This season, some favorite L.A. hotels are revamping their food and beverage offerings. New culinary concepts are making their debuts at beloved Beverly Hills properties, including the Four Seasons Hotel Los Angeles — which is launching a glamorous 1920s-themed winter pop-up — and L'Ermitage, which is introducing two Italian-inspired options, a signature restaurant and an elegant lobby lounge. Over in Santa Monica, the longtime Shore Hotel is giving guests a novel reason to imbibe and indulge amid ocean views outside. New properties also opened their doors — in Long Beach, courtesy of Fairmont, and Brentwood, by way of Avi Brosh's Palisociety. It all amounts to lots more dining, drinking and lounging options for seasonal hotel guests and locals alike. Here's what's on tap. Merging the contemporary and the timeless, Veil & Velvet is an exclusive new speakeasy concept taking over The Lounge of the Four Seasons Hotel Los Angeles at Beverly Hills through March 3. Beckoning you to sit, sip and stay, the Old Hollywood-inspired setting conjures a piano club with dark wood, rich velvet and plush leather seating, creating a moody, seductive atmosphere. Guests can enjoy reinvented American favorites like a wagyu burger and crispy chicken bites, as well as classic cocktails and unique elements like on-demand caviar service, a roving martini cart and live cigar rolling. 300 S. Doheny Drive, Beverly Hills, The Shore Hotel, a mainstay in Santa Monica, is shaking things up with the unveiling of Shoreside, a signature restaurant and bar featuring California-coastal cuisine and glorious oceanfront views. From indoor, outdoor and poolside spaces, guests at this 76-seat restaurant can enjoy cuisine from executive chef Todd Bohak, who got his start working for chefs Hans Rockenwagner and Nancy Silverton. Indulge in Hamachi crudo, Brandt prime filet and Sonoma lamb chops alongside craft cocktails from a cozy seat front and center in the restaurant's 'outdoor living room.' 1515 Ocean Ave., Santa Monica, The newest addition to Avi Brosh's Palisociety portfolio, Le Petit Pali has a third signature location in Brentwood. Reimagining the former Brentwood Inn — and the Brentwood Motor Hotel, prior to that — this 25-room boutique hotel merges European-flared design with an intimate bed and breakfast concept. Like the other two locations in Carmel-by-the-Sea, this hotel is decorated in shades of white and deep green, with brass accents, potted olive trees and greenery. In addition to a curated library and complimentary candy bar, guests staying in 25 rooms will enjoy Diptyque bath products, SMEG mini fridges and a complimentary breakfast basket with Clark Street pastries and locally sourced items. 12200 Sunset Blvd., Brentwood, To conclude its extensive refresh, L'Ermitage Beverly Hills is introducing two new culinary venues: signature restaurant Costa Covo Osteria and lobby lounge Alcova Apertivo. The former, an all-day coastal Italian eatery with French Riviera influences, transports guests to the La Dolce Vita with seasonal Italian dishes from executive chef Todd Matthews and curated wines from Italy and France. The latter is an elegant lounge open in the afternoon and evening, serving negronis from a custom trolley and small plates like sterling Osteria caviar and ricotta bruschetta for lunch and dinner as well as a 'Rendezvous Hour' in between. 9291 Burton Way, Beverly Hills, A historic landmark originally built in 1926, the Breakers property has played host to stars such as Elizabeth Taylor, Cary Grant, Babe Ruth and Clark Gable. Following a renovation and partnership between Fairmont Hotels & Resorts and investment group Pacific6, the new Fairmont Breakers Long Beach has opened its doors. Blending vintage charm with modern amenities, the revamped property offers 185 rooms, one of the area's few luxury spas, a new rooftop bar (Halo), a Jazz bar (Alter Ego) and two signature restaurants — coastal Italian concept Nettuno, and the return of the iconic Sky Room, established in 1938. The Downtown Long Beach staple pays homage to its past with vintage photos, curated art walls and 1920s details, and joins L.A. Fairmont locations in Santa Monica and Century City. 210 E.
