
How the UK gave the world this quintessential chocolate wafer bar
Originally launched in 1935 as Rowntree's Chocolate Crisp, the much-loved treat has been made in the historic city ever since.
Today, under the ownership of Nestlé, the York factory continues to be the beating heart of KitKat production - not just for the UK, but for markets around the world.
Behind the scenes, a team of dedicated experts is constantly innovating and refining the product to meet modern demands while preserving the classic taste generations have grown up with.
Helping to produce one of the UK's favourite chocolate bars as an actual job is something most of us can only dream of doing. But for Rob Jackson, a product and process specialist at Nestlé working on KitKat, it's a reality.
Rob entered the world of confectionery eight years ago. He doesn't have a foodie background, but instead came with a master's degree in forensic anthropology and experience in teaching.
'I wanted the opportunity to work in a real-world science lab that had a practical industrial application,' he explains.
'Nestlé was looking for a lab technician at its global confectionery R&D (Research and Development) centre here in York, and I thought: 'what a great role'.'
Since joining Nestlé, Rob has worked in different departments – from the lab, to the healthy snacking and KitKat team in the Product Technology Centre, to his current role in the factory itself, which he describes as 'really varied'.
Rob and his team are continuously working on tweaks and improvements. 'There are always new things happening, even to our core products,' he explains.
'It could be testing a new ingredient or making slight tweaks to a recipe. Or it could be a case of changing our manufacturing process or working with new equipment – such as modern technology to reduce carbon emissions from our wafer baking, or improving efficiencies in the moulding process.'
Rob also reveals: 'A big focus of mine at the moment is sustainability – trying to reduce carbon emissions from our processes, and from our supply chain.'
And, he adds: 'There are exciting new chocolate bars coming, but I just can't tell you what!'
When working on such a recognisable and well-loved product, the stakes are high, and one of the ways standards are maintained is with an in-house team of expert tasters.
'They're trained on how to pick out subtle differences and describe them in a way that is more objective and scientific,' Rob explains.
'So people won't say, 'oh, I like this,' they'll say, 'this one has a more intense cocoa flavour, or a more intense biscuit flavour, or more intense milk flavour…'
'Then we analyse that information to understand, 'is this something our consumers want?' And we make decisions based on that.'
Unsurprisingly, Rob has no regrets about the path his career has taken.
'Even if you're having a really stressful day – things aren't working properly, or you've spilled half a tank of chocolate on the floor – you can always stop and look around you and think: 'actually, what I do is really cool! You know, this is so much fun'.'
After 90 years, KitKat remains a symbol of York's proud confectionery heritage - and thanks to people like Rob, its future looks just as sweet.

'We're thinking about big ideas'
"People don't always think engineering is creative, but it really is," says Emma Robinson, who joined Nestlé's graduate scheme last September. "We're drawing things, we're thinking about big ideas – it's really exciting. We're the people who figure out how to make 'that thing' a reality." Emma is currently based at the Nestlé Product Technology Centre in York – the company's global research and development centre for confectionery, where the team come up with new product and process innovations working on brands such as KitKat. "I design and create bespoke equipment for our factories," the 24-year-old explains. "My work is mainly in chocolate. And yes, there are lots of opportunities to eat chocolate!" Offered in a range of sectors, from engineering and technical leadership, to sales and HR, Nestlé's graduate schemes last two years and give candidates the chance to experience different roles across the business. "I'm moving to Nestlé's centre in Buxton after this to work on water," says Emma. "I'm really excited as experience in different products will help make me a better engineer." Inspired by her love of chemistry in school, Emma completed a master's degree in chemical engineering. She was then drawn to Nestlé's graduate scheme as it would, she says, 'develop me and not leave me in the corner'. The global company offers opportunities in different categories and even the chance to work abroad. "My days are really varied," Emma says. "Some days I might be working in the pilot plant, helping the other engineers in my team with a trial. Other times, I might be designing something on our in-house 3D modelling software, or even making a new process and instrumentation diagram. It's really motivating to see how far I've come in just the past 10 months." While the scope of the work has helped Emma to develop new skills fast, she's adamant that her progress is ultimately down to the people she's working with. "I don't think I'd know a fraction of what I've learnt without having a manager who really cares about developing me," she says. "It's a really supportive environment. A lot of the people in my team have helped me and coached me. I'm always encouraged to ask questions – there's no shame in not knowing." While Emma's focus is gaining knowledge, successfully completing the scheme and landing a permanent job at Nestlé, she's also got an eye on the future of her sector. "I do a lot of outreach in schools encouraging young girls to be inspired by what we're doing here with chocolate – it's really interesting." As for what she likes best about being part of the Nestlé team – in what is surely a testament to the company's work culture, it's not the endless supply of chocolate. It is, she says, "Having that collaboration between different people in the building. "Being able to work on lots of different products and then seeing them on the shelves is really, really exciting."

Rhug Estate Shepherds Honoured for Decades of Service to Welsh Agriculture

Between them, Rob William Hughes and John Dyke have contributed more than 90 years of service to the industry. That incredible commitment to the sector saw the duo receive prestigious long-service awards at the Royal Welsh Show, held in Llanelwedd. Visitors flocked to see the shepherds – highly respected members of the team at Rhug Estate, based near Corwen – receive the accolades and celebrate a lifetime of devotion to farming. 'Rob has worked in agriculture for an incredible 48 years, with the majority spent right here at Rhug,' said Estate owner, Lord Newborough. 'John has been with us for over 40 years. Together they bring not only experience and skill but also a great sense of humour and a deep connection to the land. 'They've supported us through major changes, especially our move to organic farming more than 20 years ago. Their dedication, adaptability and loyalty are remarkable, and we're incredibly fortunate to have them as part of the team.' John was born and raised on the family farm near Builth Wells and was out working in the fields from 11 years old. He joined Rhug Estate in his twenties when about to start a family, after seeing a job advert in Farmers Weekly for a shepherd's role that came with a house – the ideal opportunity for a young couple starting out. 'When I started at Rhug, I was given my own flock and a section of land and just got on with it,' said John. 'So much has changed – especially the move to organic farming – but we all got behind it. 'Rhug has always felt like a family. My wife and I raised five children here, and they had the most wonderful childhood running around the farm. I'm retiring soon, but I'll still be around. I'll miss it, but farming never really leaves you.' Rob, from Cynwyd near Corwen, began his farming career at 16 and has been with Rhug for nearly five decades. 'People think staying in one place for so long might get quite boring or show a lack of ambition – but every day has been different,' he said. 'We've gone from bouncing around in a tractor with a link box to using quad bikes and apps on our phones to monitor animals and medicines. The technology has changed, but the heart of farming stays the same.' Both men – who manage up to 3,500 ewes a year between them – say they were shocked and delighted to receive their awards, and thanked Lord Newborough, their families, and colleagues past and present. Their stories are a testament to the enduring values of hard work, resilience, and a deep love for the land – qualities that continue to shape Rhug Estate and the wider farming community in Wales. Ryan Reynolds and Rob McElhenney can leave ‘legacy' in Wales' World Cup plan
The UK is the sole bidder to host an expanded 48-team tournament in 2035 – and the Football Association of Wales has targeted two venues among the 16 stadiums planned. The FAW wants one in the south of the country – probably Cardiff City Stadium rather than Welsh rugby's Principality Stadium home – and one in the north, Wrexham's redeveloped SToK Cae Ras home. Wrexham's Hollywood owners Reynolds and McElhenney are seeking to expand the Red Dragons' stadium, with a proposed 7,750-seater Kop stand taking capacity to around 18,000. The pair – who were at the Cae Ras on Saturday to watch newly-promoted Wrexham play their first home game in the Championship – said in May 2024 that development on all four sides of the ground could lead to 'between 45,000 and 55,000 people in there'. 'The Kop development is a significant first step and the vision for the stadium is incredible,' FAW chief executive Mooney told the PA news agency. 'What Ryan and Rob are doing is amazing. They are looking to look to invest in the stadium and build up the Cae Ras, which is the oldest international ground in the world, and there is a potential North Star for them. 'The city and the club have a chance to bring a World Cup to North Wales. What a story that would be. What a legacy for Ryan and Rob to leave Wrexham.' The FAW and Wrexham held talks over the Women's World Cup last week and Wales will host the 2026 European Under-19 Championship next summer. All games will be played in the north at Bangor, Colwyn Bay, Deeside, Denbigh, Deeside and Wrexham, with the Cae Ras hosting the final. 'It's our 150th anniversary next year, we were founded in Wrexham, and the story is very powerful for us,' added Mooney, who said the FAW will launch a 10-year strategy for Welsh football in 2026. 'The impact of Ryan and Rob has been manna from heaven for us, the timing of it. 'We've been very fortunate over the last few years to get to a men's World Cup, first women's Euro, and have our young teams starting to qualify for major championships. 'That has coincided with Ryan and Rob coming in. Wrexham has already started collecting a lot of our national team players, and will produce lots of players for us in the future with their investment in youth development and Academy. 'There is a symbiotic relationship there where we can create a lot of value for each other. 'People all over the world are talking about Wrexham and that inspires partners like FIFA, commercial bodies and Governments to get involved.' The UK's formal bid for the 2035 Women's World Cup will be submitted in November and likely to be approved by FIFA next year, with all four home nations automatically qualifying for the tournament.
