Elm Grove couple's Wine Down brings wine flights and a gathering space to the village

It was boredom in his retirement after a decades-long career in manufacturing and construction that led Al Cervero not to pick up a hobby, but to open up a wine bar in the heart of Elm Grove with his wife. "There's more to life than pickleball and tennis," Cervero told the Milwaukee Journal Sentinel. Al and his wife Robin Cervero co-own Wine Down, 13390 Watertown Plank Road, a wine bar that opened in December 2024 and specializes in wine flights. The couple aims to make Wine Down a "community thing," Al Cervero said. The space has already filled with book clubs and women's guilds. On Sundays, Mondays and mornings when the bar isn't open to the public, the couple rents out the space for private parties like bridal and baby showers. They also want to give their customers a comfortable, quality experience, namely through their selection of over 40 bottles of wine that come from their eight distributors. The Wine Down menu offers flights of four 2-ounce pours of wine, each named after Elm Grove streets like the chardonnay Juneau flight or the cabernet sauvignon Highland flight. Most customers buy a flight and then figure out which bottle or glass they want, Cervero said. Cervero is working on bringing outdoor seating to the wine bar. Pending village approval, he plans to decorate the space in front of the bar's Watertown Plank Road entrance with tables, chairs and string lights. He hopes to add a gas fire pit to keep patrons warm on colder nights, according to plans submitted to the city. Next on the business's schedule is an immersive wine tasting experience May 31 at 2 p.m., which Cervero first experienced himself in 2020 over Zoom. Attendees will sample four wines, including two whites and two reds, each in different glasses to understand how the shape of the glass enhances the flavors of each wine. The event costs $99 plus gratuity, according to Cervero, and each guest will receive a set of Riedel tasting glasses to take home. The wine bar also sells beer, malted seltzers and non-alcoholic beverages. Wine Down is currently open from 4 to 10 p.m. Tuesday through Thursday, and from 3 to 10 p.m. Friday and Saturday.
