Prestatyn woman named as finalist in Big Lunch Recipe Search
Kathryn Burnand impressed judges with her dad's recipe for 'Jamaican patties', which organisers behind the food-sharing initiative hope will be cooked up and served at Big Lunch events across the country on June 7 and 8.
The inspiration behind Kathryn's award-winning dish came from her dad, who taught her to make the patties when she was younger.
Packed with lamb mince, spices and chunks of potatoes, Kathryn's patties are a nod to her Jamaican heritage.
Kathryn, a former charity shop manager who is in her 60s, cooks her signature patties at gatherings for family, friends and her community, with whom she shares a communal garden and grows vegetables.
She said: 'I couldn't be happier to have my patty recipe recognised as part of The Big Lunch Recipe Search.
'It's a recipe that's really close to my heart, as my dad taught it to me before he passed away.
'He was Jamaican and I'm British, so I feel it's a dish that connects across different cultures and crosses bridges far and wide.'
Kathryn is set to have her prizewinning recipe featured in a special Big Lunch online cookbook and will receive a gift voucher to spend on a Big Lunch buffet.
She is one of ten finalists from around the country to be commended, with other prizewinning dishes ranging from a strawberry and vanilla cheesecake to butternut squash empanadas and Irish apple chutney.
Lindsey Brummitt, programme director at the Eden Project who are behind The Big Lunch, said: 'We were blown away by the quality of the recipes we received from passionate home cooks around the country and are thrilled with our top 10 dishes, showcasing community sharing at its best.
'You can't have a Big Lunch without a bite to eat - food connects people, starts conversations and brings us all together.
'It's something we all have in common and that's why The Big Lunch works so well – it's about making those vital social connections while tucking into something delicious.
'So why not pick a recipe that tickles your fancy and share it with your community at The Big Lunch on June 7 and 8?'
