DES MOINES, Iowa — Eggs are in tight supply and expensive, so this week a donation of eggs could not have come at a better time. The Michael Foods plant in Norwalk has donated 84,000 pounds of pre-cooked eggs on 72 pallets to the Food Bank of Iowa. 'Bottom line is even on the best day around here we always need eggs and with avian flu clearly this is not the best day,' said Annette Hacker, Vice President of Communications for the Food Bank of Iowa. 'While we still have shell eggs, fresh shell eggs on inventory, it's not as many as we typically have and we can't buy them right now because at 6.50 plus a dozen it's completely cost prohibitive.' Each egg is cooked to form a small patty shape and is often served in hotels for self-service breakfast. 'These egg entrees not only provide a delicious source of protein, but they're easy for anyone to prepare. And repackaging them into family friendly portions is a terrific project for our volunteers. We are grateful to Michael Foods for once again sharing their surplus of restaurant-quality food with Iowans facing hunger.' 'Donating locally is important to us,' said Mike Arndt, senior human resources manager with Michael Foods in Norwalk. 'This is good food and we want to see it go to good use.' Food Bank of Iowa's Shearer said she has purchased eggs in the past, 'but with current pricing and limited supply, they're just too cost prohibitive.' She was quoted $6.50/dozen for large eggs last week. To help distribute the eggs, volunteers will re-package the eggs into around a dozen or so per bag, to make available to food pantries across the 55 county region served by the Food Bank of Iowa.
