What's Cooking: Mediterranean Spinach and Feta Crisp

What's Cooking: Mediterranean Spinach and Feta Crisp Recipe by: Chef Lisa A. Heidelberg Time: 15-20 minutes Serves: 12-15 Ingredients 1 cup fresh spinach, chopped 1/2 cup crumbled feta cheese 1/4 cup grated Parmesan cheese 2T gluten-free flour (or all-purpose flour) 1 large egg 1 tsp dried oregano 1-1/2 tsp house seasoning(granulatd garlic, onion & black pepper) 1/8 tsp red pepper flakes Directions Preheat your oven to 400°F. Line a baking sheet with aluminum foil & spray with cooking spray. In a large bowl, combine the chopped spinach, feta cheese, Parmesan cheese, flour, egg, , dried oregano, house seasoning, and pepper flakes. Mix until everything is well combined and holds together. Take small spoonfuls of the mixture and form them into round balls or small patties. Place them on the prepared baking sheet, spaced about 2 inches apart. Bake for 12–15 minutes, or until the crisps are golden brown and crispy on the edges. You can flip them halfway through the baking time to ensure even crispiness. Once baked, remove from the oven and let them cool for a few minutes. Enjoy! Chef Note: You can add extra Mediterranean flavors, such as olives or sun-dried tomatoes, to the mixture for variety. What's Cooking: Turkey Steaks with Mashed Potatoes and Green Beans

1lb ground turkey 1 large egg, beaten 1 Tbsp. chopped fresh sage 1 medium onion, finely chopped 1 garlic clove, finely chopped 1/3 cup Oatmeal 1t Montreal seasoning ¼ cup light olive or vegetable oil 2 cups low-sodium chicken stock 3 Tbsp. flour Place the turkey, egg, sage, onion, garlic, oatmeal and Montreal seasoning in a bowl and gently mix to combine. Form the mixture into four, 1 inch thick, patties. Heat the oil in a non-stick skillet set over medium heat. Cook burgers 4-5 minutes per side, or until entirely cooked through. Transfer to a plate and cover with foil to keep warm while you make gravy. Place the stock and flour in a bowl and whisk to combine. Drain the excess fat from the skillet, and then pour in the stock/flour mixture. Bring to a simmer and cook until the gravy thickens; season with salt and pepper.
