Why Acre Resort Is One Of Cabo's Most Exciting Culinary Destinations

One minute you're bumping down a dirt road outside San José del Cabo, the next you're in the middle of a modern jungle—part restaurant, part working farm, part design flex. It's easy to get distracted by the treehouse rooms, striking architecture, and the weddings happening on property, but the exciting story is what's coming out of the kitchen. Acre's food and drink program earned a Green Michelin Star last year—a rare nod to sustainability in the region that speaks to the depth of its commitment. Acre's 25-acre farm grows everything from guava and figs to heirloom tomatoes, chiles, and herbs—ingredients that shape the menu across the main restaurant, the bar, and even Fausto's, the resort's casual ramen-meets-breakfast spot near the entrance. Guests staying in the villas or haciendas can forage for their own use, but the real magic happens in the kitchen, where what's ripe and ready guides the day's offerings. 'That connection informs every decision, from the soil to the table.' That connection also helped earn Acre its Green Star—the only one of its kind in the area—thanks to regenerative farming techniques, crop rotation, and a serious commitment to sustainability that goes well beyond buzzwords. Mixed Beet Salad Acre Resort Acre's menu shifts with the season, but the focus stays the same: clean flavors, local ingredients, and dishes that look as good as they taste. The crispy rice bites set the tone—crackly, warm, and topped with cool slices of tuna and a pop of caviar. They're elegant but approachable, like much of the menu. The soft shell crab taco follows with a hit of texture and brightness, the fried crab paired with just enough heat and citrus to keep things lively. Grilled octopus from the charcoal oven is deeply savory, smoky at the edges, and balanced with a splash of acidity. Every dish is carefully plated without feeling precious—bold, fresh, and built to let the ingredients lead. The garden-to-glass philosophy runs deep, with everything from zebra lemon leaves to Buddha's hand and lemongrass pulled from just steps away. The Key Lime is a standout: made with Espadín mezcal, lemongrass cordial, and a cloud of coconut foam, it hits like dessert without the sugar—airy, bright, and cut through with citrus and smoke. Seasonal specials round out the list, like the Velocita, a savory mix of Patrón Cristalino, red fruits, and tomato water, and the Buddha Drop, which keeps things crisp with vodka, lemon leaf cordial, and dry vermouth. Earlier this spring, World Class Competition winner Francisco Vaccalluzzo led a bar takeover, but even without guest bartenders, the list stays sharp—balanced, refreshing, and always rooted in the landscape. The wine list focuses on bottles from Valle de Guadalupe and California's Central Coast—crisp whites, sparkling rosés, and light reds that play well with Baja's sun and salt air. Introducing Time Out's Sustainable Stamp: a new way to make eco-friendly choices
It's more urgent than ever to continue doing our bit to help save the planet – and it should be obvious by now that a collective effort can make a huge difference. While adjusting our daily habits and making more informed eco-conscious decisions is one of the more achievable and practical ways we can reduce our carbon footprint, a perception still sticks that it isn't always as easy as it sounds. Earlier this year, Time Out spoke to its global community of readers about sustainability as part of its Planet & People report. More than 4,000 respondents gave their views on sustainability and the changes they'd make in their own lives to do more to tackle the climate crisis. A huge 95 percent of respondents said they'd be willing to make compromises to live more sustainably, with 72 percent saying that 'changing daily habits' is their preferred way to contribute. However, making eco-conscious decisions still feels difficult for many, with 28 percent of respondents admitting they find it 'tricky' compared to 21% saying they find it 'easy'. That's what gave Time Out the idea to introduce a new product feature across its content. The Sustainable Stamp will now show up across Time Out's reviews and guides to simply and clearly signpost venues and events that have eco-friendly objectives at the core of their business. The newly introduced stamp will help readers to more easily identify the venues employing progressive and world-saving sustainable practices. The idea is to empower people to make informed eco-conscious decisions on everything from where they eat to where they stay. Our recent Planet & People survey asked respondents what they'd be interested in doing to become more sustainable and help save the planet. The top two results focused on food and eating out, with 68 percent saying they'd choose restaurants with locally sourced ingredients and 67 percent saying they'd make choices based on venues that employ reduced food waste practices. So, it makes sense to mark the launch of Time Out's Sustainable Stamp with five newly updated Best Sustainable Restaurants guides, which spotlight tasty eco-friendly eats in London, Los Angeles, New York, Singapore and Sydney. This is the start of an ongoing commitment to spotlight the best sustainable venues and events in cities across the world, as well as clearly signposting eco-friendly options in our more general guides. The Sustainable Stamp is not an official certification by Time Out, but instead utilises third-party certification to help clearly highlight venues and events that have been recognised as sustainable. This includes businesses that have been acknowledged by organisations such as The Sustainable Restaurant Association, B Corp, and Green Michelin Star, among others. Cross referencing third-party certification with our own expertly-reviewed and trusted recommendations, we have produced guides to some of the best culinary experiences that use sustainable practices. With nearly three-quarters of people wanting to change their daily habits in order to lead a more eco-conscious lifestyle, we're hopeful that the Sustainable Stamp across Time Out's respected reviews and recommendations will make that adjustment just a little bit easier.

Restaurant closes after winning Michelin star due to 'deeper problem'
A restaurant in Worcestershire that was awarded a coveted Michelin Green Star just weeks ago has announced it has closed 'for the foreseeable future'. Native, the sustainable restaurant that took over where the former Pensons was on the Netherwood Estate, says that it is experiencing 'a deeper problem' following issues with its extraction system. Customers have been told that all future reservations have been cancelled and those who have put down deposits will receive full refunds within seven working days. The restaurant was led to success by Great British Menu chef Ivan Tisdall-Downes who has now announced his departure from Native. Customers enquiring about bookings and future plans are now being met with automated replies that tell of 'extreme lows' when contacting the restaurant, which sits on the border between Worcestershire and Herefordshire. It reads: "Extreme highs are often followed with extreme lows. "Following the amazing news at this year's Michelin awards we have returned home to find a broken extraction system. "What we hoped was a quick fix turns out to be a deeper problem with our systems and so sadly, cannot be an immediate fix. "The large cost to repair this equipment is unfortunately the straw that broke the camel's back and has had a huge detrimental effect on a small business with such tight margins and unfortunately has put us in a position whereby the directors at Hestia Ltd have taken the decision to close the restaurant for the foreseeable future. "We have cancelled all future reservations via our online booking system and if you have paid a deposit a full refund will have been actioned already, you can expect this back within seven working days." It added: "We are very sorry for any inconvenience caused and wish all our customers well for the future." It's a sad blow for food fans who enjoyed sampling dishes using produce grown in Native's own garden. The restaurant opened in May 2024, a replacement for Michelin Star hit restaurant Pensons. Chef Ivan Tisdall-Downes is yet to publicly announce his next move. A Green Michelin Star is reserved for restaurants that excel with sustainability at the core of their operations. There are now only 34 restaurants in Britain that hold the award.

Best hotels in Amsterdam for 2025, from indulgent stays to affordable breaks
Amsterdam continues to charm visitors every year, ranking high up on the list for the ultimate city break. Despite the constant struggle with overtourism, this free-spirited city's locals are actively encouraging visitors to eschew partying and embrace slow travel and sustainability. Nicknamed the Venice of the North, Amsterdam has always been kaleidoscopic where there's an eclectic mix of history, heritage, charm and eccentricity. There's no shortage of hotels to pick from here either – be it along the labyrinth of its iconic canals to newer, swanky hotels in revamped industrial buildings by its docklands. For an extra fun experience, particularly for families, there are houseboats available for longer stays that won't break the bank. Pillows Grand Boutique Hotel Maurits at the Park If you'd prefer to merely visit the canals but have your base in a quiet, verdant space in the city, then look no further than Pillows Hotel. Hotel V Nesplein Considering that most rooms in the heart of Amsterdam tend to lean on the smaller side, the funky Hotel V Nesplein offers sizeable rooms and bathrooms. The hotel pays homage to the area's theatre district with retro posters adorning in the common areas. The décor in its rooms is very much what you'd imagine Don Draper's stylish bedroom would look like in the 1960's. The mustard and ebony-hued walls are loud, but not gaudy. The restaurant here called The Lobby serves a smashing breakfast. Be sure to try their Dutch toast and pumpkin cake. 10. Conservatorium Hotel What was once a former bank and then a conservatory is now a smart boutique hotel in the Museum Quarter, which is also within walking distance from the shopping districts of the city. Their stunning, contemporary rooms are adorned with monochrome wallpapers, yet, there's a splash of bright colour, thanks to the rugs, sofas and lampshades. The common areas have high ceilings, allowing plenty of natural light. Treat yourself to a wellness weekend break at their Akasha Spa, which is renowned as one of the best in the city. 11. Volkshotel If you walk into the brilliant Volkshotel and wonder why it looks like a newsprint office, it is because it was the former site of the Dutch daily morning newspaper De Volkskrant. Now turned into one of Amsterdam's top affordable hotels, the designs in the bright rooms are fun and each is equipped with colourful sofas and bedding. The hotel's biggest draws are Doka, their nightclub in the basement which serves superb cocktails as well as Badplaats, the spa on the rooftop where visitors can take a dip in one of the three hot tubs with panoramic views of the city. 12. Hotel Arena Hotel Arena is a gem in the trendy, up-and-coming neighbourhood of Oosterparkbuurt. This was a chapel (which still exists), a former youth centre and performance space which saw gigs in the 1990's from artists like Norah Jones and Oasis. Today, this intimate, chic hotel is right by the leafy Oosterpark and close to the canals. Even their basic room is comfy yet extravagant, as it is set over two levels with a high ceiling and views of the park. The hotel also hosts a series of events on a regular basis for guests which include guided walks in the park and local art exhibitions in their common areas. 13. Sailor Suite Coaster Mado Beyond its canals, one of Amsterdam's outstanding features is also its beachfront, particularly in the trendy Eastern Docklands area. On KNSM Island, which is brimming with nautical history, primarily steamboat manufacturing, you'll have your own gorgeous houseboat with Sailor Suite Coaster Mado. Equipped with a kitchen, bathroom and two bedrooms, the 'house' has been soundproofed and has a private entrance. Adventurous children will love the swing on the deck, while the grown-ups will enjoy the sunset on the terrace over the water. You've got several green spaces nearby, such as Flevopark, Oosterpark and Funenpark, else a short tram ride takes you to the city centre within ten minutes. Follow the scenic walkway along the waterfront and you'll reach the National Maritime Museum too. 14. Hotel Estheréa You might actually believe in time travel when staying at the Estheréa as you feel like you're back in the 1920s – where bright colours and bold designs were applauded. With tropical flora and fauna motifs and geometric patterns in the lobby and living rooms, Hotel Estheréa is where Art Nouveau meets palm-fringed beaches, with an element of whimsy. There's a generous burst of colour in every corner – from the bold geometric shapes on the floor to emerald green leaves and fuchsia pink floral patterns on the wallpapers. Located in Prinsengracht Canal, near the popular neighbourhood of Jordaan, the suites at the Pulitzer promise beautiful canal views and large living rooms.
