On a sun-kissed morning in late April, inside the luxurious Grosvenor House Hotel in Dubai Marina, global payments technology provider Financial Software & Systems Private Limited (FSS) hosted the second edition of its flagship event in Dubai. The gathering brought together policymakers, banking leaders, and fintech experts from across the Mena region for a morning of high-impact discussions on the transformational power of artificial intelligence (AI) in the payments space. Balasubramanian highlighted the importance of 'dual intelligence', urging organisations to think beyond flashy tools and focus instead on leveraging commonly available technologies in innovative ways to achieve differentiated outcomes. He also stressed the need for smart prioritisation, advising firms to pursue a dual-track approach: capitalise on easy, quick wins to build internal momentum while simultaneously investing in high-impact, long-term AI initiatives that generate sustainable value. On the critical topic of ethics in AI, Balasubramanian was unequivocal: 'Responsible AI adoption — built on transparency, fairness, and accountability — is non-negotiable.' He added that ethical frameworks are essential to mitigate risks, build stakeholder trust, and unlock AI's full potential over the long term. Setting a bold vision, he urged organizations to target a 30 per cent impact across systems, workflows, or decision-making as a benchmark for real AI-led transformation. He concluded by emphasizing that trust and regulation are key enablers of AI success: a trusted partner ecosystem can dramatically accelerate meaningful adoption, while proactive regulatory frameworks will shape how AI evolves across industries. A standout use case came during a session led by Imad Ahmed Abdalwahab, Managing Director of Government Payment Solutions at Magnati, who shared how AI is already delivering tangible results. Imad discussed an instance in which a high-risk transaction was identified and blocked by an AI-powered engine in real time — demonstrating how financial security is shifting from reactive protocols to proactive systems. 'AI enables us to act before the threat fully emerges,' he said, adding that the UAE's leadership in fintech governance is helping organisations like Magnati push boundaries safely and effectively. The morning reached a crescendo with the panel discussion 'Reimagining Payments in the Artificial Intelligence Era,' moderated by Benedict Xavier, Global Head of Business Solutions at FSS. The session brought together a distinguished group of industry leaders, including Haishan Wu, Head of Innovation, AI & Data at Zand Bank; Mohamed Chakib Ouabi, Data & AI Value Strategy Lead at Accenture; Devendra Kumar, Head of Digital Channels – Global Transaction Banking at Mashreq Bank; Malaz Mubaid, Chief Executive Officer of Wall Street Exchange; and Sandeep Crasta. The discussion spanned everything from fraud prevention to regulatory compliance, predictive analytics, workflow automation, and customer personalisation. Panelists highlighted how AI enables a more tailored approach to banking — making it possible to anticipate customer needs, detect anomalies, and comply with evolving regulations in real time. Both the men's and the women's teams gathered together at five-star hotel Grosvenor House for a night of awards and celebrations. 14 14 14 14 14 14 There were smiles on the faces of everyone in attendance as both the men's and women's teams had been successful on the pitch over the weekend. Sonia Bompastor 's women's side managed a 1-0 WSL win over London rivals Tottenham Hotspur, while Enzo Maresca's side pulled off a shock 3-1 win against Premier League champions Liverpool. Stars like Enzo Fernandez, Cole Palmer, Jadon Sancho and Noni Madueke got suited and booted as they stopped for pictures on the blue carpet. While women's team players such as Millie Bright, Keira Walsh, Sam Kerr and Erin Cuthbert were also wearing their finest threads for the occasion. The glitzy night saw seven awards dished out for the players including Men's Player of the Season, Women's Player of the Season, the Players' Player of the Season honours for both sides. Millie Bright and Marcus Bettinelli were recognised as the club's PFA Community Champions - an award highlighting the players' contribution to the club charity, the Chelsea Foundation. While 17-year-old Lola Brown was named the Women's Academy Player of the Season after breaking into the first team this term. Chef Ashraf Valappil representing the Vineet Bhatia Concepts, Chef Milos Mirjanic from Siddharta Lounge by Buddha Bar, and Chef Nathan Dors from City Social each impressed the judges with their culinary expertise and innovative dishes, securing medals and accolades at this year's competition. Chef Ashraf Valappil: Oatly Plant-Based Challenge Finalist Chef Ashraf participated in the Oatly Plant-Based Challenge, where he was tasked with creating a plant-based, vegan cauliflower dish that was both modern and comforting. Drawing on his skills and creativity, Chef Ashraf crafted a dish that celebrated texture, flavor, and sustainability. ' Competing in Salon Culinaire was an incredible experience. I had only two weeks to perfect my dish, but the real challenge was working under pressure and performing in front of a live audience and judges, ' said Chef Ashraf. His dish was praised for its innovation and was awarded a medal, solidifying his place as one of the standout chefs in the competition. Chef Milos Mirjanic: Beef and Beyond Challenge Runner-Up & Mystery Basket Grand Prix Best in Class Winner Chef Milos competed in the Beef and Beyond Challenge, where he had to prepare a dish showcasing the finest Australian Wagyu beef. With just 60 minutes to complete his dish, Chef Milos presented a beautifully balanced plate of Wagyu beef with seasonal vegetables and a red wine sauce, demonstrating exceptional skill and creativity. ' The competition was intense, but the hardest part was the lack of space and equipment compared to my usual kitchen setup, ' explained Chef Milos. In addition, he collaborated with Chef Nathan Dors in the Mystery Basket Grand Prix, where they had just one hour to create a two-course meal from a mystery basket of ingredients. The pair worked under time pressure to create a dish that combined dark chocolate and blood orange, resulting in a rich chocolate fondant with brandy ice cream, blood orange, and crème anglaise. Chef Nathan Dors: Mystery Basket Grand Prix Best in Class Winner Chef Nathan's experience in the Mystery Basket Grand Prix highlighted his adaptability and creativity. With minimal preparation time, the chefs were given a list of ingredients just hours before the competition. ' The logistics of getting our equipment there and working in unfamiliar spaces were a challenge ,' said Chef Nathan. Whom alongside Chef Milos, used the ingredients in the mystery basket to craft a visually stunning and flavorful dish, which impressed both the judges and spectators. Each of the chefs faced unique challenges in the competition, from unfamiliar equipment and space limitations to intense time constraints. Despite these obstacles, they showcased remarkable skills in crafting dishes that were not only delicious but also innovative. Judges focused on factors such as creativity, use of ingredients, presentation, and technical precision, and the chefs rose to the occasion with dishes that pushed the boundaries of modern cuisine. Reflecting on their experience, Chef Ashraf shared, ' Being in the company of so many talented chefs was the most rewarding part of competing. It's not just about winning, but about pushing yourself to do your best .' Chef Milos echoed this sentiment, stating, ' Winning is just one part of the journey.
