Visit The World's Highest Microbrewery In A Building

Forbes2 days ago

LeVeL33 has incredible views over Marina Bay in Singapore.
Singapore's LeVeL33 has been recognized by Guinness World Records as the highest microbrewery in a building. Located on the 33rd floor of Marina Bay Financial Centre Tower 1, the brewery was recognized on December 10, 2024, with its official certificate being delivered in March 2025, although the process began months before.
'It is a tedious process,' said Martin Bem, founder and managing director of LeVeL33 on a video call. That process began in August 2024 and involved expert witnesses and supplying plans for the original building construction, which was completed in 2010, from the building authority in Singapore.
'It is a nice achievement to give ourselves a little bit of birthday present with this achievement,' said Bem. LeVeL33 is an original tenant of the building and has been operating for 15 years. The brewery has been at this height all along, but Bem thought the official Guinness recognition would be a fun acknowledgement to celebrate the brewery's anniversary.
LeVeL33 has been officially recognized by Guinness World Records
Bem has had a long career in hospitaility. 'I started in Bavaria. I was already in the beer industry,' said Bem. Bem works with Germany's Paulaner Brauerei in Singapore and had a prior, successful Bavarian-inspired concept restaurant in Singapore.
'So I always wanted to do a microbrewery,' said Bem. 'I really wanted to have our own homemade, home brewed beer, unfiltered, and unpasteurized because obviously it's a completely different product. And I think quality-wise, it's different from the commercial beers. But I also love my wines and I love my food.'
'So I thought, it's a new concept to have homemade beer, but really good, food and a nice wine list,' said Bem. 'I was looking for a very particular location. I was scouting the market with a real estate broker from Singapore and then when I saw the model of Marina Bay Financial Centre, I immediately looked at the penthouse and asked the landlord what they were planning to do there. And it was still up for grabs.'
Given the iconic location and the commercial possibilities for the space, the landlord held a tender process. Bem and his team were the everything winning bidder. LeVeL33 has occupied the space since Day One.
'I signed the lease before I knew how we could bring the brew house up,' says Bem. 'I knew that the service lifts were too small. We explored helicopter, but the Marina Bay is a no-fly zone. That was out of the question.'
Ground-based cranes would not reach high enough—LeVeL33 is 149.321 meters high (489 feet, 10 inches). At the end of the day, a portion of the building's façade had to be removed so that a modular crane could be installed on the 33rd floor to hoist all of the brewery equipment up.
That brewing equipment consists of a 1,000-liter (over 8-barrels) brewery with 2,000-liter fermenters (over 16-barrels). Special stainless-steel beams needed to be installed, along with a stainless steel plate that distributes the weight of the brewery and liquid over a greater area. Given the height of the brewery, a high-pressure water tank was also installed; the building's regular plumbing would not suffice.
LeVeL33's brewery is no mere showpiece. All beer served is brewed on site. Even packaging occurs on site.
Those beers are five regular offerings ranging from blonde ale to stout, available on draught and in cans for takeaway. The brewery also makes seasonal beers and, in line with the elevated dining experience expected from a restaurant in the heart of Singapore's financial district, offers Brut Beer a beer brewed with the same yeast as the Champagne Barons de Rothschild and with second fermentation in a bottle, like champagne.
As for Bem's affinity for wine, 'We have only wines with less than 5,000 cases of production.' That wine list from small producers is 12 pages long, while an extensive list of other beverages and cocktails, not including the beer, adds six more pages to the menu.
As would be expected from a restaurant of this caliber, the food is high end, with many including beer ingredients or beer itself. Where possible, the brewery and restaurant uses organic ingredients.
Singapore is a well-known destination for food and restaurants. But LeVeL33 takes dining to new heights.

Air India disaster deals heavy blow to 'world class airline' ambition

By Aditi Shah and Aditya Kalra NEW DELHI (Reuters) -The Air India plane crash in which more than 200 passengers were killed on Thursday has plunged the airline into its deepest crisis yet and will deal a heavy blow to its efforts to revamp its reputation and fleet. After taking the carrier over from the government in 2022, the Tata Group unveiled ambitious plans to reverse years of underinvestment in an ageing and outdated fleet and create a "world class airline", as CEO Campbell Wilson has repeatedly put it, on a par with rivals like Emirates. The turnaround has been aimed at tackling its myriad problems including persistent flight delays, disgruntled customers, a shortage of spare parts, delayed plane deliveries and years of financial losses. "Newer aircraft and better maintenance should be the hallmark for Air India to survive. Proper maintenance is what they should be looking into, because Air India has had a chequered past," said Vibhuti Deora, a former legal expert at India's Aircraft Accident Investigation Bureau. That past includes, while under government ownership, Boeing 737 flight from Dubai overshooting the runway at one domestic airport and crashing into a gorge in 2010, killing 158 people. More recently, its low-cost unit Air India Express saw one craft skid off a runway in India in 2020, killing 21 people. Only a few days ago, Indian Prime Minister Narendra Modi told an international gathering of hundreds of airline executives in New Delhi that the country's aviation industry stood at a crucial point of takeoff. On Thursday, however, Air India swapped the bright red colour scheme and logo on its website for a more sombre black and grey one, covering it with a banner that carried the crashed flight's number: "AI-171". "For an airline, the most important thing is the brand's identity with safety. This will be a major setback for the brand in that aspect," said Dilip Cherian, a communications consultant and co-founder of public relations firm Perfect Relations. 'DIFFICULT DAY' With its maharajah mascot, Air India was once renowned for its lavishly decorated planes and stellar service championed by its founder, JRD Tata, India's first commercial pilot. But since the mid-2000s, the carrier's reputation has worsened as financial troubles mounted. It has flown widebody planes with business class seats in poor condition and grounded some of its new Boeing 787 Dreamliners for lack of spare parts. When Tata regained control, the airline was "just in absolute shambles", its CEO Wilson told Reuters in a 2024 interview, noting that some of its planes hadn't had a product refresh since they were delivered in 2010-2011. Air India, which has a 30% share of the domestic passenger market, has a fleet of 198 planes, of which 27 are 10-15 years old and 43 are more than 15 years old, the civil aviation ministry told parliament in March. Air India Express had 101 planes, with 37% of them more than 15 years old. The plane that crashed on Thursday was 11 years old, according to Flightradar24. Rival Indian airlines like IndiGo operate newer planes. Air India, which is part-owned by Singapore Airlines, has placed orders for 570 new jets in recent years and is in talks for dozens more. It has even aggressively expanded its international flight network in the face of the fury of its passengers, who often take to social media to show soiled seats, broken arm rests, non-operational entertainment systems and dirty cabin areas. It has also been ranked the worst airline for flight delays in Britain, where its departures were on average just under 46 minutes behind schedule in 2024, according to analysis of Civil Aviation Authority data by the PA news agency published in May. It has also been reporting losses since at least fiscal 2019-20. In 2023-2024, it reported a net loss of $520 million on sales of $4.6 billion. Before it can make any further progress on these problems, however, it faces the difficult task of investigating one of India's worst aviation disasters ever. "This is a difficult day for all of us at Air India," CEO Wilson said in a video message. "Investigations will take time." Metro Detroit restaurant M Cantina earns Guinness World Record for agave spirits

Junior Merino is known not only for serving an array of contemporary Mexican cuisine as chef and owner of M Cantina in Dearborn but also for the restaurant's cocktail and beverage program. The restaurant on Michigan Avenue houses a vast selection of spirits, particularly 100% agave. Now Merino, also a mixologist known as 'the Liquid Chef,' can add an official world record title holder for that impressive array of agave spirits that includes tequilas, mezcals, raicillas, bacanoras, sotols and others. On Tuesday, June 10, Merino earned a Guinness World Record title for having the most commercially available agave spirits in a restaurant. "Achieving this record is an honor,' Merino said in a news release, 'and it inspires us to continue exploring and celebrating Mexico's vibrant spirit culture while elevating Americans' understanding that Mexican food and beverage isn't cheap — and is just as rich as any other storied culture in the world." On site at M Cantina was Chloe McCarthy, the Official Guinness World Records adjudicator who certified Merino's collection of 1,825 distinct bottles of 100% agave spirits. Merino's collection is nearly 800 bottles more than the previous record of 1,033, set in 2024 by a New Jersey restaurant. 'Of the 1825 bottles, they're all the most high quality and authentic in nature,' McCarthy said in a news release. 'As part of Junior's effort to dispel the notions that tequila is hard to process or makes you feel sick, the most high quality spirits don't do that. I was touched by that.' Merino opened M Cantina, at first without a liquor license, eight years ago this week. The restaurant's menu specializes in gourmet Latino street food. Recognized by the Mexican government as an Official Ambassador of Gastronomy & Tourism & Promoter of All Mexican Beverages, Merino spent years curating his extensive selection of spirits, sourcing from various artisanal producers. Also at M Cantina on Tuesday for the Guinness certification was Giovanni Alcala, a representative from the government of the Mexican state of Jalisco. 'Jalisco is one of the biggest producers of tequila, so I'm just here out of pride for the work Junior has been doing the last few years for the Mexican community,' Alcala said in a news release. 'He's helping contribute to getting more promotion for agave spirit beverages.' While M Cantina has a vast collection of world-renowned agave spirits, there's also an impressive collection of rare whiskey. While enjoying M Cantina's selection of gourmet Mexican cuisine, guests have an opportunity to enjoy and learn about the collection through educational experiences. M Cantina, at 13214 Michigan Ave., in Dearborn, is open for lunch and dinner daily.
