Brown sugar vanilla blackberry sheet cake
I love a brown sugar sponge, and this is my go-to recipe when I am making a vanilla-based cake; unlike the classic Victoria sponge, this has a deep caramel flavour and almost toffee-ish quality from the brown sugar.

Ingredients
For the cake
380g plain flour
2 tsp baking powder
1 tsp bicarbonate of soda
1⁄2 tsp sea salt
350ml oat milk
2 tsp apple cider vinegar
200g dark brown sugar
200g light brown sugar
250ml vegetable oil
2 tsp vanilla bean paste
For the frosting
250g unsalted butter, softened
500g icing sugar, sifted
2 tsp vanilla bean paste
a punnet of fresh blackberries, to serve
