Time Out Market Chicago, home to some of the city's best restaurants, welcomes yet another stellar concept from chef Jorge Kauam. This month, the creator of German-American Gutenburg and chocolate pop-up JK Chocolates adds a new outpost of his modern, wellness-focused Vitasana to the healthy options inside Time Out Market.
At Vitasana, chef Kauam works alongside nutritionist wife Adriana Freytez, bringing bold and sometimes surprising flavors (like apple-celery tajín) to a holistic menu of what they call 'craveable clean eating.' The duo's nutrient-dense, often probiotic-rich plates include house-made ferments (cabbage slaw, pickled onions) and from-scratch dressings (confit garlic tahini, mango-habanero) that cater to all diets, including vegan, keto, and gluten-free options.
'At Vitasana, we're creating dishes where gut-healthy meets deeply satisfying,' Freytez says. 'We believe eating well shouldn't mean sacrificing taste.'
With twists on classics like a truffle Caesar salad loaded with pepperoncini, Vitasana could quickly become one of the best vegetarian restaurants in Chicago. But you can also expect to see slow-roasted meats on the menu, including a Persian brisket bowl studded with carrots, peaches, kalamata feta, dolloped with eggplant cream and drizzled in sumac sauce; as well as curried lamb meatballs over a bed of brown rice and arugula, laden with chickpea-pico, cashews, and spicy broccoli.

'I tried Aldi's expert loved bubble-free prosecco and it was an interesting experience'
It's been fairly warm over here in the UK, with the Met Office confirming we've had the sunniest spring ever. And for many of us, that means enjoying drinks in the garden. Now, as someone who enjoys a bit of a refreshing tipple, I'll never say no to a good glass, or bottle, of prosecco. Let's face it, nothing says summer quite like cracking open a bottle of bubbly with friends at a BBQ, garden party or picnic. I often know exactly what I am setting myself up for when I get a glass of this tipple. That being said, Aldi has once again decided to up the stakes with the launch of the UK's very first bubbles-free prosecco. The German discounter's Still Prosecco DOC, which made its debut earlier this month, costs just £5.99 for a 70cl and it has already been backed by experts who have said that it could be "the wine of summer." Now, I can't speak for everyone else, but for me, the whole point of prosecco is, well the bubbles. Nevertheless, I was thoroughly intrigued by Aldi's latest invention and managed to get my hands on a bottle, with my full, honest thoughts detailed below. The same prosecco taste minus the fizz Despite what my initial thoughts were, Aldi confirmed that its Still Prosecco DOC boasts the same taste everyone knows and loves, just minus the iconic bubbles for a "unique twist." Made from the same Glera grapes as its fizzy sibling, the finishing taste is said to be "fresh, fruity, and floral on the nose with concentrated orchard fruits on the palate. "Off-dry, the wine finishes with a subtle honeyed note, whilst bold acidity keeps it refreshing." A subtle aroma and a crisp taste First up, as soon as the cork was removed, I will admit that the lack of 'pop' that usually accompanies a bottle of prosecco was initially a little weird. Usually, when I open any bottle of fizz or wine, I am hit with an aroma of some sort, but I did find that this one was quite faint at first. While some experts have said they got the taste of sharp fruits as soon as they poured a glass, I initially found it to be more muted. However, after the bottle was open for a little while, the scent may have matured, as the sharper notes of apples and pears did start to come through. As for the taste itself, my fears of it tasting just like prosecco that had gone flat were thrown out the window, as it was surprisingly, sharp, zingy and crisp. Weirdly enough, I could taste the prosecco, just without the bubbles, which was the oddest experience I have had with a tipple. For me, it very much felt like a very sharp tasting white whine, although I am not entirely sure that this is what the supermarket was going for? Overall verdict Overall, I have to say that Aldi's latest invention, a prosecco without bubbles, is certainly an interesting experience that's probably going to divide a few fizz loyalists. While I didn't dislike it, the idea of there being no bubbles is quite hard to grasp, especially since the wine did still boast all the same tastes that I associate with the beloved tipple. However, once you manage to get past the unique formula, it's actually quite refreshing. For me, I'd personally class it as more of a white wine, not a prosecco, but that's just semantics and I am sure everyone is different. Is it as fun as a bottle of bubbly? Let's be real, it's definitely not. Although, I'd argue that it feels a little more grown up and will probably pair well with summer dishes when dining al-fresco style. If you want to make up your mind, then Aldi's Still Prosecco (70cl) is available in stores nationwide for £5.99.

Chiffon cake with lemon and blueberries
Chiffon cake is American, a relation of angel food cake. Both are light but chiffon is slightly richer because it contains egg yolks. It's usually made in a tube pan so there's a column in the middle. You can either fill the central space with fruit that spills out over the top of the cake, or decorate the top with blueberries and blackberries or purple edible flowers. Requires cooling time. Overview Prep time 40 mins Cook time 1 hr Serves 12 Ingredients For the cake 8 large eggs, separated 160g caster sugar 1 tsp vanilla bean paste 120ml full-fat milk 80ml vegetable oil 135g plain flour ½ tsp cream of tartar For the cream 400ml double cream 125g caster sugar 1 tsp vanilla extract finely grated zest and juice of 1 lemon To decorate blueberries, blackberries, pared lemon zest, and/or edible flowers Method Step Preheat the oven to 170C/160C fan/gas mark 3 ½. Step Put 8 egg yolks, 70g caster sugar and a pinch of salt into the bowl of a free-standing mixer (or into a large bowl if using an electric hand whisk). Beat on a high speed for about 5 minutes, or until the mixture is pale and thick. Step Add 1 tsp vanilla bean paste. Start whisking again, this time on a low speed while you pour in 120ml full-fat milk and 80ml vegetable oil. Sift in 135g plain flour in 4 batches, folding it in using a large metal spoon. Carefully transfer this to a large bowl. Step Clean the mixer bowl and whisk. They must be clean, or the egg whites won't whip up properly. Add 8 egg whites and ½ tsp cream of tartar to the clean bowl. Whisk on a medium/high speed until the mixture looks like airy foam – about 5 minutes. Step With the mixer still running, slowly pour in 90g caster sugar, a little at a time. Once all the sugar has been added, continue whisking until the meringue holds medium peaks and is glossy but not dry. If it's too dry, you'll have problems incorporating it into the yolk mixture without losing lots of volume. Step Mix the meringue into the egg yolk batter in 4 batches, using a balloon whisk to incorporate it. Step Once all the meringue has been added and there are no streaks in the mixture, pour the batter into a 10in, 2-piece tube pan. It's important that the pan is made of 2 parts – it should have a removable base. Don't use any fat or paper to line the tin – the sponge needs to grip on to the walls of the tin as it's climbing. Give the pan a few sharp taps on the counter to knock out any large air pockets. Step Bake for 1 hour, or until a skewer inserted into the cake comes out clean. Remove the tin from the oven and invert it. Don't worry, the cake won't fall out. Most tube pans have little feet around the edge to elevate them when the cake is cooling. If yours doesn't have feet, put the pan on to a wine bottle (the bottle should go into the tube). Step After an hour the cake should be completely cool. Run a thin, flat knife around the outside of the cake to separate the sponge from the pan. Push the base, with the cake attached to it, out of the pan. Use the knife to carefully remove the base from the cake. Put the cake on to a serving platter. Step If you are going to serve it that day – it's best eaten within 2 days – make the cream. Beat 400ml double cream with 125g caster sugar and 1 tsp vanilla extract, then add the finely grated zest of 1 lemon. Add lemon juice gradually (I usually end up using the juice of ½ lemon). It makes the cream thicken, so judge how much you need by both the flavour and the thickness. Step Using a palette knife, spread the cream all over the cake. You shouldn't see any of the sponge but don't spread it too thickly. You will have cream left over (it's delicious with berries). Step There are many ways you can decorate this. Fill the funnel with berries and let them tumble out over the surface of the cake, or arrange berries, zest and, if you like, flowers on top. Blueberries and blackberries work well colour-wise (even though the latter aren't in season).

Luxury brand Coach opens new NYC-inspired bar in Singapore serving customisable martinis from $12
Luxury brands continue to make their mark on Singapore's F&B scene – we've seen the likes of the Audemars Piguet Café, Louis Vuitton's chocolate store, and Audi's collab with Burnt Ends Bakery. Now, American fashion house Coach joins the mix with the opening of The Coach Bar, its newest lifestyle concept nestled inside the Coach Play Singapore Shophouse along Keong Saik Road. Replacing the former Coach Café, this stylish space draws inspiration from the brand's New York roots. The interiors are bold yet inviting, featuring rich red wallpaper and warm lighting that create a cosy, date-night-worthy ambience. One of the standout design features include a wall lined with vintage cassette tapes spanning genres from soul and funk to hip-hop and jazz. But even if you're not there for the vibes, the food and drinks are reason enough to visit. The menu takes classic American bar fare and gives it a refined twist – think shrimp cocktail ($22), caviar by the bump ($12) served on potato chips, and pastrami poppers ($16). Heftier options include the grilled cheese sandwich ($23) and the wagyu-loaded silver service hot dog ($30). For dessert, the bar's signature sundae ($15) balances rich soft-serve with Sicilian olive oil and sea salt. As for drinks, the Proper Martini Service ($12) offers a fun experience where you can customise your cocktail table-side with garnish choices like pickled onions and blue cheese-stuffed olives. You'll also find signature cocktails like the Grey Goose espresso martini ($25) and tabby disco tea ($22), the latter served with a Coach-branded citrus ice cube for a luxe finishing touch. The Coach Bar is located at 5 Keong Saik Road and is open from Thursday to Monday, 4pm to 12am.
