KAZAN (Tatarstan): Muhamad Sufi Irfan Mohamad Rusdin could not believe it when he won the gold medal in the Confectionery Arts category at the prestigious Young Chefs International Com­pe­tition 2025 here.
The UiTM Penang culinary student defeated participants from 12 countries, including Saudi Arabia, Azerbaijan, Tunisia, Tur­kiye, Russia, Indonesia, Uzbekis­tan, Senegal, Kazakhstan and Iran.
'I was in shock when I heard my name announced as the winner. I felt my heart racing and my hands trembling. I entered the competition to challenge myself and test my abilities on an international level. It was a new experience for me,' the 23-year-old told Bernama.
The menu chosen by Muhamad Sufi, who is from Pasir Mas, Kelantan, which captured the judges' hearts was Malaysian fusion with a touch of Western – a seafood-based salad, crispy fried fish with tomato and basil salad with lemon dressing.
The main menu featured marble beef tenderloin served with curry-infused juice, glazed vegetables with local wild mushroom and rosti potato, and dessert comprising bingka labu, mandarin orange sauce with chocolate mousse, fresh fruit and sugar garnish.
Muhamad Sufi said he felt a bit nervous while preparing the ingredients due to a limited time.
'But overall, everything went according to plan. What I practised, that's what I did in the competition kitchen,' he said, adding that one of the requirements was for participants to combine raw ingredients obtained in Kazan, like cod fish, meat, cooking oil, flour, vegetables and local fruits.
Muhamad Sufi said the menu choices were made and inspired by two of his lecturers who acted as team managers at UiTM Penang.
'This menu also had a touch of traditional Malay that I wanted to highlight, so that the judges could feel the authenticity and creati­vity in my dishes,' added the budding chef.
Describing the 'drama' that occurred during the competition, Muhamad Sufi said he felt ­panicky and anxious when he saw the clock ticking fast.
'The strongest pressure during the competition was to manage time and emotions.
'Sometimes, when there were distractions, I started to panic. But I tried to stay calm and focused on one thing at a time,' he said, adding that he started his preparations about two weeks before the competition began.
The training included time management, cooking and food testing to ensure all flavours were balanced and the presentation was appealing, he added.
­Muhamad Sufi said the experience of participating in several previous food competitions gave him the motivation and confidence to participate in his first international event in Kazan.
'I have participated in several competitions such as the 2023 Melaka Culinary Challenge and 2024 Battle of The Chefs at Spice Arena in Penang, and I won a bronze medal in both,' he added.

Tayyib Ranch managing director Mohd Sakhedan Sidek said Upin and Ipin, which were sold to different buyers for RM20,000 and RM26,000, will be slaughtered tomorrow The Limousin is a French breed of beef cattle from the Limousin and Manche regions of France. Heavy-muscled cattle from other premium breeds such as Brahman, Charolais, Blonde and Black Angus will also be slaughtered at the event. 'The cattle, aged between three and four years, were brought in from Kelantan and Terengganu. 'They weigh between 700kg and 1,000kg and are priced from RM10,000 to RM45,000 each,' he told Bernama. Mohd Sakhedan said demand for such cattle continued to rise each year, for sacrificial rites performed by Muslims during Hari Raya Aidiladha. 'Huge cattle are preferred for their meat yield and superior quality, making them ideal for distribution to the underprivileged as a valuable source of nutritious food,' he said. Mohd Sakhedan said a total of 100 cattle will be slaughtered over a continuous 48-hour period until tomorrow. 'We have also received approval from the Selangor Islamic Religious Department to perform prayers at the carnival site, followed by a communal feast,' he added.

SELANGOR is experiencing a shift in its tourism landscape as international visitors begin to form a larger part of the state's tourist arrivals. According to state local government and tourism committee chairman Datuk Ng Suee Lim, the ratio of international to domestic tourists was previously 30:70. 'But by 2024, we successfully broke that pattern. 'Now, international tourists make up a larger share of visitors. 'This a positive sign for Selangor's growing global appeal,' he said. Ng said that while the momentum was encouraging, Sekinchan faced one major hurdle – the lack of four-star hotels for the rising number of higher-spending tourists. He was speaking to reporters at Sekinchan Padi Field Festival 2025 in the Sabak Bernam district. The state government had aimed to draw some 13,000 visitors to the two-day event. Held at Terminal Sekinchan, the festival was the first of its kind in Malaysia and had been held in support of Visit Selangor Year (VSY) 2025. 'This festival was created to let visitors enjoy the beauty of agro-tourism in northern Selangor, a region that produces the most rice in Malaysia and is rich in natural beauty that you can't find in modern cities,' said Ng. The festival was launched by Selangor Mentri Besar Datuk Seri Amirudin Shari. Held from 7am to 7pm over two days, it featured a variety of family-friendly and cultural activities. Among first day highlights were electric tram and rickshaw tours through padi fields, a food festival, traditional kite (wau kapal) demonstrations, a mini kite decoration competition and a live performance by Malaysian singer-songwriter Aizat Amdan. The second day offered even more attractions, which included a padi field run, free health screenings and environmental volunteer activities. The festival was part of the VSY2025 campaign that aimed to draw 8 million visitors and generate RM11.7bil in tourism- related transactions. To support these goals, the Selangor Budget 2025 has allocated RM8mil for VSY2025 preparations. These include programming and upgrading tourism facilities across all nine districts. In the works are over 100 programmes and initiatives covering educational tourism, sports, food and beverage, arts, culture and heritage. Also present during the festival press conference were Menteri Besar Incorporated chief executive officer Saipolyazan M. Yusop and Tourism Selangor chief executive officer Chua Yee Ling.

Participants were treated to a dynamic events line-up that included keynote addresses, expert panels, workshops and group chats. OVER 120 hospitality professionals from South-East Asia, Japan and China met in George Town, Penang, to be a part of global growth in the sector. They attended the three-day Ascott Learning Festival 2025 held at Ascott Gurney Penang, which was designed to foster leadership, innovation and professional growth. The festival, in its second edition, was themed 'Grow with Us, Lead Our Future'. It showcased a forward- thinking agenda with keynote addresses, expert panels, workshops and group chats. The laughter Lim elicited brought a fun twist to the festival's otherwise intensive programme and allowed attendees to connect through shared humour. Participants also enjoyed cultural immersion activities, adding local flavour to the festival.
