Trying the cotton candy bacon at RodeoHouston
I tried my (now sticky) hand at eating the new cotton candy bacon on a stick at the Houston Rodeo.
Dig in: This delicacy is from Rousso's Fat Bacon, which earned them the rodeo's Gold Buckle Foodie Award for best new flavor in 2025.
The dish made its debut and won Best Taste in the sweets category at the State Fair of Texas last year.
My experience: From the first bite to the last, the treat provided a perfectly hyperbolic pairing of sweet and savory.
Though a little too sweet-sounding for some of my family members who were with me that day — including two of three young niblings — I'd recommend everyone try it at least once.
My 14-year-old niece, the only one to take the plunge with me, rated it 6 out of 10 and said it's "very sweet and salty at the same time, with a hint of tart. The sweetness adds a punch to the taste." How could you argue with that?
The bottom line: At $16, you sure do get a honkin' piece of bacon. Just make sure to eat it before the cotton candy melts entirely.
