Grezzina and friarielli… our local pub's baffling new menu

A favourite local pub has changed hands and friends went along to check out the new menu. What did they think? 'It's so up itself now — we just had a drink and left.' My friends are not unadventurous eaters, so I looked up the food online to see what they meant and discovered every single dish contains at least one mystifying ingredient, some words seemingly chosen to make diners feel like culinary rubes. In its last incarnation the pub was neither cheap nor basic but served robust stuff like pork belly, or rabbit and bacon pie. But now you'd have to ask the waiter what 'bagna càuda' or 'friarielli' are; why the dish contains both grezzina and trombetta courgettes; whether 'cru virunga' chocolate is
