A much-loved Edinburgh patisserie has closed its doors, with the owner making the decision with a "heavy heart." Écosse Éclair on Easter Road has ceased trading with owner Can Misirlioglu taking to Instagram to make the announcement after struggling with a huge work load over the past two months. Can opened the specialist bakery in 2021 in what was a dream come true for him and his partner Tugba. Specialising in cream eclairs, the business has received rave reviews and built up a huge following in the city. Taking on the work load of a chef, barista, owner and accountant led to a decline in Can's health. He also accidently turned off the freezer one day which led to stock being wasted as he came to the realisation he could not go on. Can previously told Edinburgh Live: "I've been a chef for a little over 17 years now, and it's been a lifelong dream to have a place of my own. I'm very experienced with choux pastry as I've worked with lots of French chefs and learned a lot, and have been inspired by them." He is now inviting anyone who wishes to take over the business to write to him as he takes on a new role at Duck & Waffle in the city centre. Taking to Instagram on Friday he wrote: "With a heavy heart, I'm announcing that Écosse Éclair is now permanently closed. "In truth, we closed our doors about two months ago — but it's taken me this long to find the right words. Words that could even begin to express how much this journey has meant to me. "Five years ago, Écosse Éclair was born out of a dream — and from day one, I poured all my energy and love into it. Thanks to your support, I was able to turn that dream into a reality. Your encouragement, kind words, and loyalty helped me achieve more than I ever imagined. "Being a perfectionist led me to create every single éclair with care, but it also turned me into a one-man team — chef, barista, owner, accountant and many more. After five intense years of wearing all those hats, my health began to suffer. "Then, about two months ago, I accidentally turned off the freezer. Everything inside was lost. Dozens of customers were gutted to hear the news as they left kind messages in the comment section. One said: "Oh we're so sad, and the shop being closed this last while has definitely been missed. You brought pure quality and something different to the area. Hope you find some balance for the future, take care of yourselves." Another wrote: "So sad to see the best eclair shop in the world being closed. Hope your new path brings you lots of joy and peace."
