Justin Hemmes on a Sydney collision course with Neil Perry
The Neil Perry -fication of Sydney's luxe Double Bay is sputtering. The divine ponytail's job on restaurant Margaret (turning it into a favourite spot with a wait list and people-spotting) has been flawless. Then came the very successful casual eatery Next Door and bakery Baker Bleu. But as this masthead revealed last week it's his Cantonese restaurant Song Bird hitting the skids. It's not even about the food or dining experience.

Sydney ‘it girl's' controversial fashion choice turns heads
Sydney's own 'it girl' and jewellery designer Emma Pillemer – better known as Emma Pills – was spotted this week looking rather summery, despite Sydney's increasingly chilly weather. The star, who boasts over 100,000 Instagram followers and is known to rub shoulders with Hollywood elites, was on her way to the renowned Kristin Fisher Eyebrows salon in Double Bay when she turned heads with an eye-catching outfit. The 24-year-old entrepreneur, who founded the cult namesake jewellery brand, is known for her eclectic and laid-back fashion sense, and her trademark style was on full display during her recent beauty trip. The star stepped out in a pair of low-waisted baggy jeans and a cropped yellow top that showed off her midriff. She accessorised her look with gold hoop earrings, hair clips and playful pink handbag that had a fluffy pink pony toy attached to it. Pillemer, who appeared on Channel 7's Made in Bondi, completed the look with chunky black Chanel glasses and a controversial choice of footwear - Ugg boots. While many believe the slippers are a classic errand essential, a debate erupted earlier in the month about whether or not they are appropriate outside footwear. Laura Henshaw and Steph Claire Smith were discussing the topic on their podcast, when Henshaw admitted she wears them outside when overseas but would never be caught dead wearing them back home in Australia. She said she believed there was a perception that the footwear choice was 'bogan' when worn outside, whereas, when she's travelling to places like New York, they're seen as 'chic'. Pillemer chose to embrace the controversy, sporting a pair of classic brown Uggs. In true 'slashie' style (those with multiple jobs), she was multi-tasking and looking between two separate iPhones while walking down the street. To finish off her outfit, and in a subtly cool nod to her Y2K style, she had wire earphones dangling from her pockets. Pillemer's visit to Kristin Fisher Eyebrows comes as no surprise to those familiar with Sydney's Eastern Suburbs beauty scene and its celebrity brow artist owner, Kristin Fisher. The boutique salon is renowned for its luxurious experience and is often frequented by big names and influencers. Pillemer, who grew up in the Eastern Suburbs, lives in her family's $30 million Vaucluse mansion that boasts a tennis court, pool, and uninterrupted Sydney Harbour views. Her father, Russell Pillemer, co-founded the ASX-listed funds management group Pengana in 2003 and has been its CEO since. The company currently has a market cap of $92.54 million. The heiress has made a name for herself founding her jewellery brand and becoming one of Sydney's favourite influencers. She made headlines last year after she was spotted with YouTuber David Dobrik doing a 'servo run'. She was wearing a cropped singlet and pyjama pants, which captured the attention of paparazzi - as did her celebrity friend. 'Those photos are the definition of 'I don't dress for the cameras – I dress how I want to dress,' and that's about it,' she told last year. 'If I'm tired, I'm in my pyjamas. It was a tragic outfit, but it was a hungover movie day. They caught me at my finest!' She's also BFFs with Dixie D'Amelio, who made a trip Down Under recently to visit her friend as well.

Margaret
Update: Neil Perry's flagship Double Bay restaurant, Margaret – named after the esteemed chef's late mother – has been ranked the second-best steak restaurant in the world by The World's 101 Best Steak Restaurants. The elegant, cream-accented restaurant in the heart of the upmarket harbourside suburb is renowned for celebrating the best of the land and the sea. Perry is committed to sourcing top-tier Aussie produce, working with producers like Blackmore Wagyu and CopperTree Farms, before dry-aging and cooking it bang on. Margaret isn't a cheap eat – and given this recent news, we reckon it may be even harder to score a booking – but when a celebratory meal is on the cards and you feel like splashing out, we think it's a better-than-fine option. Our tip? After your meal, head to nearby Bobbie's, Perry's swish, New York-style Martini den, for one more. – Avril Treasure Read on for our previous review by Matty Hirsch. ***** In July of 2020, at the age of 63, Neil Perry announced he was retiring, after roughly 40 years in the game. For many, the news that one of Modern Australian cuisine's founding fathers was stepping back from his role as culinary director of Rockpool Dining Group – a restaurant empire that encompassed 80-odd establishments across the country – came as something of a shock. But some people, it seems, just can't stay away for too long. One year and a bit later, after a gruelling stretch that saw the celebrity chef feeding thousands of disadvantaged people, hosting online cooking classes and pivoting to takeaway, Perry and his signature ponytail are back in the kitchen at his latest (and reportedly final) venture, Margaret. It is his first venue to date without any financial partners and, in many ways, his most personal project yet. It feels very much like a family affair. Step inside and Perry's daughter, manager Josephine Perry Clift, might be the first to greet you. Look towards the open kitchen, and you'll spot executive chef Richard Purdue on the pass, who began working alongside Perry nearly 30 years ago as an apprentice at Rockpool. Scan the cocktail list, and you'll discover the perfect Martini was 'quintessential' to Margaret, Perry's late mother, after whom the restaurant is named. Seems only fitting, then, to start with one. The bar has assembled an adventurous collection of small-batch Australian vermouths and gins, the wildest of which might be a mixture of Regal Rogue Lively White and a gin by Seven Seasons containing native green ants that are harvested in the Northern Territory. When it lands in front of you at precise tundra temperature, with a crack of black pepper for added grit and a side of fat Sicilian olives, you get the sense that Mum would have been proud. While the menu makes no mention of her aesthetic sensibilities, it's hard to imagine she wouldn't be proud of the dramatically spotlit $5 million dining room, with seats for 120 people (and 50 more outside), kitted out by Caon Studio and Acme & Co in varying neutral tones, textural accents and opulent finishes. Or of the staff, who work the floor with urgency and professionalism, in billowy gowns, pressed chinos and sneakers as white as the clientele's hair and teeth. The cooking is pure Perry: Mediterranean and Asian flavours refracted through a contemporary Australian lens, bolstered by namechecked produce that's some of the finest in the land. So a murky, umami-rich Chinese olive and preserved radish paste subtly intensifies stubby king brown mushrooms, gently kissed by the wood fire. A crudo of chubby Flinders Island scallops, each as sweet as crème anglaise, leans only on finger lime, crunchy sea blite and jarringly yellow olive oil for acid, texture and fat. Even when the menu advertises bolder flavours like XO or red curry butter, they register as elegant and more delicate than your palate might expect, careful not to overshadow the likes of pristine coral trout caught by Ben Collison in northern Queensland, or a crusty, craggy beef fillet from CopperTree Farms. And while too much sesame and rice wine dressing drowns out a side of charry cos lettuce hearts, twice-cooked potatoes shine with simplicity, juxtaposing crispness and creaminess with virtuoso skill. In the lead-up to opening, Perry often referred to Margaret as a 'neighbourhood restaurant', which must be taken with a grain of salt considering the neighbourhood we're talking about here is Australia's wealthiest postcode. While nearly every dish punches in at less than $50, and there are solid bottles of wine to drink at around $85, it is difficult to imagine mere mortals popping in for a meal here on a regular basis. If there's one reason to return, however, it might just be the 'Memories of a Mirabelle Tart' – a dessert that Perry tasted many moons ago on a trip to Lyon, which inspired the iconic date tart that he and his former pastry chef Lorraine Godsmark made famous at the original Rockpool in 1989. It is as confident a display of pure technique today as it was back then – all bronze crust, silky custard, chewy prunes, nothing more – and, in many ways, a microcosm of dinner at Margaret. It may not hold much in the way of surprises, but it sure knows how, and whom, to please.
