Grilling expert Paul Sidoriak, cookbook author and founder of Grilling Montana, has spent years testing tools and refining his setup to make outdoor cooking more efficient and more enjoyable. Ranked high on his list are the OXO Good Grips Grilling Tongs, which he praises as 'the best by a long shot,' thanks to their durable build and ergonomic feel. Sidoriak also emphasizes the importance of smart extras and even well-chosen outdoor furniture, both of which he believes can elevate the entire grilling experience.'Whether you are an absolute beginner or someone who loves to entertain and has people over frequently, it's important to set up a space for the grilling,' he says. 'Think of it a little bit like setting up a micro kitchen.' Ahead, Sidoriak breaks down the must-haves that can turn a good barbecue into a great one. Amazon 'Not all tongs are created equal,' says Sidoriak. When shopping for a set, he advises looking for a durable material, such as stainless steel, that won't bend while in use. It's important to look for tongs have a solid spring to them that will effortlessly open and shut as needed, too—this way, you won't fatigue your hands. Amazon Sidoriak has used his fair share of grilling spatulas over the years, but this Mannkitchen model stands out for a few reasons. It has a spacious, stainless steel surface that's big enough to use for burgers or pizzas alike, and the hardwood handle is heat resistant for comfortable usage. Its sturdiness can even be used to press homemade smash burgers. What really sets this spatula apart, though, is the design of the beveled edges, which Sidoriak says helps delicate foods like fish and veggies get successfully released from the grill without struggle. ThermoWorks As Sidoriak reminds us, there's no reliable way to accurately measure a meat's doneness without a thermometer. 'Any amount of poking, prodding, scratching, sniffing—it's all just hogwash,' he says. Even if you can estimate the amount of time you typically leave a steak on the grill, its cooking time will actually vary widely depending on factors like its size, as well as the temperature it starts out at. Sidoriak recommends silicone varieties for their superior brushing and cleaning properties. 'It's going to hold up longer, and it's going to clean better,' he says. This Cuisinart sauce pot and basting brush is one such option—a clever tool that combines storage with a built-in silicone brush for efficient, mess-free marinating. Its stainless steel build also means your sauce can be warmed right on the griddle (as long as it's not over a direct flame) in the same container. Home Depot Whether you're a fan of kebabs, satay or just any food on a stick, a set of reusable skewers is a must-have. But single-pronged skewers can make for a frustrating experience, as the food can spin around on its own when it comes time to flip. 'Once food on a stick has cooked a bit, the size of the holes change," Sidoriak explains. 'As it becomes done, the food will actually release from the stick,' causing it to spin. For that reason, a dual-pronged skewer so much more effective in keeping food in place as it's flipped, allowing you to cook both sides and serve skewers without frustration. GrillGrate Small, delicate foods like scallops and asparagus taste delicious when cooked over an open flame, but they often come with the risk of potentially sacrificing some to the fire through open grates. Enter the GrillGrate Flavor Zone, which is designed to universally fit on any grill top—be it gas grill or charcoal—to protect foods from falling through the cracks, preventing food waste. 'They [also] make beautiful, flavorful grill marks,' Sidoriak adds. These grates are made from hard anodized aluminum that promotes even heating and rust prevention, and the raised rail structure is designed to trap moisture and prevent food from drying out as it cooks. It's also double-sided, so you can switch between flat-top grilling and grates. Home Depot Regardless of how many people you're hosting for a backyard barbecue, you should always take time to prepare your area for both cooking and entertaining. 'I'm a huge proponent of setting up your outdoor space with, at the minimum, a table that's at an ergonomic height, so you're not putting stuff on the ground,' Sidoriak says. He advises against relying on the small side tables attached to the grill, as they rarely offer adequate space for both raw and cooked food, as well as things like beverages to keep you hydrated while you're grilling. Investing in a foldable table with an adjustable height option means you can switch between counter height and seated height with ease, transforming from a prep space to a serving space as needed. Amazon If you're working with a flat-top grill—or any grill without a non-stick coating—you need to make sure you keep up with seasoning the surface for optimal food release. According to Sidoriak, the best method for this is using a microfiber cloth and flaxseed or vegetable oil. 'The seasoning process is basically building layers of patina by putting on an oil and then burning it off,' he says. He recommends pouring oil directly on a microfiber cloth and then spreading it on the grill surface, as it's the most even way to do it without accidentally dripping or pooling oil. Then, burn it off completely before you start cooking. Made In Cookware If you're a fan of crispy-thin 'smash burgers,' no tool gets the job done quite as well as a grill press. This stainless steel model from Made In, recommended by Sidoriak, is high-quality, built to withstand up to 800 degrees and equipped with a genuine leather handle cover for comfortable holding. It's not a necessity (you can always use a durable spatula to smash your burgers down), but once you have it, it can become a multipurpose gadget. 'It's great on top of bacon to keep it flat or help it cook,' Sidoriak says. He adds that it can also help uneven foods like chicken breasts cook more evenly, as well as browning vegetables more effectively with the added weight. Amazon For Sidoriak, the most treacherous part of hosting a barbecue isn't necessarily cooking over an open flame; it's trying to haul all the food through three separate doors to successfully get them to the grill. 'Being able to transport foods, both raw and cooked, on these cafeteria-style trays is kind of a game changer,' he says. Each tray is spacious enough to fit six burgers at once, and the two-color pack makes it easy to designate one to raw foods and one to cooked. They're also dishwasher-safe, which makes for care-free clean-up and sanitizing after use. I tend to think of the company's prowess in terms of kitchen gadgets, such as garlic presses and kitchen scales, rather than products to make a perfect brew. However, I couldn't turn down the chance to test the OXO Brew Rapid Brewer. I love the concept of making a delicious cup of coffee at home, without a complex machine that has to stay permanently fixed on your countertop. What's more, it's small and compact enough to take to work or on your travels. In less than five minutes, you can make 1-3 servings of an espresso-style concentrated coffee, similar to making coffee with an AeroPress. You add finely ground coffee to the filter, tamper the grinds, add water, and wait. After 2-5 minutes, depending on whether you want a hot or cold brew, you use the pump to press the concentrated coffee into the carafe. From here, you can make your desired drink — an Americano, latte, or cold brew cocktail! Here's how I got on when I tested the OXO Rapid Brewer. The OXO Brew Rapid Brewer is available for $39 at Amazon. It's a good price compared to the AeroPress, which has a list price of $49 at Amazon. However, it's far cheaper than the AeroPress Premium, which rockets up to $179 and is available directly from certainly feels like an affordable coffee maker, and would be ideal for gifting without breaking the bank. I'm so used to using an AeroPress that I didn't think I could be swayed by anything else — but the design of the OXO Brew Rapid Brewer is impressive. It does come with a few parts: a carafe, pump, coffee filter, water chamber and tamper, but it doesn't seem excessive. And everything fits neatly together and can be stored without worrying about losing an essential part. I was even impressed that the tamper fits inside the coffee filter. Everything also feels premium to hold. The coffee filter has a diagonal ridge pattern that helps you grip, but also adds to the aesthetic, and the pump is strangely satisfying to press. You'll also find a stainless steel filter integrated into the coffee basket, so you'll never have to worry about running out of paper filters when you're desperate for a caffeine hit. Plus, if you are clumsy — especially likely until that caffeine hits in the early morning —the water chamber and carafe are made from Tritan Renew. This 50% recycled material that is durable and resistant to impact, unlike glass. Inside the coffee basket, you'll find two fill line markings, one for a hot concentrate and another for a cold concentrate, where you'll need double the grinds. The water chamber also includes a maximum water level mark, and there are alignment marks on the filter and water chamber to ensure everything is secured before you make your brew. And to avoid any awkward spillages, the carafe has a pour spout. I found the carafe super helpful. When using an AeroPress, I usually grab the nearest mug, and it doesn't always sit perfectly on top. But with the carafe included with the OXO's Rapid Brewer, it makes life less messy. The best thing about this coffee maker is that it doesn't need electricity, apart from heating the water, if you fancy a hot brew. Other than that, it's all down to you. Although, it won't be able to heat and froth your milk if you fancy a cappuccino. The coffee-making procedure is the same, whether you're making a cold or hot coffee; the only adjustment needed is the amount of coffee you use and the brewing time. The detailed instructions suggest 20g of coffee for a hot brew, with a 2-minute brew time, and 40g for a cold brew, with a 5-minute brew time. Once the coffee has made its way into the carafe, you can drink it however you like. OXO suggests diluting the coffee concentrate to a 1:2 or 1:3 ratio with either water or milk. I found the coffee maker easy to use and put together. However, on one occasion, I did forget to place the carafe underneath. Everything is there for you to make the process as easy as possible. Marker lines are placed in the filter to guide you with the correct grind amount, and the water chamber indicates the maximum fill level. There are also alignment markers on the water chamber and filter to ensure everything is sealed before you make your brew. The first time I used the brewer, I did find the coffee came through very quickly, and there wasn't much water left in the reservoir before I used the pump. However, after a quick read of the troubleshooting section on the instruction guide, I discovered that the grind was too coarse and I needed to use a finer grind. It may take you a few goes to get it just right, but that's all part of the fun. If you're looking for any flaws in performance, you won't find any with the OXO Brew Rapid Brewer. Apart from being easy to use (see below), you're guaranteed a smooth brew, without any hint of bitterness. And thanks to the filter, you won't find any grit in your cup, or between your teeth! It feels like a premium tasting coffee without a premium price tag.I'd compare it in taste to what you'd expect from an AeroPress, and for a cold brew, that is known to take hours to brew, you get a superb result in 5 minutes. You really can't argue with that. The process of using the OXO Rapid Brewer really couldn't be simpler, although it did help me that it's a similar system to the AeroPress. Here's how you use it: 1. Place your desired amount of coffee in the coffee basket. 2. Tamper down and level the coffee. 3. Attach the coffee basket to the water chamber. 4. Place the unit over the carafe. 5. Fill the water chamber with hot or cold water (5.6oz/160ml max). 6. Place the pump on top of the water chamber, making sure the pump is closed down. 7. Wait 2 minutes for a hot brew and 5 minutes for a cold brew. 9. Push down and twist the locking handle of the pump a quarter turn to unlock it. Press down slowly, and repeat a few times. 10. Your brew is now ready to be made into your desired drink. Once you've made your brew, it's time to disassemble all of the parts. I did find the coffee grinds a little awkward to remove from the coffee basket, especially considering how easy it is to tip out the grinds from an AeroPress, but it wasn't a big deal. The water chamber, coffee basket, and carriage are all top-rack dishwasher safe, but OXO recommends handwashing the tamper, and warns that the pump should not be submerged in water and is wipe clean unit is also neat and compact to store, so you don't need to worry about random parts being scattered throughout your kitchen. I like the feel of the OXO Brew Rapid Brewer — and isn't that what products are all about — the enjoyment we get from the whole experience, not just the end result? It's been a real winner in my household, and my adult sons couldn't wait to get their hands on it. They loved the satisfaction of using the pump — once you try it, you'll know. I particularly like how easy the filter is to attach, much more so than when using the AeroPress Clear, and you never have to think about paper filters. What's more, there's no issue of pressing too light or too hard on the pump, like you would with a plunger design. It also produces a tasty brew, and you can adjust the grind according to your results, with OXO recommending a fine grind for the best results with the Rapid Brewer. What's next? I'm off to make a Cold Brew-Tini — 2oz vodka, 1oz cold brew concentrate, 1oz coffee liquor, and ½ oz maple syrup — cheers to that!

VE Day Glasgow: 'It was the end of fear, and everyone danced'

On VE Day, May 8, 1945, she remembers the celebrations, and the sense of relief that flooded the homes and streets of her native Maryhill. 'I lived with my father, my aunt and my grandfather, and I remember them celebrating, and the street parties,' she says, smiling. 'To be honest, I don't think I really quite understood how important it was, but there was such relief, everywhere.' To mark the 80th anniversary of VE Day, staff threw a party for the residents, complete with bunting, spam fritters and Elvis Presley. Elvis, (acclaimed impersonator Shaun Hamilton), was a hit, shimmying his way around the gardens, dancing with the ladies, shaking hands with the men and even planting a kiss on the cheek of guest of honour the Lord Provost, Jacqueline McLaren. 'It's important to hear their stories on a day like today. There is a great community feel to today's event, it's fantastic. It's a privilege to share it all with them.' (Image: Gordon Terris/Newsquest) In the bright May sunshine, sitting beside her daughter Val, Cathy recalled the events of 80 years ago and the mixed emotions felt by families across the city. 'There were parties to celebrate at school,' she says. 'It was a big relief, because our fathers were coming home.' She pauses. 'Of course, some of the children at school, their fathers were never coming home,' she adds, sadly. 'So there were tears, too. 'But we got through it. There were good times too, and we got through it.' 'We have a display here that shows you all the old things I remember from my childhood – OXO cubes, the Singer sewing machine, the washboard,' says George. 'I'm only 23, so VE Day feels very distant for me but many of the residents were there, at the parties, feeling the relief at the end of the war. I's great to be able to listen to their experiences.' 'It's a fantastic day, and you can see how much the residents are enjoying it,' she beams. 'We have eight units here, so this is a lovely chance for everyone to come together in the sunshine and remember, and celebrate.' She shows us a beautiful black and white photo of her with her husband Jim in their younger days. The couple were teenagers around the time of VE Day, 1945. 'I was 13 and I remember everyone was dancing and singing and kissing on the streets,' recalls Betty, smiling. 'There was so much relief – the end of blackouts, of people yelling 'put that light out', the end of air raids and fear.' Betty, now 93 and living in Hawthorn House's Violet Unit, grew up in the Gallowgate area of the East End. 'My pals and I wanted to go to George Square and my mum wasn't too keen, but she let us eventually," she grins. "It was packed with people and soldiers – it was marvellous. Betty laughs. 'I remember a firework shooting up above the crowd and we all looked up in awe – then quickly realised it was coming back down and we had to get out of the way,' she says with a smile.
