Mercer Co. Food Bank celebrates 4th annual Community Garden Kickoff
SHARON, Pa. (WKBN) — The Mercer County Food Bank celebrated its fourth annual Community Garden Kickoff on Saturday. The family-friendly event included rock painting, flower planting, games, storytime and hot dogs for lunch. The food bank started the community garden in 2021 through the Lots to Love Program, a partnership between the City of Sharon and Community Action Partnership of Mercer County. The garden has eight beds with different fruits and vegetables such as peppers, red raspberries, tomatoes, onions and garlic. People in the community can easily get the fresh produce. 'You can kind of see the neighbors behind us. They love having this here. they love the ability to take whatever they need, and honestly, on the volunteer and food bank side, it's just another way that we can give back. If we're not supporting our community and lifting up our community, then there is no community,' said Alexis Spence-Locke, development director for the food bank. The garden is on 4th Avenue in Sharon, across from the Buhl Club. Next Saturday, May 31, the food bank will have its Stuff the Truck event from 1 to 3 p.m. at D'Onofrio's Food Center in Hermitage. Fall Harvest Salads - packed with a cornucopia of autumn basics like kale, apples, and sweet potatoes - are on a steady rotation in my house during the colder months. But I found myself craving a spring equivalent that was a better fit for warmer weather. This recipe includes seasonal stars like strawberries, spinach, sugar snap peas, and even the unsung hero of spring cooking: carrot greens, which bring a bright, parsley-like flavor to your fork. Whether you're enjoying this salad on a sun-drenched patio or packing it for a spring picnic, it's a bowl full of renewal. Spring vegetables are all about flavor and freshness. Asparagus and leeks replace heavier winter roots, cucumber adds a cool crunch, and early cherries bring a pop of sweetness that plays beautifully with leafy greens. Carrot tops? Don't toss them—they're edible and delicious, with a flavor somewhere between parsley and carrot. Ingredients: 2 cups baby spinach 1 cup arugula 1 cup sugar snap peas, trimmed and halved 1 cup thinly sliced asparagus (blanched for 1 minute if desired) 1/2 cup sliced cucumber 1/2 cup fresh cherries, pitted and halved 1 cup sliced fresh strawberries 1/2 cup thinly sliced leeks (a fresh spring replacement for onions) 2 tablespoons chopped fresh carrot greens Crumbled feta cheese (measure with your heart) 1/4 cup toasted macadamia nuts For the Dressing: 2 tablespoons extra virgin olive oil 1 teaspoon white balsamic vinegar 1/2 cup of blended strawberries 1 teaspoon honey or maple syrup 1/2 teaspoon dijon mustard Salt and pepper to taste Instructions: In a large salad bowl, combine spinach, kale, snap peas, asparagus, cucumber and leeks. Add in the strawberries, cherries, goat cheese, and nuts. Sprinkle with chopped carrot greens for a fresh, herbal finish. In a small jar or bowl, whisk together the dressing ingredients until smooth and emulsified. Drizzle the dressing over the salad and toss gently. Tip: Add grilled chicken or salmon to turn it into a full meal, or pair it with a chilled white wine and some crusty bread for a perfect outdoor lunch. BATON ROUGE, La. (Louisiana First) — The Joe Burrow Foundation has made a positive impact in Louisiana and Ohio communities. An annual report shows how the former LSU football star's foundation helped families in 2024. The Joe Burrow Foundation's mission is to provide resources and support to the underprivileged and underserved, helping families in the state where he played LSU football and the state where he plays on the NFL Cincinnati Bengals team. In 2024, Burrow's foundation awarded $1.4 million in grants to 79 organizations that support the foundation's mission to fight food insecurity and support mental wellness for children. 'Our work would not be possible without the generosity of our donors and community partners,' the foundation wrote. 'Your support fuels our mission and makes a tangible difference in the lives of those we serve.' Who do you pick? NFL quarterback Joe Burrow names his top four LSU athletes A total of over 180,000 meals were served to families in Baton Rouge, southeast Ohio and Greater Cincinnati and $1.4 million in grants were awarded to 79 organizations to fight food insecurity and support mental wellness. In Livingston Parish, the foundation gave 3,000 students produce and dairy bags and meal kits to 400 students. The foundation paid a visit to Claiborne Elementary School in Baton Rouge in November 2024 to teach kids how to make healthy choices at the store at a mock farmer's market. EBR Schools Superintendent LaMont Cole praised the initiative, saying the experience teaches students lessons beyond the classroom. Plans are in the works to establish a kitchen in Baton Rouge to make healthy meals for kids and families. The Joe Burrow Foundation hopes to expand previous projects such as World Teen Mental Wellness Day, Breaking the Silence campaign, Fresh Produce Distribution and Rescue Kitchens.
