James Beard-nominated chef opens McMinnville restaurant The Pub

Regenerative agriculture hospitality group The Ground is growing once again, adding a new downtown McMinnville restaurant concept. This is the second restaurant for the group behind the Humble Spirit and James Beard semifinalists chef Sarah Schafer. The new concept is called The Pub and will be located at 326 N.E. Davis St. in McMinnville, next door to Humble Spirit. The two establishments will share a kitchen, according to a news release. The Pub is set to open April 25. The group describes The Pub as 'beverage-forward' and will feature craft cocktails, rotating beer on tap and wine. The menu will pull from the 'rich beverage culture of the Willamette Valley.' The food menu will be barbecue-focused and follow the group's ethos of farm-to-table and regenerative agriculture. 'We're excited to expand our hospitality offerings with a concept that celebrates smoked flavors and delicious cocktails while maintaining our dedication to regenerative farming and hyperlocal sourcing practices,' Schafer said in a written statement. Schafer will lead both The Pub and Humble Spirit's kitchens. Some favorites from Humble Spirit will be on The Pub menu, including the fried chicken sandwich and smashburger, according to the release. In addition to the restaurants, The Ground also does catering, operates the events venue Stillwater and has the Tabula Rasa Farms. The Pub will be open seven days a week and will have walk-in service and takeout. It will also have summer outdoor dining and other events such as live music. In its past the space was a library and the hospitality group is leaning into that history as part of The Pub's decor. This year Schafer was a semifinalists for the James Beard Award for Best Chef Northwest and Pacific. She was nominated alongside fellow McMinnville chef Kari Shaughnessy, although Shaughnessy recently announced that this summer her restaurant Hayward is moving to nearby Carlton. It's been a big year for Willamette Valley restaurants. In addition to Shaughnessy and Schafer, chef Timothy Wastell of Amity's Antica Terra was also nominated for a Beard Award for best chef. Additionally, downtown McMinnville boutique Tributary Hotel announced it is reopening its restaurant under the name Ōkta Farm and Kitchen.
