Eating just three spoonfuls of brown rice every week could raise your risk of brain damage and cancer, a report suggests.
Researchers at Healthy Babies, Bright Futures — a pressure group for infant health — tested more than 200 samples of rice bought from popular grocers like Trader Joe's, Whole Foods and Safeway.
Each was tested for inorganic arsenic, a more toxic form of the element linked to a higher risk of neurodevelopmental delay, cancer and heart problems.
All rice types tested — brown, white, basmati, sushi and jasmine — were found to contain the toxic substance, but levels were highest in brown rice on average.
An uncooked brown rice brand sold by major grocer Smart and Final was found to have the highest levels of inorganic arsenic at 201 micrograms per kilogram.
The findings suggest that for the average adult, eating just two-and-a-half tablespoons per day would lead someone to exceed their maximum safe levels set by the Environmental Protection Agency (EPA).
The USA Rice Federation, which represents rice growers, noted that arsenic in food was 'alarming' but argued there was no public safety issue.
This is likely because cooking rice in water removes up to 66 percent of the arsenic they contain, while washing them two to four times in tap water can remove up to 84 percent of arsenic present.
Nearly all the samples were found to contain three other heavy metals linked to neurodevelopmental delay — lead, cadmium and mercury — but at much lower levels.
The EPA has set a recommended limit of exposure to inorganic arsenic at 0.06 micrograms per kilogram of bodyweight, or 4.8micrograms per day for the average US adult who weighs 176lbs (80kg).
For comparison, the uncooked brown rice contained 201 micrograms of inorganic arsenic per kilogram — more than 40 times higher than the recommended daily limit.
It means that to stay within the safe limit, an adult could eat no more than 23.9 grams of this rice per day — roughly three tablespoons of uncooked rice.
The EPA's limit was set based on studies that showed the minimum safe level to avoid heart disease or diabetes.
Inorganic arsenic can contribute to the development of heart disease via causing inflammation within the heart and blood vessels, studies suggest. Research has also indicated that it raises the risk of suffering from cancer, with the EPA considering the element a 'human carcinogen'.
Inorganic arsenic differs from organic arsenic because it is more likely to be absorbed into cells, where it can cause damage.
About three-quarters of the arsenic found in the rice products were inorganic, though levels varied depending on the product.
Overall across all brands tested, the researchers found that uncooked rice contained about 85 micrograms of arsenic per kilogram.
The researchers also tested 66 samples of rice alternatives, such as couscous, quinoa and faro, finding the levels of heavy metals in these were 69 percent lower on average.
All the rice samples tested in the research were uncooked, with the team noting that cooking rice in water would reduce heavy metal levels.
This is because up to 66 percent of arsenic leaches out of the grains when they are cooked in boiling water and the water is drained away, according to a 2019 study.
An additional 13 to 84 percent of arsenic can be removed from rice by washing it before cooking.
The report's authors recommend cooking rice in a pot with six to ten cups of water per cup of rice, to remove the most arsenic.
The USA Rice Federation said: 'We know that arsenic in food is alarming for many consumers and that you may have questions,' a spokesperson said.
'And while we do not agree that there is a public health safety issue as a result of trace amounts of arsenic in rice, we will continue to work with the FDA to ensure the US rice supply meets any threshold established.'
For the report, researchers purchased more than 200 rice containers from 20 major metro areas across the US — including New York, Los Angeles and Washington DC.
Overall, brown rice contained the most arsenic with an average of 130 micrograms per kilogram.
The second highest levels were detected in Arborio, or risotto, rice from Italy, which contained about 100 micrograms of arsenic.
White rice had the third highest level, at just below 100 micrograms per kilogram, followed by Jasmine rice from Thailand, at about 80 micrograms.
Indian basmati rice and sushi rice grown in California had the lowest levels of the rice tested on average at about 60 micrograms.
Roughly three-quarters of the arsenic detected in all the rice brands was inorganic, the report suggests.
As part of the research, the organization also tested 66 samples of nine alternative grains like quinoa, faro and barley.
These were found to contain 33 micrograms per kilogram of arsenic on average, well below the levels in the average rice.
Results also showed they contained 69 percent less heavy metal contamination than rice, on average, making them safer substitutes.
The researchers indicated these foods could be better to eat, but noted they were also much more expensive.
As a compromise, they suggested people should try to eat rice with lower levels of arsenic — such as California-grown, Thai jasmine and Indian basmati rice.
The highest levels of arsenic were detected in brown and white rice grown in Southeast US or labeled simply as 'USA' and in Arborio rice from Italy.
A saffron-seasoned rice was also found to contain lead levels up to 32 times higher than the average for other samples.
Rice is one of the most popular grains in the US, consumed by more than 257.7million people with the country eating 4.9million metric tons per year — equivalent to about 15 Empire State buildings.
But it tends to contain more heavy metals because it is grown in water-logged paddies, where it can easily absorb them from its surroundings.
Arsenic is a naturally occurring element found in the Earth's crust, that can exist in both organic and inorganic forms. Scientists are more concerned about inorganic arsenic because this is more readily absorbed into cells, where it can cause damage.
It can be released into the environment through mining and smelting metals, or via pesticides, burning coal and incinerating waste.

When Carissa Klundt visited a chiropractor to fix her sore back she never expected the healing therapy to almost kill her. The mom-of-three from Las Vegas decided to start treatments after suffering back and chest pain as a result of a breast implant removal surgery four years prior. She had attended three appointments and had no issues before a substitute practitioner stepped in to perform her spinal adjustments on the fourth. Carissa, 41, was immediately concerned when she felt a sharp pain in her neck after the female chiropractor performed one particular cracking procedure. While she experienced pain after the appointment, Carissa brushed it off as a 'strained muscle' until her husband, Cassidy, insisted she visit the hospital when she began 'blacking out'. There, doctors confirmed that Carissa had suffered a tear in the inner lining of the vertebral artery - a condition known as a vertebral artery dissection (VAD) Vertebral artery dissection (VAD) is rare, with an estimated incidence of just one in 100,000 people annually. Doctors warn chiropractic neck manipulation heightens the risk of VAD, and it is estimated that one in 20,000 spinal manipulations results in the condition. The holistic practitioner was rushed to the intensive care unit at a specialist hospital as medics feared the VAD could trigger a stroke. After she was discharged, Carissa had a long road to recovery, facing constant pain, and mobility issues. While she didn't suffer a stroke, the mom says she was diagnosed with the communication disorder aphasia, due to reduced blood flow to the brain from the torn artery. The condition impairs a person's ability to express and understand language, whether spoken, written, or signed. Adamant her visit to the chiropractor in November 2022 nearly cost her her life, Carissa is warning others to be wary of the alternative medicine. Detailing what originally led her to visit a chiropractor, she said: 'I went to my chiropractor because I'd been having a lot of strain in my chest and my back and a friend had recommended one. 'I had breast implant illness (BII) and after my 'explant' all of my symptoms went away that year. 'My body had kind of protected me so my muscles got really tight. It was such a huge surgery, the muscles tightened, it was really painful.' After visiting a chiropractor to help relieve some of her symptoms, Carissa felt a sharp pang of pain in her neck during her fourth session. Carissa said: 'As soon as it happened, I knew something was wrong. You do hear a crack anyway when you get an adjustment but I knew something had gone wrong. 'There was a pain in my neck. I got home and felt like I was going to throw up. 'I had no idea a VAD could even happen. Because I work in health, fitness and wellness, I was active after [the appointment]. I was teaching classes, I went to a salon - I did everything wrong. 'A few weeks after seeing the chiropractor, I was seeing things and blacking out and my husband said 'we're taking you to the ER'.' After undergoing a CAT scan, doctors told Carissa that she had suffered a VAD and transferred her to an ICU at a specialist hospital. Carissa said: 'I knew straight away that it was from the chiropractor - that's where the pain all started from. 'They said I could've had a stroke. If I hadn't gone to hospital, I would've had a stroke. 'I could've so easily died. It traumatized my whole family. 'For the first month I was pretty much in bed. I was exhausted, sleeping for 17 hours a day. I needed help walking. I was in constant pain.' Carissa says her life was put on pause after suffering the artery tear and is now spreading awareness of the signs and symptoms of the life-threatening condition. Touching on her health status years on, she concludes: 'I still have lingering symptoms now - it's a whole lifestyle change. I'll never ski again, I'll never go on a rollercoaster, I'm not teaching classes anymore. 'There's still a residual fear of it happening again. I'm doing well now but it's been a long recovery process. 'My life was really put on pause. I absolutely regret going to the chiropractor. It's not about blaming anyone, it's just about spreading more awareness. 'I want people to understand what the symptoms are and that this is a life-threatening condition. 'I never thought anything like this could happen to me. I was healthy, active and deeply in tune with my body.'

Experts have raised the alarm over a bizarre new side effect linked to weight-loss jabs - dubbed 'Ozempic hands '. The term refers to the thinning, almost skeletal appearance of the hands and fingers reported in some people on drugs such as Ozempic, Wegovy and Mounjaro. As the treatment triggers rapid fat and muscle loss across the body, subcutaneous fat is also stripped from the hands - leaving bones, veins and tendons more prominent. The phenomenon was recognised when the jabs first began to be widely used, and some patients reported needing to have wedding and engagement rings resized as their fingers slimmed down, along with their waistlines. Now the trend is back in the spotlight after viral social media videos highlighted how the hands of certain celebrities appear to have changed dramatically over the years. These have prompted a wave of online speculation about whether it might be an effect of weight-loss injections. One clip, which has been viewed over three million times, focused on reality TV star Khloe Kardashian, comparing images of her hands recently and a decade before. While the creator of the video didn't speculate as to the cause, social media users were quick to suggest it was due to blockbuster weight-loss drugs. Clips on social media have compared Khloe's hands to images taken of the reality TV star in 2012, like this one. Khloe pictured here at the The X-Factor Finalists party that year 'It's Ozempic. My hands did that too,' commented one. Experts speaking to MailOnline explain that fat loss to the hands can happen with any version of the drug, including Wegovy and Mounjaro. Pharmacist and nutritional therapist Deborah Grayson, known as The Godmother of Pharmacology on TikTok, said: 'Ozempic hands is the visible thinning of fingers that can occur during rapid weight loss. 'As with weight loss in general, fat loss doesn't happen evenly across the body. 'The hands, which naturally have very little fat to begin with, can appear bonier or slimmer as a result. 'It's not a side effect of the medication itself, but rather a visual consequence of rapid fat loss.' She added that it wasn't harmful, however the change would be permanent - unless the patient regained weight. Cosmetic treatments such as injections of fillers to 'plump' and rejuvenate the hands may be one remedy, however these are specialist procedures and cost many hundreds of pounds. GP Dr Donald Grant, a senior clinical advisor at The Independent Pharmacy, also said Ozempic hands or fingers was nothing to medically be concerned about. But he added that patients on the drugs should still keep an eye on potential side effects and seek advice from their GP if needed. 'Should people experience increased side effect intensity or different reactions to the treatment, people should visit their GP, who can provide further advice,' he said. 'Anyone concerned about the amount of weight they're losing should also seek urgent medical attention.' In the TikTok clip that sparked the new discussion of the side effect, a woman posting under the name 'atruthforyou' compared images of Khloe Kardashian's hands from 2012 to a picture taken in 2022. In the latter, the star's fingers are noticeably thinner and appear longer. 'These are her hands today, like how, what is going on here?' she asked. In a follow up video on Instagram she continued: 'You're telling me this hand transformation is just from weight loss? Guys come on.' Some commentators said the hands looked like those of 'vampires', with one adding: 'Got them Nosferatu hands!' Khloe Kardashian hasn't said she has used a weight-loss jab but previously did say she would have tried them when she was attempting to lose weight in her younger years. In comments last year the 40-year-old said: 'When I was bigger, if they had Ozempic, I probably would have tried it, because I tried any other thing. 'I tried any fad weight-loss trend, except for the real thing that actually works, and that's a lifestyle change.' Other stars who have confirmed they are using weight-loss jabs also appear to have thinner hands. These include talkshow host Oprah Winfrey, and TV personality Sharon Osbourne. Oprah, 71, revealed she lost more than three-and-a-half stone with the help of a weight-loss jab to help reach her goal weight of just under 12stone. The star weighed almost 17st at her heaviest. Sharon, 72, disclosed earlier this year how she lose three stone in just four months while using Ozempic and now weighs just over seven stone. Another star with slimmer fingers is Misery and American Horror Story actress Kathy Bates, who has lost more than seven stone after turning to Ozempic. 'Ozempic hands' is just the latest in a series of side effects people have speculated A-listers may be suffering from. Another recent one to emerge is 'Ozempic feet' which refers to sagging or aging skin on the feet due to rapid fat loss that occurs while users are on the jabs. 'Ozempic feet' joins the likes of 'Ozempic face' and 'Ozempic butt', which are also caused by dramatic changes in body fat. While blockbuster weight-loss jabs help slimmers lose up to a fifth of their body weight in only a year, this can come at price. Earlier this year surgeons raised the alarm about the rising number of people suffering from issues with their body shape from rapid weight loss. Cosmetic procedures such as thigh lifts and tummy tucks have enjoyed a post-Ozempic boom, as people seek to rid themselves of 'melted candle' excess skin folds left behind after they slim down. While fat tissues shrink away, the skin - which has become stretched over time from a person being overweight - doesn't simply snap back. In extreme and rapid cases of weight loss - such as that which occurs in people using weight-loss jabs - surgery can be the only remedy for this excess skin. But it's not just a cosmetic issue; patients with excess skin can also suffer mobility problems and infections due to excess skin. And if they choose to fix the issue with surgery, they also face the inescapable risk of surgical complications including blood clots. The issue of the aesthetic aftermath of weight-loss jabs is only going to grow larger as the drugs are dished out to more and more people. About 4,000 patients a month are prescribed GLP-1 drugs on the NHS in the UK, with almost 350,000 patients receiving the medications in 2024, though additionally 500,000 are thought to be taking the drugs privately. And more could be on the way - as British GPs will be able to prescribe the jabs directly to patients from this month. This is a shake-up from the previous system which required patients to attend a specialist NHS weight-loss clinic to get the jabs on the health service. However, this will initially only be available for severely obese patients with multiple health conditions. But it is expected more patients will be able to get the jabs from their family doctor as restrictions are relaxed over the next three years. In the US, it is estimated about 13 per cent of the population - roughly 33million people - have tried the drugs at least once. While the injections have been linked to multiple health benefits that go beyond combating obesity, including a reduced risk of heart attack and stroke, other studies suggest that could also carry some risks. One recent study suggested they could raise the risk of a type of cancer that is surging in young people.
