up match against Zimbabwe to rain on Tuesday, South Africa won the toss on Wednesday and sent Aiden Markram and Ryan Rickelton in to open the batting. Batting first was always in the plans of coach Shukri Conrad, who emphasised after the rained-out opening day that the priority was to give the batters time in the middle while allowing the bowlers to rest. The new-ball pair took time to find rhythm, but Rabada eventually struck, removing Brian Bennett — a wicket that likely brought relief to the fast bowler, who remains under scrutiny following a recent drug ban. Though only a warm-up, attention was on Rabada's ability to hit his stride early, as he has done throughout his Test career. He bowled four overs, finishing with 1/18, while Jansen ended on 0/13. Lungi Ngidi (0/4) and Keshav Maharaj (0/4) followed, conceding just eight runs between them. At stumps, South Africa led Zimbabwe by 279 runs.

Photo: AFP In fact, Rickelton has two centuries in his last three Tests, and he will take on the Aussies with newfound confidence. That's due in large part to the 259 he scored against Pakistan in the New Year's Test in Cape Town this year. The 28-year-old now has 10 Tests under his belt since his debut in 2022, and seems to have firmly established his place at the top of the order. Having missed out on selection for South Africa's Test series against Australia three years ago, Ryan Rickelton will be keen to contribute significantly as he opens the batting for the Proteas against the old foe in the World Test Championship ( WTC ) final at Lord's, in London, starting next week. Rickelton Reflects on Dream Opportunity to Face Australia in England "Bygones are bygones. It's in the past. I just have a really great opportunity to play against Australia in England in front of my family. They'll all be there, and my friends as well. So, what a cool week that'll be, and if I can contribute with the bat and put in a performance, that'll make it even sweeter,' Rickelton told "I've always watched Australia since I was a young boy, and they've been such a dominant force in world cricket for a long time. So, this is a dream come true for me.' Rickelton's performances of late have seen previous opener Tony de Zorzi shift down the order, and the responsibility of opening alongside Aiden Markram is massive. "I'm a bit nervous; it's a new opportunity for me. It was a new opportunity to open the batting in the New Year's Test, let alone the final against Australia. But, in saying that, I just want to bat, so if that's where I need to do my job, then hopefully I can prepare accordingly and try to set the game up for the team and dig in for a period of time. "With a new ball, generally it requires a bit of searching, which offers up some runs, so hopefully I can do myself justice and face a lengthy or a good sum of balls and back myself. Boyfriend of slain Soweto woman remanded in custody after body found under bed

The community of Protea South, Soweto, is demanding justice following the murder of 20-year-old Ithabeleng Motleleng, allegedly by her boyfriend. The body of Ithabeleng Motleleng (20) was discovered by her family and police in Protea South, Soweto, on Friday, 30 May, after she had been missing for about a week. Her body was wrapped up and tucked under the bed in the shack she shared with her boyfriend, Zacharia Nonyane (27). 'I last saw her on Sunday [25 May]. She was [coming] from the mall where she said she was sent by her boyfriend to buy some KFC,' said Motleleng's mother, Francina Nyedimane (56). She said that the following morning, Nonyane came to her home and asked where Motleleng was. Nyedimane said maybe she was at a computer class at a nearby hall. On Tuesday, Nonyane came to the house again and asked where Motleleng was. Family members told him that he should know Motleleng's whereabouts, as they lived together. 'On Wednesday, he called, and when he called, he was fighting on the phone. He then told me that he last saw my daughter on Monday and he kicked her out because they had a fight,' said Nyedimane. 'I then asked him to post her in the local group as a missing person. I told him that if I get nothing on the post comments, I will go to the police station and report her as a missing person, and he said that's fine. 'When police came to question him on Monday, he fled. Then on Friday morning, I went to him and asked him why he was running away from the police after our agreement.' Nyedimane said Nonyane told her that he ran away because he had outstanding matters with the police. Nonyane was arrested on Friday after the police searched his shack and made the shocking discovery. 'My daughter was naked when we found her. When I asked the accused where her clothes were, he told me that they were drenched in blood, so he sent them off with the waste truck,' said Nyedimane. 'He did not say why he killed my daughter. He just kept saying sorry.' Nyedimane burst into tears and said, 'This boy has separated my daughter from her two-year-old child. Next year, when others celebrate Mother's Day, my daughter will be lying in her grave.' Motleleng's sister, Nthabiseng Nyedimane, said, 'We are deeply hurt as a family. We did not deserve this. Our sister did not deserve this. We want justice for her.' Court hearing Nonyane's first appearance in the Protea Magistrates' Court, on Monday, 2 May, was postponed. A court official told the community members who attended to support the family and demand justice that an outstanding procedure had to be concluded. When Nonyane appeared in court again on Tuesday, he denied having any previous convictions or that there were any protection or restraining orders against him The magistrate, Tshepiso Maepa, advised him that he was charged with a Schedule 5 offence and would not be granted bail unless an application for consideration of bail was made to the court. He was remanded in custody until 6 August. Community members have alleged that Nonyane committed other heinous crimes. In response, police spokesperson Colonel Dimakatso Nevhuhulwi said, 'The suspect in the Protea case [Nonyane] currently does not have any [other] cases against him, but the investigation team is still profiling him.' Protesters target mother Community members protested on Monday outside the clinic where Nonyane's mother, Oralia Nonyane (55), works. They demanded she be fired and that her family be evicted from Protea South. They partially burned her son's shack, which is on the opposite side of the street from his family's home. A woman who was renting a portion of the shack, had to hurriedly pack her belongings and leave the area as she feared for her safety and that of her baby. Soon after she left, the rest of the shack was dismantled. Oralia Nonyane insisted she knew nothing about her son's deeds. She added that her own daughter was suffering abuse at the hands of her boyfriend, and that she had a protection order against him and was begging her daughter to walk away. 'I can't defend wrong. I myself asked him if he did it, but his response was, 'Mama, I'm sorry.' I said, 'If you killed her, you are cruel,'' said Nonyane. DM
