Scientists in Mexico develop tortilla for people with no fridge

Food scientist Raquel Gomez flips a tortilla that can be kept for weeks outside a refrigerator at a university laboratory in Mexico

Peering through a microscope, food scientist Raquel Gomez studies microorganisms that add nutrients and preserve tortillas for several weeks without refrigerators -- a luxury in impoverished Mexican communities.
The humble tortilla is a Mexican staple, consumed in tacos and other dishes by millions every day, from the Latin American nation's arid northern deserts to its tropical southern jungle.
Most Mexicans buy fresh corn tortillas from small neighborhood shops.
The wheat flour version developed by Gomez and her team contains probiotics -- live microorganisms found in yogurt and other fermented foods.
As well as the nutritional benefits, the fermented ingredients mean the tortilla can be kept for up to a month without refrigeration, much longer than a homemade one, according to its creators.
It was developed "with the most vulnerable people in mind," Gomez, a professor at the National Autonomous University of Mexico (UNAM), told AFP in her laboratory.
Nearly 14 percent of children under five suffer from chronic malnutrition in Mexico, according to official figures. In Indigenous communities, the figure is around 27 percent.
The tortilla developed by Gomez is not yet commercially available, but it could benefit people like Teresa Sanchez.
The 46-year-old housewife smokes meat using a wood-burning stove in her house with wooden walls and a metal roof.
Like most of her neighbors in the town of Oxchuc, in the southern state of Chiapas, Sanchez has no refrigerator, so she uses the methods handed down by her Indigenous Tzeltal ancestors.
"My mother taught me and grandparents always do it this way," she told AFP. "Where are you going to get a refrigerator if there's no money?"
Less than two-thirds of people in Chiapas, a poverty-plagued region with a large Indigenous population, have a refrigerator -- the lowest among Mexico's 32 states.
The average maximum temperature in Chiapas rose from 30.1 to 32 degrees Celsius between 2014 and 2024, according to official estimates.
Half of its territory is considered vulnerable to climate change.
While Oxchuc is located in a mountainous, temperate area, the lack of refrigerators forces its inhabitants to rely on traditional food preservation methods.
"We think about what we're going to eat and how many of us there are. We boil it, and if there's some left over, we boil it again," Sanchez said.
Sometimes meat is salted and left to dry under the sun. Tortillas are stored in containers made from tree bark.
For that reason, Sanchez only shops for the bare necessities, although her budget is limited anyway.
"I don't have that much money to buy things," she said.
Gomez and her team use prebiotics -- which are mainly found in high-fiber foods -- to feed probiotic cultures and produce compounds beneficial to health, she said.
Thanks to the fermented ingredients, no artificial preservatives are needed in the laboratory developed tortilla, Gomez said.
That is another benefit because such additives have potentially toxic effects, said Guillermo Arteaga, a researcher at the University of Sonora.
One of the most commonly used additives in processed wheat flour tortillas is calcium propionate, which is considered harmful to the colon's microbiota, Arteaga said.
Although her tortilla is made from wheat flour -- a type eaten mainly in northern Mexico -- Gomez does not rule out using the same method for corn tortillas, which are preferred by many Mexicans but can go bad quickly in high temperatures.
The researchers patented their tortilla in 2023. UNAM signed a contract with a company to market the food, but the agreement fell through.
Gomez, who won an award in December from the Mexican Institute of Industrial Property, still hopes to find partners to distribute her tortillas.
She is confident that even though they were developed in a laboratory, consumers will still want to eat them.

By Chloé Rabs Social media can push vulnerable young people towards developing eating disorders by glorifying thinness and promoting fake, dangerous advice about diet and nutrition, experts warn. Young women and girls are much more likely to suffer from illnesses such as anorexia, bulimia and binge eating disorder, though rates among men have been increasing. Research has shown the percentage of people worldwide who have had some kind of eating disorder during their lives rose from 3.5 percent in 2000 to 7.8 percent in 2018, a timeframe that captures the rise of social media. For the professionals trying to help teenagers recover from these disorders, misinformation from influencers on platforms such as TikTok and Instagram is a huge problem. "We no longer treat an eating disorder without also addressing social media use," French dietitian and nutritionist Carole Copti told AFP. "It has become a trigger, definitely an accelerator and an obstacle to recovery." The causes of eating disorders are complex, with psychological, genetic, environmental and social factors all having the potential to make someone more susceptible. Social media "is not the cause but the straw that may break the camel's back," said Nathalie Godart, a psychiatrist for children and adolescents at the Student Health Foundation of France. By promoting thinness, strictly controlled diets and relentless exercise, social media weakens already vulnerable people and "amplifies the threat" to their health, she told AFP. Just one recent example is the #skinnytok trend, a hashtag on TikTok full of dangerous and guilt-inducing advice encouraging people to drastically reduce how much food they eat. For Charlyne Buigues, a French nurse specializing in eating disorders, social media serves as a gateway to these problems, which are "normalized" online. She condemned videos showing young girls with anorexia exposing their malnourished bodies -- or others with bulimia demonstrating their "purges". "Taking laxatives or vomiting are presented as a perfectly legitimate way to lose weight, when actually they increase the risk of cardiac arrest," Buigues said. Eating disorders can damage the heart, cause infertility and other health problems, and have been linked to suicidal behavior. Anorexia has the highest rate of death of any psychiatric disease, research has found. Eating disorders are also the second leading cause of premature death among 15- to 24-year-olds in France, according to the country's health insurance agency. Social media creates a "vicious cycle," Copti said. "People suffering from eating disorders often have low self-esteem. But by exposing their thinness from having anorexia on social media, they gain followers, views, likes... and this will perpetuate their problems and prolong their denial," she added. This can especially be the case when the content earns money. Buigues spoke of a young woman who regularly records herself throwing up live on TikTok and who had "explained that she was paid by the platform and uses that money to buy groceries". Social media also makes recovering from eating disorders "more difficult, more complicated and take longer", Copti said. This is partly because young people tend to believe the misleading or fake diet advice that proliferates online. Copti said consultations with her patients can feel like she is facing a trial. "I have to constantly justify myself and fight to make them understand that no, it is not possible to have a healthy diet eating only 1,000 calories -- that is half what they need -- or that no, it is not normal to skip meals," she said. "The patients are completely indoctrinated -- and my 45-minute weekly consultation is no match for spending hours every day on TikTok," she added. Godart warned about the rise of people posing as "pseudo-coaches", sharing incorrect, "absurd" and potentially illegal nutrition advice. "These influencers carry far more weight than institutions. We're constantly struggling to get simple messages across about nutrition," she said, pointing out that there are lifelines available for those in need. Buigues takes it upon herself to regularly report problematic content on Instagram, but said it "serves no purpose". "The content remains online and the accounts are rarely suspended -- it's very tiring," she said. The nurse has even advised her patients to delete their social media accounts, particularly TikTok. Patterson maintains the lunch was poisoned by accident, pleading not guilty to all charges in a case that continues to grip Australia. The 50-year-old choked up with emotion as she gave her account of the meal on Wednesday. She said she decided to improve the beef-and-pastry dish with dried mushrooms after deciding it tasted a "little bland". While she initially believed a kitchen container held store-bought mushrooms, she said it may have been mixed with foraged fungi. "I decided to put in the dried mushrooms I brought from the grocer," she told the court. "Now I think that there was a possibility that there were foraged ones in there as well." Patterson earlier told the court how she had started foraging for mushrooms during a Covid lockdown in 2020. She also told the court on Wednesday that she had misled her guests about the purpose of the family meal. While they ate, Patterson revealed she might be receiving treatment for cancer in the coming weeks. But this was a lie, she said. "I was planning to have gastric bypass surgery, so I remember thinking I didn't want to tell anybody what I was going to have done. I was really embarrassed about it. "So letting them believe I had some serious issue that needed treatment might mean they could help me with the logistics around the kids," she told the court. "I shouldn't have lied to them," she added. The prosecution alleges Patterson deliberately poisoned her lunch guests and took care that she did not consume the deadly mushrooms herself. Her defense says Patterson ate the same meal as the others but did not fall as sick. Patterson asked her estranged husband Simon to the family lunch at her secluded rural Victoria home in July 2023. Simon turned down the invitation because he felt too uncomfortable, the court has heard previously. The pair were long estranged but still legally married. Simon's parents Don and Gail were happy to attend, dying days after eating the home-cooked meal. Simon's aunt Heather Wilkinson also died, while her husband Ian fell seriously ill but later recovered. The trial is expected to last another week. © 2025 AFP

Huge plumes from Canada's wildfires sometimes reach very high altitude, where they pose less of an immediate health risk By Michel COMTE and Marion Thibaut Canada's wildfires, which have already forced evacuations of more than 26,000 people, continued their stubborn spread Tuesday, with heavy smoke choking millions of Canadians and Americans and reaching as far away as Europe. Alerts were issued for parts of Canada and the neighboring United States warning of hazardous air quality. A water tanker air base was consumed by flames in Saskatchewan province, oil production has been disrupted in Alberta, and officials warned of worse to come with more communities threatened each day. "We have some challenging days ahead of us," Saskatchewan Premier Scott Moe told a news conference, adding that the number of evacuees could rise quickly. Every summer, Canada grapples with forest fires, but an early start to the wildfire season this year and the scale of the blazes -- over two million hectares (494,000 acres) burned -- is worrying. The provinces of Saskatchewan and Manitoba have been hardest hit. Both declared wildfire emergencies in recent days. "This has been a very difficult time for many Canadians," federal Emergency Management Minister Eleanor Olszewski told reporters in Ottawa. "This wildfire season has started off more quickly, and it's stronger, more intense," she said, adding that the Canadian military has deployed aircraft to evacuate remote towns in Manitoba and was ready to also assist Saskatchewan and Alberta with firefighting. Climate change has increased the impact of extreme weather events in Canada, which is still recovering from the apocalyptic summer of 2023 when 15 million hectares of forests were scorched. As of Tuesday, there were 208 active fires across Canada. Half of them were listed as out of control, according to the Canadian Interagency Forest Fire Centre. Many of the affected populations are Indigenous, and some small communities have burned to the ground. Heavy smoke from the fires, meanwhile, has engulfed part of the continent, forcing residents of four Canadian provinces and the U.S. states of Michigan, Minnesota, Nebraska and Wisconsin to limit outdoor activities. "Smoke is causing very poor air quality and reduced visibility," Environment Canada said in a statement. Wildfire smoke is comprised of gaseous pollutants such as carbon monoxide, along with water vapor and particle pollution, which can be particularly hazardous to health. Some of the worst smoke was in Alberta where three major oil sands producers -- Canadian Natural Resources, MEG Energy Corp, and Cenovus Energy -- this week evacuated workers and temporarily shut down hundreds of thousands of barrels of production per day. Huge plumes of smoke even reached Europe, the European Union's climate monitoring service said Tuesday. Due to their very high altitude, they do not pose an immediate health risk, according to the Copernicus Atmosphere Monitoring Service (CAMS), but are likely to result in hazy skies and reddish-orange sunsets. Additional plumes are expected to shade both continents in the coming days. "Central regions of Canada have experienced a very intense few weeks in terms of wildfire emissions," noted Mark Parrington, scientific director at CAMS. Canadian authorities have forecast a more intense fire season than usual in central and western Canada, due in particular to severe or extreme drought. "The significant reduction in snowpack in the spring led to early exposure of soil and vegetation, accelerating surface drying," explained University of Ottawa professor Hossein Bonakdari. "This early exposure acted as a silent amplifier, subtly setting the stage for extreme fires long before the first flame ignited," he said. Elsewhere, extensive forest fires have been raging in Russia's Far Eastern Federal District since early April, particularly east of Lake Baikal, generating carbon emissions of around 35 million tons, Copernicus reported. © 2025 AFP
