Making Mardi Gras king cake on Teach Me Tuesday

JAMESTOWN, N.C. (WGHP) — It's Fat Tuesday and people in New Orleans are feasting for Mardi Gras.
Every big meal needs a big dessert, so we are stirring up a classic on this Teach Me Tuesday in King cake — a traditional cake this time of year.
Brad Jones went down to Guilford Technical Community College to meet Chef Mike Dowd and cook up something delicious.

Dough:
1 cup milk
1 ½ Tbsp active dry yeast
1 stick butter – softened to room temp
½ cup + 1 Tbsp sugar
1 ¼ tsp salt
1 egg
1 egg yolk
1 tsp vanilla
2 cups bread flour
2 – 2 ½ cups all-purpose flour
Cinnamon filling:
3/4 cup brown sugar
1/4 cup granulated sugar
1/2 cup all-purpose flour
2 tsp ground cinnamon
4 Tbsp butter – melted
Glaze
2 cups powdered sugar
3 Tbsp milk
1 Tbsp butter – melted
1 tsp lemon juice
1 tsp vanilla
Dough:
Place yeast in a small bowl. Warm the milk to around 90˚F. Pour into the yeast and stir until mixed.
In a mixer with a paddle attachment, combine the butter, sugar, salt together with a paddle until smooth and no lumps of butter.
Add the egg and mix thoroughly. Scrape the bowl. Add the yolk and vanilla and do the same.
Switch to the dough hook. Add the bread flour and only 2 cups of the all-purpose flour, and the milk/yeast mixture. Mix until a smooth dough, about 4 minutes at medium speed. The dough should be slightly tacky. If it is too soft, adjust with more AP flour as needed.
Lightly oil a mixing bowl, place the dough in the bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-2 hours until doubled in size.
While the dough is proofing, make the filling. Combine all the ingredients and mix to combine. Set aside.
Assembly:
Line a baking sheet with parchment paper and set aside.
Once the dough has doubled in size, punch it down. Roll out the dough into a large rectangle on a lightly floured surface, roughly 10 x 16'. Use a pizza cutter to divide the dough in half lengthwise to create two long rectangles. Sprinkle the cinnamon filling evenly over the two pieces of dough and roll up on the long side into two long dough logs. With the 2 pieces side by side, twist together into a braid. Transfer to the baking sheet and shape the braid into an oval, pinching the ends together. Cover lightly with plastic wrap and let rise in a warm area for 30-45 minutes or until about 1½ times its original size.
Preheat the oven to 350°F. Bake for 25-30 minutes until golden brown and baked through or until 190° – 195°F internal temperature. Remove from the oven and cool completely before applying the frosting.
For the frosting:
Beat the powdered sugar, milk, butter, lemon juice, and vanilla in a medium bowl until smooth. The frosting should be pourable but thick.
Stick a plastic baby figurine into the cake from the bottom side to hide it. Color the frosting as desired (purple, green, and yellow are traditional or use white icing sprinkled with purple, green, and yellow sprinkles before it sets) and drizzle the frosting over the cake. Spread it with a spatula if needed for good coverage.
Slice, serve, enjoy, and see who gets the baby.

On what would have been her 71st wedding anniversary with the love of her life, William 'Billy' Blake, Katherine Krause Blake, known affectionately as 'Kaki' or 'Kay' passed away peacefully on June 12, 2025, at the age of 91. She was born on March 22, 1934, in Lake Charles, La., where she would go on to live a full and deeply rooted life filled with devotion to family, service to her community, and a passion for lifelong learning and friendship. A graduate of Lake Charles High School, Kay stood out early as a leader and role model, graduating in the top ten of her class, receiving the American Legion Award and serving as the American Flag Bearer her freshman year, and the distinguished Kiltie Colonel during her senior year. Her academic journey took her to Louisiana State University and the University of Colorado before graduating from McNeese State University with a Bachelor of Science degree. Kay was a pillar of civic life in Lake Charles. She gave decades of service to the Junior League of Lake Charles, where she served in key leadership roles as Treasurer, Vice President, and President. She served as Chairman of the March of Dimes and Treasurer of the Lake Charles Ballet Society. She was honored to reign as Queen of the Krewe of Mystique in 2012, celebrating with her enthusiastic spirit, humor, and love for Lake Charles Mardi Gras tradition. Her commitment to education led her to serve on the Episcopal Day School Board, where she also volunteered one day each week for a full year. She was honored to serve on the McNeese Foundation, continuing her commitment to education and the future of her hometown. Her deep faith and compassion were evident in her long involvement at Good Shepherd Episcopal Church, where she served on the vestry and as Secretary. In 1992, Kay and her husband, Billy, with the support of fellow members of Good Shepherd, founded the Chapel of the Holy Spirit in Big Lake, a mission church that stood as a testament to their steadfast dedication to our Lord and Savior, Jesus Christ. She also volunteered at Abraham's Tent for three years, quietly serving meals and support to those in need. At home, Kay was 'Mom,' a role she cherished above all others. She nurtured and encouraged her children with strength, humor, and unwavering love. In their early years, she led a Blue Bird group, creating memories that would last a lifetime. A gifted writer and keen observer of the world around her, Kay found great joy in writing. She co-wrote the book 'Growing Up in Lake Charles,' written alongside Katherine Maloy Newell and Jeanette Plauché Parker, a heartfelt memoir that captured the spirit of her hometown and the joys and challenges of a bygone era. She also co-authored 'Record Run' in the year 2000 with her dear friend and bridge partner, Jim Barrow, chronicling their memorable adventures at the bridge table and beyond. Her writing reflected her wit, wisdom, and appreciation for the people and places that shaped her life. Kay loved to travel and explore the world, and over the years she visited countries near and far. Her travels broadened her perspective and deepened her appreciation for the beauty and diversity of the world, a passion she shared generously with family and friends. A brilliant and passionate bridge player, Kay achieved the esteemed titles of National Life Master and Ruby Life Master from the American Contract Bridge League (ACBL). She fostered a strong local bridge community as the longtime owner of the Bridge Club of Lake Charles on McNeese Street, a cherished gathering place for many. Katherine Blake is survived by her three daughters, Della Blake Rose (Billy), Susan Dows Blake, and Marie Blake Grace (Mark); seven grandchildren, Blake Rose, Annabel Rose Dinnerstein (Jed), Hardtner Klumpp (Julie), Rudy Klumpp (Emily), Walter Klumpp, Lindsay Grace, and Jaimie Grace (Amy), and six great-grandchildren who brought her endless joy, Henry Dinnerstein, Jack Dinnerstein, Rose Dinnerstein, Madeline Klumpp, James Klumpp, and Liam Klumpp. She is also survived by her beloved dog and faithful companion, Ernie. Katherine Blake was preceded in death by her parents, Della Goos Bel, and Rudolph Edward Krause; her beloved sister, Della Bel Krause 'Dudie,' and her cherished husband, William Dows Blake 'Billy.' The family extends heartfelt gratitude to Clifton Williams, her 'jack of all trades' whose generous help, steady presence, and unmatched fried chicken have been a family treasure for 46 years. They also honor Linda DeRuso for her 48 years of dedicated service with the Blakes before her retirement in 2021. Sincere thanks to Donna Celestine and Mary Guillory, her devoted full-time caregivers, who worked countless hours with love and compassion to ensure Kay had everything she could ever need. Throughout her life, Kay led with integrity, gave with joy, and cared with her whole heart. Her legacy is written in the lives she touched, through leadership, mentorship, friendship, creativity, and love. She is now reunited with her beloved Billy, her husband of seven decades, on the very day that once marked the beginning of their married life together. Visitation will begin on Thursday, July 10, 2025, from 4 p.m. until 6 p.m. in Hardtner Hall of Good Shepherd Episcopal Church. A second visitation will take place on Friday, July 11, 2025, from 10 a.m. until 11 a.m., immediately followed by the funeral service at 11 a.m. at Good Shepherd. In lieu of flowers, donations may be made in her memory to Good Shepherd Episcopal Church Foundation, or Episcopal Day School Foundation. Kay Blake's life was a testament to the power of purpose, service, curiosity, and unconditional love, and her memory will remain a light to all who knew her. SIOUX CITY, Iowa (KCAU) — Mardi Gras will be returning to downtown Sioux City for the 31st time later this summer. This year's Sioux City Mardi Gras Parade, presented by State Steel, will be taking place on July 3. The parade will start at the Wesley Parkway bridge and head east on Larson Park Road. It will also make its way along the Anderson Dance Pavilion and end at the Chris Larsen Yoga Lawn. The parade will kick off at 6 p.m., and many Mardi Gras bead necklaces will be thrown to crowds during the parade. If you're interested in participating in the parade, registration is still open. Crime Gun violenceFacebookTweetLink Follow When Derrick Groves, 27, was convicted in October of killing two people, his sentence was supposed to bring relief to New Orleans and renewed confidence in law enforcement. 'The days of Derrick Groves bullying and brutalizing this community are over,' FBI Special Agent in Charge Lyonel Myrthil said at the time. But less than a year later, Groves, who later pleaded guilty to battery of a correctional officer, broke out of jail with nine other men and escaped into the dark New Orleans night. Two weeks later, Groves and Antoine Massey, another inmate with a history of escaping custody, are still on the run. A video posted online appears to show Massey declaring his innocence. The US Marshals Service received the video Monday and is looking into it, Deputy US Marshal Brian Fair told CNN. In the video, Massey described himself as 'one of the ones that was let out' of the jail 'where they said I escaped.' 'As far as declaring his innocence, he's going to have to come in to take care of that,' Fair said. Here's what we know about Groves, a man with a violent past whose escape has drawn controversial support. Groves' criminal record dates back to 2014, when he was charged for attempted second-degree murder at age 17. He was eventually found not guilty, according to court records. Last October, Groves was convicted for the second time in the killing of two people on Mardi Gras Day in 2018. After his initial conviction in 2019, a new law calling for unanimous verdicts forced Groves into a second trial — which ended in a mistrial due to a juror reading media reports about the case. A third trial ended in a deadlock, and Groves was finally convicted again last year after a fourth trial, the Orleans Parish District Attorney's Office detailed in a news release about the conviction. Groves was determined to be one of two gunmen who opened fire with AK-47-style assault rifles 'on what should have been a joyous Mardi Gras family gathering,' according to the DA's office. Groves was found guilty of two counts of second-degree murder in the deaths of Jamar Robinson and Byron Jackson and two counts of attempted second-degree murder for the shooting of two other victims, charges that carry a life sentence, the district attorney said. Prosecutors used social media to help convict Groves, indicating that his online activity 'played a chilling role' in their case. Groves' posted on social media days after the killings showing his familiarity with the weapons used in the incident, according to the DA's office. He 'brazenly boasted about the violence' and even took credit for the killings, officials said. Three witnesses also 'courageously' testified, identifying Groves and his co-defendant as the gunmen, the DA's office said. 'Groves routinely used violence to lash out and silence witnesses or 'snitches,'' Myrthil said at the time. 'There was no doubt in the minds of anyone involved in this case that Groves would continue his bloody rampage on the streets of New Orleans if he weren't stopped. We hope this guilty verdict and the life sentence that accompanies it will give the community renewed confidence and hope in law enforcement.' Because of delays caused by Groves' attorney being suspended from practicing law and the judge in the case recusing herself, Groves was still awaiting sentencing for that conviction at the Orleans Justice Center when he escaped, Keith D. Lampkin, a spokesman for the DA's office, detailed. In April 2024, before his conviction in the double murder, Groves was charged with battery of a correctional facility employee. He pleaded guilty in that case, court records show. After Groves' escape, prosecutors and witnesses associated with the double murder left town 'out of an abundance of caution,' Lampkin told CNN. He did not elaborate. Groves' aunt, Jasmine Groves, told CNN affiliate WDSU that she wants her nephew to turn himself in and that she hopes deadly force will not be used to get him back into custody. She told the station that her family does not know where her nephew is and that the days since his escape have been a nightmare. Jasmine Groves added that Groves' mother was taken from her home against her will by law enforcement officials. US Marshals confirmed to WDSU that they went to Groves' mother's home to question her. 'For my family, it's been like reliving a constant nightmare that we relived throughout these whole 30 years,' she said. Groves is the grandson of Kim Groves, who was killed in a notorious murder-for-hire plot in the Ninth Ward in 1994, the DA's office said. She was a 32-year-old mother of three when the hit was ordered by New Orleans Police Department Officer Len Davis, WDSU reported. This time around, many of the social media posts about Groves have come from supporters, some of whom seem to reference his grandmother's death at the hands of a police officer as a reason to extend him sympathy. 'DERRICK GROVES is the only inmate i dont blame for what he did to qo to jail i hope he neva qet cauqht,' one X user wrote. 'I pray Derrick Groves is never found …safe travels!' another posted. Another X user shared the hashtags '#StayFreeWoo #Groves #JusticeForKimGroves.' The DA's office did not have any comment on the social media support for Groves. He indicated, however, that any suggestion that Groves' crimes were in response to or retaliation for his grandmother's death is 'newly generated urban myth.'
