La Diabla chef plans expansion with five new food concepts

La Diabla chef Jose Avila is cooking up devilishly ambitious expansion plans. The latest: His acclaimed Ballpark pozolería — known as Colorado's only dedicated pozole spot and a 2023 Michelin Bib Gourmand honoree — is slated to spill over into the building next door at 2239 Larimer St., the restaurant shared on social media. Zoom in: The expansion will essentially act as a mini-food hall featuring five new micro-concepts under one roof, each zeroing in on a single specialty: Seafood Mushrooms Tortillas Churros Barbacoa Why it matters: As food halls struggle to stay afloat, Avila's approach flips the script by building around one brand rather than acting as an incubator to multiple independent eateries. What's next: City officials are currently reviewing Avila's plans, which he submitted in late January, per the restaurant's social media post. No opening timeline has been announced yet.
