Rania Harris is continuing her salad series for spring! She's showing Katie O'Malley has to mix up a Curried Chicken and Couscous Salad.
Curried Chicken and Couscous Salad

Ingredients
Curried Couscous:
1 ½ cups water
1 teaspoon curry powder
One 1-inch piece fresh ginger, grated
2 teaspoons olive oil
1 cup uncooked plain couscous
Curry Yogurt Dressing:
1/3 cup plain yogurt
¼ cup chopped fresh cilantro
3 tablespoons mayonnaise
¼ - ½ cup mango chutney (the amount of chutney is a matter of taste – I like a lot of chutney in my dressing)
1 teaspoon curry powder
½ teaspoon ground ginger
2 tablespoons water
Salad:
12 ounces cooked boneless and skinless chicken breast, chunked
1 ¼ cups halved red or green seedless grapes
1 ¼ cups diced fresh pineapple (use drained canned if you cannot find fresh)
1 ¼ cups diced fresh mango
1 cup chopped celery
2 heads Boston lettuce, leaves separated
¼ cup chopped green onions
To make the couscous: Bring the water, curry powder, ginger, and oil to a boil in a small saucepan. Add the couscous; remove from the heat and let stand, covered, until the water is absorbed and the couscous is tender, about 5 minutes. Transfer the couscous to a large bowl and fluff with a fork to separate the grains; place in the refrigerator for a few minutes to chill slightly.
To make the dressing: In a small bowl, whisk together the yogurt, cilantro, mayonnaise, chutney, curry powder, ginger, and water until blended. You can also make this in the food processor. Pour over the couscous; toss to evenly coat.
To assemble the salad: Add the chicken, grapes, pineapple, mango, and celery to the couscous mixture; gently toss to mix and coat. To serve, line each of 4 plates with 3 lettuce leaves and divide the couscous mixture among the plates. Sprinkle each serving with 1 tablespoon green onions.

(Photo Credit: KDKA) Thumbprint Cookies Makes approximately 100 cookies 2 ⅔ cups unsalted butter, room temperature 1 ⅓ cup sugar 8 eggs, separated (egg yolks in one bowl, whites in another) 4 teaspoons pure vanilla extract or vanilla bean paste zest of 2 oranges 2 teaspoons kosher salt 6 cups flour 3 cups finely chopped pecans (or walnuts) Stonewall Kitchen Jam of your choice Preheat oven to 350° and line baking pans with parchment paper. Beat butter and sugar in the bowl of a stand mixer fitted with a paddle attachment until light and fluffy, about 2 minutes. Add egg yolks, vanilla, orange zest and salt. Beat until well combined. Add flour on low speed until blended. Beat egg whites in a small bowl until frothy. Place finely chopped pecans in a shallow bowl or pie plate. Use a small cookie scoop (2 teaspoons), roll dough into balls, dip into egg whites and roll into nuts. Place on prepared cookie sheet. Make an indentation on the top of each cookie with your thumb or the stick of a wooden spoon. Bake for 10 minutes. Remove from oven and make indentation again. Place ½ teaspoon jam into each indentation. Bake an additional 5-7 minutes, or until lightly browned. Remove from oven and allow to cool on baking sheet for 5 minutes, then move to cooling rack to cool completely. Chocolate Caramel Cracker Bars Makes about 3 dozen bars For the cracker layers: 48-64 butter crackers (rectangular), divided For the caramel: 1 cup graham cracker crumbs ⅔ cup sugar ½ cup packed brown sugar 1 stick unsalted butter (8 tablespoons) ¼ cup milk pinch of salt For the frosting: ½ cup creamy peanut butter ⅓ cup chopped semisweet chocolate ⅓ cup butterscotch chips For the topping: ⅓ cup dry-roasted peanuts, chopped Coat a 9x13 baking pan with nonstick spray. For the cracker layers: Arrange half the crackers to cover the bottom of the pan. Spaces between the crackers are ok, just don't leave any gaping holes. Nonstick spray will keep any caramel that seeps through from sticking to the pan. Set pan aside. For caramel: Boil graham cracker crumbs, sugar, brown sugar, butter, milk and salt in a saucepan over medium-high heat until sugar melts, about 3 minutes. Stir constantly to prevent scorching, Pour caramel over crackers and spread with an offset spatula to cover evenly. Don't worry if caramel seeps between crackers, the bars will be fine. Top caramel with remaining crackers, arranging them in the same manner as the first layer. For the frosting: Melt peanut butter, chocolate, butterscotch chips in a small saucepan over medium-low heat until smooth. Drizzle over crackers and spread with an offset spatula. For the topping: Sprinkle peanuts over chocolate and chill bars until set about 2 hours. Cut bars lengthwise into 2 ¼ inch wide strips using a bench scraper or chef's knife. Remove strips from pan, then cut at a 45° angle to form diamond shapes.

(Photo Credit: KDKA) Beer BBQ Shrimp Leinenkugel summer shandy bbq sauce grilled corn cucumber salad Grilled Corn & Cucumber Salad grilled corn - 1 cup red onion julienned fine- 1/4 cup cucumbers quartered, seeded and diced- 1/2 cup cherry tomatoes quartered- 1/2 cup apple cider vinegar- 3 tbsp sugar- 2 tbsp basil chopped- 2 tbsp paprika- 2 tsp salt - 2 tsp pepper- 1 tsp Leinenkugel Summer Shandy BBQ Sauce Leinenkugel summer shandy - 1 bottle/can sweet baby rays bbq- 2 cups honey- 3 tbsp 1. heat beer to cook off the alcohol (bring to a simmer and cook for 5 min) 2. add bbq sauce, and honey simmer to incorporate flavors Watermelon & Cucumber Salad watermelon, cucumber, heirloom tomato, feta , lemon basil vinaigrette Salad Recipe cubed watermelon cubed cucumber cherry heirloom tomatoes cut in half crumbled feta sea salt cracked pepper 1. Place cubed items in a checkerboard pattern alternating randomly 2. dress with vinaigrette drizzled over the top 3. finish with crumbled feta cheese. cracked pepper and sea salt Honey Dill Vinaigrette Recipe white balsamic vinegar- 1/2 cup fresh orange zest & juice- 1 each honey- 2 tbsp fresh dill- 1.5 tbsp dijon mustard- 1 tbsp chopped garlic- 2 tsp olive oil- 2 cups s&p - to taste 1. In a mixing bowl combine all ingredients except the oil 2. mix vigorously to incorporate all ingredients 3. slowly pour the oil into the base to emulsify (the vinaigrette should slowly thicken as you add the oil. 4. check the seasoning and add the desired amount of salt and pepper
