
What's the best way to store strawberries? We tested popular methods.
Crimson, plump, juicy and sweet-tart, fresh strawberries are a treasure to behold. When we catch them on sale at the grocery store, spot a table full of them at the farmers market, or spend the afternoon picking our own at a farm, it's easy to get carried away and find ourselves with an abundance of berries. Once we take our haul home, a sense of dread slips in: What do we do with all of these strawberries?
There are lots of options to cook with or save them for later — such as baking into desserts, freezing or making jam — but with the best berries, nothing beats eating them in their natural state. Unfortunately, a strawberry's peak is short-lived. 'Thanks to their thin skin and fragile structure, they only last a few days, even in cold storage,' Harold McGee wrote in 'On Food and Cooking.'
Once picked, strawberries are best consumed as soon as possible. But you can't always eat an entire berry bounty in one sitting. People tout a number of methods for storing strawberries to make them last as long as possible, so I decided to put them to the test.
The methods I tried included: the original plastic clamshell the berries arrived in; an Oxo produce-keeper; a sealed glass jar; a vinegar and cold tap-water wash before drying and storing in a glass container lined with a towel with the lid ajar; and a hot tap-water wash before drying and storing in a glass container lined with a towel with the lid ajar. For each test, I started by sorting through the berries, picking out any that looked like they were on their last legs so they wouldn't drag the rest of the fruit down with them.
Here's how the strawberries fared after I left them in the refrigerator for one week.
The idea behind this method is to use a mixture of vinegar and water to kill off any mold spores and bacteria on the surface of the berries, usually at a ratio of 1 part vinegar to 3 parts water. Then, the berries get a quick rinse in the sink to get rid of the vinegar flavor and are dried before being placed in another container lined with towels with the lid left ajar. I believe the towels are there simply to add some cushion, and keeping the lid partially open avoids trapping too much moisture. 'By washing your berries in a solution of vinegar and water, you can extend their shelf-life by days (sometimes even weeks!),' food writer Sarah Jampel wrote in Food52.
Alas, I did not find this to be the case. There was visible mold on at least a few of the berries I treated this way. Perhaps it was user error? I put the strawberries in a salad spinner to dry them, as Food52 recommends, but maybe they weren't as dry as they should have been. Or perhaps the towel absorbed too much of the moisture exuded by the fruit, or the fridge was particularly humid, which in turn sped up their deterioration and negated the whole point of treating them in the first place.
Similar to the vinegar solution, hot water can also kill mold and bacteria. While some people recommend using water around 125 degrees, Serious Eats editor Genevieve Yam found that there was 'barely a discernible difference' compared to berries simply rinsed in hot tap water, which comes in around 109 degrees. After rinsing, I followed the same steps as above, drying the berries in a salad spinner and placing them in a container lined with towels the lid ajar.
Unfortunately, I experienced nearly the same results as the vinegar wash — although there was perhaps slightly more mold in this batch. And as with the previous method, user error could be a factor if the berries were not dried as thoroughly as they could have been.
This is a method that I've seen on my social media feeds. And I will admit, they were perhaps the best-looking berries of the bunch after their stay in the fridge. However, there was a loud 'pop' when I opened the jar, making me fear it could explode if the strawberries continued to stay in there. And the longer they stay in a sealed environment, the higher the chance of the flavor becoming unpleasant and the berries falling apart.
After one week, there was the slightest acidic aftertaste, as if the strawberries had begun to ferment, but overall they tasted fine. However, given the potential for exploding jars, this is not a method that I would recommend anyone try at home.
There are a number of berry-storage containers available to help keep fruit from spoiling, many featuring a basket inside of another container with a lid that you can vent. The benefit is that the basket lifts the fruit from any water that collects in the bottom of the container and the vented lid allows air flow. (A colleague also loves her ceramic berry bowl, which could work similarly if loosely covered.)
These strawberries fared extremely well, with no signs of spoilage and no faint aftertaste. The only real downside is that it's another item you would have to purchase and store. The one I purchased from Oxo cost about $20, but I hate the idea of having to find space in my small kitchen for a specialty item.
My preferred method, it turns out, is to simply store the strawberries in the container I purchased them in. The berries weren't as plump and vibrant as those stored in the specialty container, but there was no mold, and this route required the least amount of work. (I'm lazy — sue me. But maybe you are too?)
Regardless of which storage method you use, remember that strawberries are best eaten within a few days, so it's best to only buy as many as you think you can consume, cook and preserve within that time. If you accidentally forget about them in the back of the fridge and happen to come across a moldy berry or two, simply toss them. Taste one of the others, and if all is well, the rest are safe to consume — but do it soon.

Yordan Alvarez's ‘small' hand fracture adds another chapter to Astros' ambiguous medical history
HOUSTON — A month into an injured list stint for 'inflammation,' a small fracture has been discovered in Yordan Alvarez's right hand, sidelining the Houston Astros slugger for the foreseeable future while inviting further scrutiny on a medical staff struggling to get players back onto the field. Alvarez underwent imaging on Friday evening that revealed a 'small' fracture near the fourth metacarpal, general manager Dana Brown said on Saturday. The fracture is '60 percent healed,' according to Brown, who still hopes Alvarez can return 'in the near future.' Advertisement Alvarez has not appeared in a major-league game since May 2. On Saturday, the three-time All-Star acknowledged the injury occurred in a game prior to that date, but Alvarez attempted to play through it 'because I've played before with pain in my hand.' 'I didn't think it was going to be something big,' Alvarez added through an interpreter. 'But I think the fact that I kept playing caused my hand to stress more and caused the small fracture.' The team first described Alvarez's injury as a muscle strain on the top of his right hand. According to Brown, initial imaging taken on May 6 showed inflammation and fluid around the area. After three weeks of rest and ambiguous updates — always with positive undertones — team officials hoped Alvarez could return during this weekend's series against the Tampa Bay Rays. Two minor-league pitchers flew in from Florida on Friday morning to throw live batting practice against Alvarez at Daikin Park. Alvarez hit one home run into the right field seats and stung a few other line drives, but still felt pain in his right hand. Additional imaging ensued on Friday evening, which revealed the fracture. 'It doesn't surprise me that it was fractured,' Alvarez said. 'I knew there was something there on my first MRI with the muscle strain, but that's what I was dealing with. Time passed and it was supposed to get better, but it wasn't like that. I knew I couldn't go out there and support three or four games out there.' Both Brown and Alvarez said the Astros only took two images of Alvarez's hand: the one on May 6 and another on Friday evening. It's unclear why additional imaging wasn't ordered once Alvarez's inflammation subsided. Asked whether Friday's imaging came with Astros' doctors or an external physician, Alvarez replied, 'Both.' Brown acknowledged that Alvarez received a 'second opinion through him and his agent.' Alvarez's agent, Dan Lozano of MVP Sports Group, declined comment on Saturday. 'That's normal in baseball,' Brown said. 'There's a lot of guys that do that and we're not opposed to it. The beauty is our doctors will always communicate with the doctor (who gives) the second opinion and we'll work through it.' Advertisement Nowhere in Brown's team-written biography does it describe any medical education in his past, yet he sat atop a bench on Saturday afternoon attempting to explain how a $2.8 billion entity has now twice failed to discover a fracture in one of its franchise players. Last season, after insisting for almost three months that outfielder Kyle Tucker suffered a 'shin contusion,' the club acknowledged he suffered a fracture, but only after The Athletic prepared to report the story, citing multiple league sources. No two injuries are identical, but the parallel between Tucker and Alvarez's predicaments is difficult to ignore. Understanding how damaging the public perception can be is crucial, too. Players needing months to recover from fractures is understandable to a fan base. Needing that for a contusion or inflammation is more difficult to digest. The Astros continue to refuse all interview requests for head trainer Jeremiah Randall, claiming the sport's collective bargaining agreement prevents it. Still, the Pittsburgh Pirates, Minnesota Twins and Athletics are among teams that make their medical staffs available in either informal or on-the-record settings. The Detroit Tigers issue a formal injury report twice a week. On Saturday, Houston opted for its head of baseball operations to deliver a radiology lesson. 'I think part of the problem is twofold: You don't see the calcium or callus buildup until five weeks or so, and that's part of the problem,' Brown said. 'When you do these imagings and you have so much fluid and inflammation, it is very, very difficult to diagnose it. Even with multiple opinions, it's very difficult to see.' Both Brown and Alvarez acknowledged that swinging a bat within the past week may have exacerbated the injury, inviting wonder why Alvarez did so in the first place. When I first hit off the pitchers yesterday, I knew I wasn't going to be able to play three or four games straight and that's when we decided to do again the MRI.' Three years ago, former general manager James Click called into question the team's 'return to play procedure' after admitting Jake Meyers rushed back from a shoulder injury. Click promised a review, but got fired before it could be conducted. Perhaps it would behoove Brown to begin one of his own. He already acknowledged rushing pitcher J.P. France back from a shoulder injury last spring. Luis Garcia still hasn't appeared in a major-league game since undergoing Tommy John surgery in May 2023. Lance McCullers Jr. had several setbacks while recovering from flexor tendon surgery. Asked if he is concerned about how Houston's medical staff has handled his injury, Alvarez said he is not. 'Because maybe I should have said something before that I wanted another study,' Alvarez said through an interpreter. 'But I didn't do it because that was the first thing that came out. It got to the point where I wanted to do another study and that's what we did.' As a result of it, Alvarez will not swing a bat for the foreseeable future. Neither Alvarez nor Brown wanted to put a timeline on his return, though doing so would've accomplished little. Gone is any benefit of the doubt — or believability — in anything this team reveals about its injured players. 'Just let it heal completely and he'll be back,' Brown said.

Moderna's new COVID-19 vaccine mNexspike approved by FDA, but there's a limit on who can use it
The U.S. approved a new COVID-19 vaccine made by Moderna late Friday but with limits on who can use it — not a replacement for the company's existing shot, but a second option. The new vaccine, mNexspike, is a step toward next-generation coronavirus vaccines. It's made in a way that allows for a lower dose - a fifth of the dose of its current COVID-19 vaccine, Spikevax - by refining its immune target. The approval "adds an important new tool to help protect people at high risk of severe disease from COVID-19," Stephane Bancel, Moderna's CEO, said in a statement Saturday. The Food and Drug Administration approved the new vaccine for use in all adults 65 and older, and for people age 12 to 64 who have a least one health condition that puts them at increased risk from the coronavirus. That's the same limit that the FDA set in licensing another COVID-19 vaccine option from competitor Novavax. Those restrictions are a departure from how the U.S. has handled COVID-19 vaccines until now, reflecting skepticism about vaccines from Health Secretary Robert F. Kennedy Jr. and other Trump officials. Moderna's existing vaccine doesn't face those limits and has long been used for anyone ages 6 months and older. The company said it expected to offer both options this fall. The FDA's approval was based on a study of 11,400 people age 12 and older that compared the new low-dose vaccine with Moderna's existing vaccine. It found the new vaccine was safe and was at least as effective - and more by some measures - than the original shot, the company said. The news came just days after the Trump administration canceled funding for Moderna to develop a vaccine against potential pandemic flu viruses, including the H5N1 bird flu, despite promising early study results. It also comes as the Centers for Disease Control and Prevention changes its recommendation to children for COVID-19 vaccine under Kennedy's directive. The agency on Thursday dropped its recommendation for all children to get the vaccinated but still broadly recommends COVID-19 vaccines for moderately or severely immunocompromised children, in addition to most adults for now. Kennedy's directive cited "a review of the recommendations" of the Food and Drug Administration and National Institutes of Health, saying that the risks of the COVID-19 vaccine for healthy children "do not outweigh the purported benefits of the vaccine." The directive also cited "the lack of high-quality data demonstrating safety of the mRNA vaccines during pregnancy combined with the uncertainty of the benefits" for pregnant moms and their baby. "Truly the death of expertise. This would be like the secretary of transportation directing that all planes must fly 5,000 feet higher than current. It's vibe-based decision making," one federal health official said of the directive.
