It's National Sausage Roll Day. Sausage rolls are one of Australia's favourite foods and you can find them at the footy, bakeries, cafes and even servos. Craig Cook is a butcher from Craig Cook the Natural Butcher. Craig will be making his classic sausage rolls. Craig's top tips are to make sure you use a good quality pastry as that's the first thing that your mouth touches when you eat it Recipe below: Craig Cook The Natural Butcher Sausage Roll – Bulk Recipe A premium sausage roll filling made using a balanced blend of beef, pork, vegetables, and a touch of sweetness from apple and tomato. Ingredients 6 kg beef trim (75CL) 4 kg pork mince 2 kg celery, finely diced 8 green apples, cored 1 kg carrot, grated 1 kg red onion, finely diced 1 kg breadcrumbs 1 litre apple juice 1 kg Durant Tomato & Onion Meal Pastry sheets Butter Method Mince the beef trim and cored apples using a medium plate. Mix in Durant Tomato & Onion Meal and apple juice. Add pork mince and coarsely mix through. Combine remaining ingredients: celery, carrot, red onion, and breadcrumbs. Mix well. Finish by running the full mix through the worm (no plate) for a smooth texture. Perfect for piping into pastry or shaping into sausages. Keep chilled during preparation for best results.

Spires boss wants to repay faith shown by fans
PETER Schroeck wants to repay the faith shown by the fans when Oxford Spires welcome Sheffield Tigers in the Premiership this evening. Spires began May with a double victory over Birmingham Brummies, but then lost at home to Belle Vue Aces last week. Peter Kildemand top-scored for Spires with 9+1, and has gained a new average. He will drop to reserve, while Craig Cook moves up to No 2, with Erik Riss at No 3 and Charles Wright at No 5. READ ALSO: New averages mean changed line-up for Spires Spires team manager Schroeck said: 'One of the positives from last week was the form shown by Peter Kildemand, leading our scoring last week along with the ever-reliable Charles Wright. 'Peter will move to reserve against Sheffield, and just like Craig Cook, he has the experience to score well from No 6 and give us that extra strength at reserve. 'As for the meeting against Sheffield, we do need to make up for last week's defeat to Belle Vue. 'We're doing our best to stay positive and a win would lift the spirits of everyone in the Spires camp and also get us back on target to making sure we are winning at home. 'I thank our fans for their patience and continued support. There's a lot we can be proud about at our club, and our supporters are a big part of that. We'd love nothing more than to repay their faith with a victory over Sheffield.'

New averages mean changed line-up for Spires
OXFORD Spires will boast a changed line-up tomorrow, with new averages coming into force, when they take on the Sheffield Tigers, tapes up at 7:30pm, writes Leon Foster-Hill. Craig Cook will ride at number two, partnering Maciej Janowski, whilst Peter Kildemand moves to the reserve position. Kildemand put in his best performance of the season against Belle Vue last week and could be a real trump card in the reserve berth where he can replace any rider. Mr Consistent, Charles Wright, moves to the tough number five berth with Erik Riss partnering Rohan Tungate at three and four. Jack Holder is in a rich vein of form having just won the Polish Grand Prix and the team also boasts previous Cheetah and Spire Lewis Kerr. Oxford remain in fifth place, one point ahead of King's Lynn Stars, so a win is vital to keep their push for the play-offs on course. Oxford have a healthy 20-point advantage from their home leg and the Scorpions have only managed one win so far this season, making the Cheetahs favourite to progress. They go into the meeting with a slightly new look as Dan Gilkes has been sidelined with a nasty knee injury, which has allowed the Oxford management to give Latvian Francis Gusts another outing, albeit in the Championship rather than the Premiership.
