The cookbook ‘Pakistan' serves up recipes for mutton pulao, garlic chutney and sweet seviyan
A mainstay at the Eid al-Fitr table of Maryam Jillani's grandmother, Kulsoom, was mutton pulao, an aromatic rice dish prepared in a gently spiced bone broth. It's both comforting and celebratory — and can be absolutely revelatory when paired with a sharp condiment like a garlic chutney.
Dessert included seviyan, sweetened vermicelli noodles simmered in spiced milk.
Here are recipes from J illani's cookbook, 'Pakistan,' for the mutton, chutney and seviyan:
Mutton Pulao (Aromatic Rice with Mutton)
Serves 6 to 8 as a main course
Ingredients:
About 3 pounds bone-in mutton, lamb or beef, cut into 1- to 1 1/2-inch pieces
4 medium yellow onions, halved and thinly sliced
4 whole cloves
2 black cardamom pods
One 2-inch cinnamon stick
1 tablespoon cumin seeds
2 tablespoons garlic paste
2 tablespoons salt, or to taste
1/3 cup vegetable oil
3 cups basmati rice, rinsed in several changes of water
Directions:
Fill a large pot with 8 to 10 cups water. Add the mutton, half of the onions, the whole cloves, cardamom pods, cinnamon stick, cumin seeds, 1 tablespoon of the garlic paste, and 1 tablespoon of the salt. Cover the pot with a tight-fitting lid. Bring to a boil over high heat, then lower the heat to maintain a gentle simmer. Cook the mutton for 1 to 2 hours, depending on the quality of the meat, until it is tender. With a slotted spoon, remove the meat. Strain the solids from the liquid, return the liquid to the pot, and place it by the stove. Discard the solids.
In a clean, heavy-bottomed pot, heat the oil until it begins to shimmer. Add the remaining onions and fry on medium-low heat for 12 to 15 minutes until they are a deep golden-brown color. Take care to not let them burn. Stir in the remaining garlic paste and cook for 30 seconds to 1 minute, until the mixture no longer smells raw.
Increase the heat to high and add the mutton and remaining 1 tablespoon salt. Sear the meat, 5 to 7 minutes, until it has browned slightly. Pour in 6 cups of the strained mutton broth (put any leftover broth in airtight containers and freeze for later use). Taste and add more salt as needed. Bring to a boil, then lower the heat to maintain a simmer. Carefully pour in the rice and let cook for about 10 minutes until the water completely evaporates.
Wrap a tight-fitting lid with a clean kitchen towel and place it securely on the pot. Turn the heat to the lowest possible setting and let the rice steam for at least 10 to 12 minutes until fluffy. Carefully transfer the pulao to a serving platter and fluff with a fork.
Lahsun ki Chutney (Garlic Chutney)
Aida Khan, a London-based entrepreneur and chef, shared her mother's recipe for this vibrant, punchy lahsun ki chutney. Its very spicy, so a little goes a long way. Refrigerate this chutney in an airtight container for up to two weeks.
Makes 1 cup
Ingredients:
4 heads garlic, cloves separated and peeled
1 1/2 small red onions, roughly chopped
1/4 cup red chile flakes
1 bird's eye chile (optional)
1/2 cup vegetable oil
1 teaspoon salt, or to taste
2 teaspoons lemon juice
Directions:
In a food processor, combine the garlic, onions, chile flakes, and bird's eye chile (if using), and blitz until you have a thick paste.
In a small saucepan, heat the oil over medium heat until it shimmers. Add the garlic and onion paste and salt. Bring it to a simmer, cover the pan, and reduce the heat to low. Cook the chutney for 35 to 40 minutes, stirring occasionally to make sure it doesn't stick to the pan, until the garlic and onions have caramelized and the chutney's color deepens.
Remove the pan from the heat. Stir in the lemon juice and serve.
Seviyan (Sweetened Roasted Vermicelli)
Serves 12
Ingredients:
1/4 cup ghee
6 green cardamom pods, cracked
5 1/2 ounces seviyan (semolina vermicelli)
8 1/2 cups full-fat milk
3/4 cup sugar
2 tablespoons blanched sliced almonds
In a heavy-bottomed pot over medium heat, melt the ghee and heat it until it begins to shimmer. Add the cardamom pods and fry for about 30 seconds until fragrant. Add the seviyan and fry over medium heat for 2 to 3 minutes until browned slightly. Gradually pour in the milk and bring the pudding to a boil. Lower the heat to medium and stir in the sugar until it dissolves. Keep the milk at a gentle simmer and cook for 15 to 20 minutes, stirring continually, until the milk thickens but the seviyan still has some bite.
Transfer the seviyan to a serving bowl. Top with sliced almonds. Let it cool to room temperature before serving. To store, transfer to an airtight container, refrigerate, and use within 2 to 3 days.

Carbondale City Hall foyer to get facelift, display donated historic items
Carbondale native Frank 'Chauncey' Zazzera donated four handmade models of historic Carbondale buildings to the city to honor his late best friend and share the history of his hometown. While the 81-year-old who now lives in Fell Twp. hoped the city would display the replicas — the former Carbondale viaduct, a Delaware and Hudson Gravity Railroad roundhouse that was once in the city, Our Lady of Mount Carmel Church and the Pugliano building at Enterprise Drive and Dundaff Street — his donation inspired a renovation project to give Carbondale's 130-year-old-plus City Hall a revitalized foyer. The replicas were all handcrafted by fellow Carbondale native Harold Ort, and Zazzera donated them to the city in honor of his longtime best friend, Roy Miley of Carbondale, who died in 2023. 'I'd just like the people of Carbondale to really enjoy it. I just don't want them to stay in my attic. Who's going to see them up there?' Zazzera said. Main St. is a Romanesque Revival-style brick and bluestone building that has been on the National Register of Historic Places since 1983, according to a building study in January by Martina Bacarella Architect, a Scranton-based architecture studio. 'I thought that'd be a great way to show off our history, but at the same time, make it an elegant piece of the building.' The city is also in the engineering phase of a project to upgrade its police station, which is in City Hall, including upgraded workstations for officers and enhanced security, she said. For interior design, a local woman, Lynn Wallis, toured the foyer and gave the city suggestions for color palettes, furniture and displays. Adams Cable donated large, framed prints of historic Carbondale scenes to display; Councilman Walter Martzen refurbished and re-plastered a water-damaged wall; city zoning and code enforcement officer Doug Calzola, who is also a contractor, is overseeing the project; residents Margie Famularo and Marjanie Hellman provided technical assistance and support; and inmates from SCI Waymart are painting the interior, Bannon said. After Ort died in 2018, Zazzera and his late best friend, Miley, approached Ort's wife to buy some of the buildings from his collection. When Miley passed away in 2023, Zazzera reached out to the Carbondale Historical Society about donating the items, but with the society tucked away on the third floor of City Hall, he hoped more people could see them, prompting him to contact Bannon. 'I want them someplace that people could see and appreciate what this is,' he said. The displays will be in memory of Miley while crediting Ort for making them, Zazzera said. In the future, Bannon wants to seek grant funding to address City Hall's exterior, with the largest expense being to replace its single-pane windows, which are original to the building. Several years ago, the city received an estimate that replacing the windows would cost nearly $1 million, she said. 'How can we expect developers and investors and existing business owners to make improvements in their properties if we're not willing to do them in ours?' Bannon said, emphasizing the need to use grants, donations and volunteerism to avoid overburdening taxpayers. My partner and I lived long distance for 5 years. It gave me the space I needed.
A bad breakup a month before my planned wedding in my early 20s left me afraid of commitment. My now-husband and I lived on opposite sides of the Atlantic for five years while we dated. The physical space helped me ease into the relationship and the idea of long-term commitment. My husband and I got married last June in a simple ceremony at New York City Hall. A week after our wedding, he went back to his home in London, and I stayed in mine in New York. We'd been together for five years when we got married, during which time we always lived on opposite sides of the Atlantic. We recently moved in together only after we'd been married for seven months, but having that literal space in our long-distance relationship was something that really worked for both of us. I'd almost gotten married in my early 20s, calling off the wedding just a month before the big day. Canceling a fully-planned wedding is difficult enough, but the experience of breaking up with someone I had thought I'd spend my life with was traumatic, and left me with serious commitment issues. In the following years, I still longed for partnership, but it became evident that I had a commitment phobia when every relationship I got into ended up tanking pretty quickly. I often chased unavailable men who wouldn't commit, subconsciously sparing myself from having to make an actual commitment myself. I first met my now-husband when he came to New York for work, about seven years after I'd called off my wedding. He was only in town for a week, but we developed feelings for each other. Our relationship didn't begin in earnest until some years later when I went to visit him in London, though we kept in touch sporadically via email. Various complications kept us from trying sooner, but I think subconsciously we were waiting to be truly ready for each other. After we decided to be in a long-distance relationship, the idea of living together, or even being on the same continent, wasn't part of the conversation for many years. People talk about needing space in a relationship, but this kind of literal space allowed both of us to ease into the idea of partnership. We supported each other emotionally, video chatting at least twice a day and checking in regularly via text. My flexible freelance schedule, which also involved some European travel, allowed us to see each other at least every other month for most of the next five years. This space also meant that we didn't have to adjust our schedules or priorities right away. We were free to keep doing our own things, albeit with love and encouragement from the other person, gradually easing into the idea of lifelong partnership. When we could see each other, it always felt special, and airport reunions became a cherished part of the relationship ritual. We'd usually spend about a week together, sometimes two, whenever one of us could make the trip across the sea. We both loved London and New York, and were always eager to take the other person to our favorite places. Sometimes we'd meet in Ireland, where he's from, or Michigan, where my family lives. The honeymoon phase of our relationship went on this way for years. I'd even go so far as to say we're still in it. Because of the five-hour time difference, we developed a sweet ritual of sending each other love letters every day. I'd write mine before I went to bed in New York so he'd receive it when he awoke in London, and he'd write his to me after he got up, before the sun would rise on my side of the Atlantic. It's a powerful practice to intentionally lift your partner up this way, every day, letting them know how much you admire them and how important they are to you, and to receive that kind of affirmation in return. Like any relationship, there were challenges, but ours were mostly logistical. It can be heartbreaking when you feel like you really need the other person, and they're not physically there, or may be asleep in a different time zone. I was lucky that work travel brought me to Europe several times a year, but that wasn't always the case, and buying regular international flights was expensive for both of us. When we did visit with each other, one of us would likely be in work mode while the other was in vacation mode. Because of the expense of our circumstances, neither of us could afford to just take a week off to be together. Not to mention, a pandemic prevented us from seeing each other for a full year. We got through all of this, though, and rarely had emotional conflicts or experienced jealousy. I think that's part of what made us both realize that we had developed true intimacy. Having a long-distance relationship for as long as we did melted away the anxieties I once had about commitment. Living together was a surprisingly easy transition, and it still feels really special to see each other daily. Kennebunk mourns loss of Shiloh Schulte: 'He's the kind of person you want in the world'
KENNEBUNK, Maine — As the community mourns the death of Shiloh Schulte, one of its most liked, respected, and dedicated citizens, there is one word that Select Board member Kortney Nedeau says describes the loss. 'It's immeasurable,' Nedeau said. 'It's just such a shock. He was the kind of person you want in the world.' Schulte, 46, died in a helicopter crash while conducting conservation work in Alaska on June 4. As outpourings from the community have shown, the former chair of the Kennebunk Select Board will long be cherished and remembered as a kind, energetic, and generous man who was devoted to his family, dedicated to his hometown, and passionate about celebrating and protecting nature, especially its birds. On social media, for example, Nedeau provided a heartfelt example of Schulte's impact as a community member and his ability to inspire others. She said Schulte was one of the reasons that she ran for a seat on the Select Board five years ago. 'He was encouraging, courageous, genuine, even-tempered, and fair,' Nedeau wrote in a post. 'It was such an honor to serve the town of Kennebunk in such a thankless job with someone who understood our work was above ourselves ... He was so humble, insightful, and honest.' Nedeau expanded on Schulte's character during an interview. 'He was unassuming,' she said. 'He was always listening first and was the last to speak. He always rose to the occasion. He always showed up.' And his impact went well beyond Kennebunk, Nedeau noted, so much so that she imagined that the duties of small-town government and community volunteering must have been a 'piece of cake' when compared to the hard work he accomplished throughout the world. Among his contributions, Schulte coordinated the organization's American Oystercatcher Recovery Program and is credited with helping to rebuild the presence of that large shorebird – once believed to be completely out of existence locally – by as much as 45%. Nedeau said she and her colleagues on the Select Board would always know where Schulte would be come summertime as they worked out their meeting schedule for June, July, and August. Schulte, she said, would always tell them, 'I'll be in a tent, in the Arctic, unreachable – so do whatever works best for you guys.' Indeed, with June here, Schulte was in Alaska, pursuing his passions, fulfilling his commitment to protecting nature, and meeting his responsibility to future generations. 'Shiloh gave his life in the service of something greater than himself, dedicating himself to preserving the natural world for future generations," Manomet Conservation Sciences said in a statement announcing the tragedy. Schulte also was an avid and accomplished runner, who became the top Maine finisher of the Boston Marathon in 2019, completing the race in two hours and 39 minutes, according to the Dirigo Run Club, to which he belonged. In a social media post, the club described Schulte as 'known to always have a smile on his face' and as a 'fierce competitor.' Schulte served on the Kennebunk Select Board for a few years before ascending to the chair in the summer of 2022. Nedeau nominated him for the post, praising him as someone who knew how to lead a meeting, and who had a 'really great way about him to move things forward, regardless of where he is on the spectrum of an issue.' Schulte succeeded longtime Select Board member Blake Baldwin as chair. Anyone who followed the Select Board meetings during Baldwin's tenure could see the respect and esteem Baldwin had for Schulte and for the contributions he made to the discussions and hard decisions about town issues. 'He was the cool head that calmed troubled waters,' Baldwin said during a phone interview. 'For that, I was grateful to have him on the board, not just as a colleague but as a friend.' A GoFundMe page has been set up to support Schulte's family, including his wife and their two daughters. The GoFundMe campaign has a goal of $45,000. By the early afternoon of June 9, a total of $39,062 already had been raised. On the GoFundMe page, Schulte's family also refers to his passion for the natural world, describing him as an explorer of forests, wetlands and birds since an early age. Importantly, though, Schulte was more than a scientist, his family says on the fundraising page. 'He was a devoted husband and father, a loving son and brother, a generous neighbor, and a pillar of his community,' they said. 'Shiloh gave his all – always with a warm heart and a boundless energy.' In his interview, Baldwin also spoke of what Schulte was and always will be, not just to him, but to others. He spoke of Schulte's compassion for other people. In describing the impact that Schulte had, Baldwin referred to one of the most beloved movies of all time, 'It's a Wonderful Life.' In that Christmas classic, Clarence, the angel who is trying to earn his wings, explains to George Bailey, who wished he had never been born, what happens when people lose someone they love. Some people leave a big hole, Clarence said. Some people are part of your soul, Baldwin said, and when they are gone, 'they leave a big hole.' Said Baldwin, 'Shiloh is one of those people.'
