
Knighton baker Charlotte opens up cake shop in garden shed
A KEEN baker who started her own business during lockdown has just opened her first cake shop – or shed, to be precise.
Charlotte Locke, 24, has been baking in her spare time since 2020, when she launched Charl's Sweet Treats.
Charlotte's main employment is as a part-time dispenser at her local GP surgery, but at weekends she now dispenses cakes, cookies, shortbread, sponges, scones and tray bakes to the community of Knighton, from her own little wooden cake shed.
'I have been baking as a small business for five years and Charl's Sweet Treats started up in 2020, during lockdown,' said Charlotte.
'Having a cake shed has always been something I wanted to do, but I just never had the time to make it happen.'
The cake shed is located outside Mill Barn (LD7 1RT), on the outskirts of Knighton, and opened for the first time on April 13.
Cakes are for sale every Saturday and Sunday, with special opening hours during bank holiday weekends.

The shed works on an honesty box policy with instructions listed inside the shed on how to make payments.
'Charl's Sweet Treats offers anything from small bakes to bigger bakes,' added Charlotte.
'Tray bakes, brownies, cookies, occasional/celebration cakes. Every weekend I try to do different cakes so that there's a bit of variety.'
Since opening last month, Charlotte has been overwhelmed by the response. 'The shed has been extremely busy and I am so grateful,' she said.
'Everyone has been really supportive and it's lovely to see the community I was born and raised in being so honest.'
The icing on the cake has been a five-star food hygiene rating that Charlotte received last week.
After another bumper bank holiday weekend, a post on Charlotte's Facebook page on Monday read: ' Knighton has been my home and where I was raised and the support has been amazing and I am just so grateful to live in such a kind community.
'From now on (unless there's any bank holidays or special events) the shed will be open Saturdays 9am-9pm and Sundays 9.30am-8pm. This gives me a chance to work, live and bake.
'The 13th of May marks one month of the cake shed being open, I can't believe it has been that long already."

May 30 - Big 12 commissioner Brett Yormak doubled down on his support of the 5+11 model for the College Football Playoff on Friday, despite another proposed model that would guarantee his conference two playoff spots. The 5+11 model would give five automatic spots to the highest-ranked conference champions, with 11 at-large berths handed out based on the committee's rankings. Yormark presented this model when the Power 4 commissioners met recently in Charlotte, N.C. "I think there's real momentum for 5+11," Yormark said at the conclusion of the Big 12 spring meetings. "Certainly, the public is voting yes for it, which I think is critically important. Yes, the Big Ten, the SEC are leading the discussions, but with leading those discussions, they have a great responsibility that goes with it, to do what's right for college football and not to do anything that just benefits two conferences. "I have a lot of faith in the process, and I think we'll land in the right place." Last year, when a new six-year CFP deal was announced, the Big Ten and SEC were placed in charge of the playoff's format in 2026 and beyond. Another model, which the ACC and Big 12 oppose, would include four automatic qualifiers for both the SEC and Big Ten, two apiece for the Big 12 and ACC and one for the top Group of 6 team. When asked why he would oppose that model, Yormark said: "In talking to our ADs and coaches, we want to earn it on the field. "The 5+11 might not be ideal for the conference, but it's good for college football, and it's what's fair. We don't want any gimmes. Solo travelers secretly charged up to 70% more by these major US airlines
American Airlines, Delta and United are all quietly charging solo travelers more than those in groups, it's been revealed. In some cases, solo travelers are reportedly paying up to 70 percent more. Travel sites Thrifty Traveler and View From The Wing discovered that the carriers, the three biggest in the US, have been using this pricing tactic on select domestic routes. Thrifty Traveler's Kyle Potter wrote: "While it's not widespread – you won't see it on each and every route – it's real and undeniable." Researchers inputted flights with all three airlines, changed the number of passengers, then watched fares drop instantly. The Independent was able to replicate two of the price changes. We discovered, as Thrifty Travel did, that it's possible to reduce the cost of a flight from Charlotte to Fort Myers with American Airlines by $149, from $482 to $333, by booking for two people instead of one. And on Google Flights we saw a solo travel fare for an American flight from Chicago O'Hare one-way to Lexington in Kentucky fall by 50 percent, from $215 to $107, when the number of travelers was doubled to two. Discounts for bulk buys are triggered in lots of consumer environments, from supermarkets to rail travel, but many travelers will be surprised to see this pricing strategy used by airlines, especially in an under-the-radar fashion. The discounts aren't made explicit when booking. Rhys Jones, Aviation Editor at described the practice as "unfair". He told The Independent: "Unlike hotel rooms, where you can share to save money, you can't share a plane seat and therefore the practice of charging solo travelers more can seem particularly unfair, especially as single people already often pay more versus those who are coupled up. "Unfortunately, airlines will always try and sell tickets for the maximum price they can charge whilst also filling aircraft, and whilst someone who is traveling for business might not blink an eye, another traveling alone on holiday might not have the same means." However, Gilbert Ott, frequent flier and Founder of travel site remarked that travelers should essentially grin and bear it, especially in the age of AI, which could see the advent of more intense "personalized pricing". He told The Independent: "People must wrap their heads around the concept that seats are commodities and just like all other goods, bulk discounts often apply. When we buy a six-pack of beer from the supermarket, we get a discount, for example. "We've seen countless airlines offer companion fares, with discounts buying for two. I get that it can be frustrating, and as a frequent solo and not-solo traveler, I win some and I lose some. "We'll see more personalized pricing as airlines leverage AI."

Prime Video's first NASCAR race averages 2.72 million viewers, younger audience
Sunday night's Coca-Cola 600 averaged 2.72 million viewers in Prime Video's first NASCAR race. The race, which was won by Ross Chastain, was the third-highest-watched NASCAR race this season not carried by Fox. FS1 averaged 2.89 million viewers for the March 16 race at Las Vegas and 2.84 million for Phoenix on March 9. Fox Sports had the first 12 races of the season, with eight being carried on FS1. Last year's Coca-Cola 600 on Fox averaged 3.2 million viewers. According to Nielsen, the audience for Sunday night's race peaked at 2.92 million viewers near the midway point. Prime Video's audience had an average age of 55.8 years, which is more than six years younger than the average median age of viewers watching NASCAR Cup Series races on linear TV (61.9). The 67-minute postrace show averaged 1.04 million viewers and peaked at 1.26 million. This was the first of five races that Prime Video will carry this season. ___
