Friends of Frog: Star Dublin chef Mickael Viljanen to cook in London at £350 dinner
The chef Adam Handling is to welcome Dublin star Mickael Viljanen for a four-hands dinner at Frog this month as the two put on a £350 menu.
Viljanen is the chef behind the two Michelin-starred Chapter One in the Irish capital, widely regarded as one of the best fine dining restaurants in Ireland.
He'll be in London for one night only and follows the first Krug Champagne-backed 'Friends of Frog' event with Angelo Sato of Humble Chicken.
Viljanen will join Handling for a seven-course dinner to showcase the UK and Ireland's best produce, including Cornish crab and wagyu beef.
A starter of scallops with black truffle, smoked eel and rye will precede wagyu with tandoor cauliflower and wasabi, as well as barbecued veal with veal sweetbreads, peas and Rossini Kaluga caviar.
There'll be snacks too and snacks from both chefs, while the finale will come by way of Handling's new chocolate shop.
Handling said the dinner is personal to him, as 'one of the most memorable meals of his life' came about at Chapter One in Dublin, and praised Viljanen's 'artistry, precision, and creative power in the kitchen'.
Other dinners are on the way as part of the series: Aktar Islam (Opheem, Birmingham) will cook on July 14, and Stephen McLaughlin (Restaurant Andrew Fairlie, Gleneagles) will be in town on July 21.
Tickets are £350 per person, excluding drinks and service.

‘Say Nothing' star Anthony Boyle on playing IRA activist Brendan Hughes: We ‘get to the humanity as opposed to the mythology'
Portraying a real person in Say Nothing was "a great honor," Anthony Boyle tells Gold Derby about his role as renowned Irish activist Brendan Hughes. "This one felt really special, because it was so close to home. I used to walk past the mural of Brendan Hughes coming back from school, and you'd hear folk songs about the guy." Say Nothing was created by Joshua Zetumer, based on Patrick Radden Keefe's acclaimed nonfiction book Say Nothing: A True Story of Murder and Memory in Northern Ireland. Set during the height of the Troubles, the nine-part drama follows Belfast sisters Dolours Price (Lola Petticrew) and Marian Price (Hazel Doupe) as they become deeply entangled in the IRA's militant campaign. At the center of the story is the 1972 abduction and murder of Jean McConville, a widowed mother of 10, through which the series explores the emotional and ethical fallout of political violence. I sort of based him off himself, obviously, and I've got an uncle called Snake who is really charismatic and really good at telling stories. You know, when you're with him in the bar, he's got this real magnetic quality. He pulls everyone, and he's got this real way speaking. I grew up in Belfast, and I would drink in the same bars that Brendan would drink in, and I know there's people that he knew," Boyle says. "This one for me felt like a very natural fit." The Northern Irish actor's performance has earned acclaim for its emotional depth, charting Hughes' journey from fervent idealist to a disillusioned figure haunted by the personal and political consequences of his actions. Boyle's layered interpretation adds profound weight to the series' examination of the human cost of political violence. "When someone dies, particularly if they're a soldier, they become mythologized and there's a sort of martyrdom around them, and there's murals of them on the wall, and they're painted and revered. And when I spoke with Josh Finan, who played Gerry Adams, it was about stripping a lot of that back," Boyle explains. "They're not paintings on the wall, they're real breathing people, and if we want to do them justice, if we want to do the story justice, you've got to bring it down and get to the humanity of them as opposed to the mythology of them." Fiserv buys out AIB Merchant Services

Payments processing giant Fiserv has agreed to buy out the half of Dublin, Ireland-based AIB Merchant Services that it doesn't already own, a Fiserv news release said Friday. The move to purchase that 49.9% ownership stake is intended in part to increase the foothold for Fiserv's small business focused point-of-sale service Clover, in Europe, the release said. The transaction is "focused on driving continued growth in Ireland and the broader European market," the release said. AIB Merchant Services (AIBMS) was created in 2007 as part of a joint venture with the Irish financial services company AIB Group. Milwaukee-based Fiserv will now take full ownership of the unit. Analysts at the financial firm Robert W. Baird estimated the AIB joint venture's annual revenue at between $250 to $280 million, with profit of nearly $80 million, according to a Friday note to clients. AIB Merchant Services provides payment solutions and merchant acquiring services, the release said. The business has become one of the largest payments software providers in Ireland and one of the biggest e-commerce acquirers in Europe, the release asserted. AIB Group will continue to refer customers who require merchant acquiring services to Fiserv and AIBMS, according to the news release. "We are particularly excited for the opportunity to accelerate the local penetration and growth of Clover," Katia Karpova, head of the European region for Fiserv, said in the news release. The deal is subject to regulatory approval and is expected to close in the third quarter of this year, according to the release.
