Dry-rub buffalo chicken wings
Ingredients:
(Serves 6)
16 large chicken wings (1.5kg in total), tips removed and jointed
200g table salt
10 black peppercorns
4 bay leaves
2tbsp light olive oil
For the dry rub:
1tsp chilli powder
½tsp cayenne powder
1tsp sweet smoked paprika
2tsp garlic powder
1tsp onion powder
1tsp ground cumin
1tsp dried thyme leaves
For the ranch dressing:
3 heaped tbsp soured cream
3 heaped tbsp mayonnaise
½ garlic clove, finely grated
3 dashes of Worcestershire sauce
1tsp white wine vinegar
1tsp mild American mustard
1tbsp finely chopped dill
1tbsp finely chopped chives
Salt and freshly ground pepper
To serve:
Hot sauce
Celery sticks

Method:
1. First brine the chicken. Pour two litres water into a large bowl, add the table salt and whisk to dissolve, then add the black peppercorns and bay leaves. Immerse the chicken wings in the brine and place in the fridge for two hours.
2. Remove the chicken wings from the brine and pat them dry with kitchen paper.
3. For the dry rub, mix all the ingredients together in a bowl. Drizzle both sides of the chicken wings with the olive oil and sprinkle with the dry rub to coat the wings evenly all over.

4. Cover and leave to marinate in the fridge for at least 30 minutes, ideally two to three hours.
5. For the ranch dressing, mix all the ingredients together in a bowl, seasoning with salt and pepper to taste.
6. When you're ready to cook, place the chicken wings on a hot barbecue in a single layer, making sure you have an area with some indirect heat to move them to, as and when you need a lower heat. Cook for 10 to twelve minutes until the wings are nicely browned on each side, turning regularly.
7. Serve up the chicken wings with the ranch dressing on the side for dipping. Accompany with your favourite hot sauce and some crunchy celery sticks.

The Lockheed U-2S 'Dragon Lady', utilised for intelligence gathering, surveillance and reconnaissance, was tracked flying about twice as high as commercial airliners. The aircraft operates round the clock to ensure global security, delivering high-level intelligence data for the US Air Force, CIA and NASA. Its Dragon Lady nickname originates from a 1930s' comic strip character from Terry and the Pirates. Plane enthusiasts across the UK identified the spy plane on global flight tracking service Flightradar24 as it flew over the Rosneath Peninsula in Argyll and Bute. The aircraft is typically stationed at the 9th Reconnaissance Wing, Beale Air Force Base in California, but is deployed on worldwide operations. The fleet regularly operates from RAF airbases, RAF Fairford in the UK and further afield from RAF Akrotiri in Cyprus. It was built during the Cold War to gather reconnaissance info on Soviet military operations through imagery, taking its maiden flight in July 1956, reports the Express. Chilling mayday call from pilot of doomed plane before it plunges into ocean
The Coast Guard confirmed on Sunday that all six people on board the doomed aircraft that crashed into the ocean near San Diego after taking off from San Diego International Airport have died In yet another American aviation tragedy, a small plane carrying six people nosedived into the ocean shortly after takeoff on Sunday with authorities confirming that the crash claimed the lives of everyone on board. The doomed twin-engine Cessna 414 crashed at around 12.30pm on Sunday in San Diego, just three miles west of Point Loma. The Federal Aviation Authority (FAA) has confirmed the deaths of all six passengers, but their identities are pending official release. Harrowing audio from air traffic control, shared by CBS 8, captured the pilot's desperate plea for higher altitude immediately after leaving San Diego International Airport. The aircraft barely managed to reach 1000ft during its doomed ascent, with the pilot uttering "mayday" over the radio before falling silent. Coast Guard crews swiftly located a debris field off the coast near San Diego's Point Loma area on Sunday. According to The Associated Press reports, the ocean at the crash site has a depth of around 200ft. Following the devastating incident, the Coast Guard launched a major search operation, involving a Jayhawk helicopter, a fixed-wing aircraft, a cutter, and two smaller boats, continuing their search until dusk. "We've located a debris field, but I don't have details on its size yet," Coast Guard Petty Officer Ryan Graves told NBC 7 shortly before 3.30pm on Sunday. A surfer told NBC 7 about the chilling moment he saw the aircraft plummet: "The next time he came out of the clouds, he went straight into the water. But after I saw this splash, about six seconds later, it was dead silent. I knew that they went in the water, nose first, at a high speed," Tyson Wislofsky revealed. After confirming that the doomed plane belongs to vitamin producers Optimal Health Systems, there's been an update from the company that the FAA records might be behind the times. The Arizona-based firm, which sold the plane just this year, said it passed to private hands. Founder Doug Grant joined in mourning, stating: "We personally know several of the passengers onboard, and our sincerest condolences are offered to those affected by the tragedy, all of whom are incredible members of our small community."
